Jamaican Fried Dumplings image

Flat fried buttery dough usually served with cod fish in Jamaica, as a big weekend breakfast, slightly different from the American dumplings.

4 cups all-purpose flour
2 teaspoons baking powder
1 ½ teaspoons salt
½ cup butter
½ cup cold water
1 cup vegetable oil for frying

Steps:

  • In a large bowl, stir together the flour, baking powder and salt. Rub in the butter until it is in pieces no larger than peas. Mix in water 1 tablespoon at a time just until the mixture is wet enough to form into a ball. The dough should be a firm consistency. Knead briefly.
  • Heat the oil in a large heavy skillet over medium heat until hot. Break off pieces of the dough and shape into a patty - kind of like a flat biscuit. Place just enough of the dumplings in the pan so they are not crowded. Fry on each side until golden brown, about 3 minutes per side. Remove from the pan and drain on paper towels before serving.

Chef Stephen Kalt, owner of New York City's Spartina restaurant, warns to take special care when preparing the sauce: Stir it constantly to assure that the eggs cook evenly; if chunks form, strain before serving.

8 ounces red snapper, striped bass, or any other firm white fish, cut into 1-inch pieces
2 teaspoons finely minced garlic
2 teaspoons finely minced shallots, plus 1 shallot thinly sliced lengthwise
1 tablespoon chopped fresh marjoram, plus sprigs for garnish
4 teaspoons coarse salt, plus more to taste
1/4 teaspoon freshly ground pepper
5 large eggs
1 cup matzo meal
6 1/4 cups water
1/4 cup white wine
1 teaspoon crumbled saffron threads
1 fresh bay leaf
1/4 cup plus 2 tablespoons freshly squeezed lemon juice
1/4 cup extra-virgin olive oil

Steps:

  • Line a baking sheet with parchment paper; set aside. Using a meat grinder fitted with a fine blade, grind fish into a medium bowl. Add garlic, 2 teaspoons minced shallot, chopped marjoram, 1 teaspoon salt, pepper, and 2 eggs. Mix well to combine. Add matzo and about 1/4 cup water alternately, a little at a time, until the mixture is soft, but not sticky.
  • Dip your hands into cold water, and form the mixture into about twenty-four 1-inch balls; place on prepared baking sheet.
  • In a medium saucepan, combine 6 cups water, the wine, saffron, sliced shallot, remaining 3 teaspoons salt, and bay leaf over high heat. Bring to a boil, and reduce to a simmer. Quickly add dumplings, one at a time, to the cooking liquid. Cook until dumplings rise to the surface, about 6 to 7 minutes. Remove dumplings from cooking liquid, and set aside. Strain cooking liquid, and reserve.
  • Strain remaining 3 eggs through a fine sieve into a small bowl. Whisk in lemon juice, and season with salt. Transfer to a medium saucepan and place over medium-low heat, stirring constantly with a rubber spatula, being careful not to let the egg mixture curdle. Slowly drizzle in 1/2 cup cooking liquid from the dumplings. Cook until thick, continuing to stir, 7 to 8 minutes. Add remaining 1/4 cup cooking liquid and olive oil, stirring to combine. Add dumplings to sauce to coat. Serve fish dumplings with sauce and a sprig of marjoram.

Homemade fish dumplings are an important part of Bergen Fish Soup. The goal is to make them as light as possible. The dumplings can also be served on their own, or with a dill-flavored béchamel sauce.

Yield Makes 10 to 12 dumplings

Number Of Ingredients 6

1 pound cod fillet, skin and bones removed
2 large eggs
2 to 3 tablespoons cornstarch
1 teaspoon fine sea salt
1 1/2 teaspoons freshly ground white pepper
2 cups whipped cream

Steps:

  • Run the fish through a meat grinder twice; it should be very fine and smooth. (You can use a food processor, although it can be more difficult to get a smooth consistency that way.)
  • In a large bowl, lightly beat the eggs. Add the cornstarch, salt, pepper, and fish and mix well. Gently fold the cream into the fish mixture, trying not to deflate cream.
  • With a spoon, form the dumpling mixture into small balls.

2 pounds cod or tilefish fillets (see note)
1 small onion, quartered
3 cloves garlic, sliced
2 teaspoons ground cumin
1/8 teaspoon cayenne pepper
1 egg
Salt and freshly ground black pepper to taste
1 cup matzoh meal
Oil for deep frying
4 cups fish stock or water
2 tablespoons lemon juice
1/2 teaspoon turmeric
3 tablespoons tomato paste
Sprigs of flat-leaf parsley

Steps:

  • Cut fish into 1-inch pieces. Place in food processor and add onion, garlic, cumin, cayenne pepper, egg, salt and pepper. Process until smooth. Add matzoh meal and process until incorporated.
  • Shape fish mixture into plump ovals about 3 inches long.
  • Heat oil for deep frying to 375 degrees in deep fryer, saucepan or wok. Fry until golden brown. Drain on absorbent paper.
  • Bring stock or water to boil in 1 or 2 large saucepans, add lemon juice, turmeric and tomato paste. Bring to slow simmer. Drop drained fish rolls into simmering broth and cook slowly, uncovered. Rolls should be single layer. Simmer until broth has reduced and thickened, about 40 minutes.
  • Serve warm garnished with parsley.

1 cup unbleached all-purpose flour
1 1/2 teaspoons baking powder
Kosher salt and freshly ground pepper
1/2 cup plus 2 tablespoons heavy cream
3 tablespoons unsalted butter
1 medium onion, finely chopped
2 celery stalks, finely chopped
2 carrots, peeled and finely chopped
2 bottles (each 8 ounces) clam juice
1 teaspoon fresh thyme leaves
1 pound skinless cod or halibut fillets (3 to 4)
2 tablespoons chopped fresh parsley leaves

Steps:

  • Whisk together 3/4 cup flour, baking powder, and 1/2 teaspoon salt. Stir in cream until dough is shaggy. In a medium pot, melt butter over medium heat. Add onion, celery, and carrots; season with salt and cook, stirring, until softened, 6 to 8 minutes.
  • Add remaining 1/4 cup flour and cook, stirring, 1 minute. Stir in clam juice, 1 cup water, and thyme. Bring to a boil, then reduce heat and simmer until thickened slightly, about 5 minutes.
  • Season fish with salt and pepper and add to broth. Drop heaping spoonfuls of dough into fish mixture. Cover and simmer until dumplings are cooked through, 15 to 18 minutes. Season to taste. Sprinkle with parsley; serve.
