Fish finger sandwiches, but not as you know them! These spicy fajita-seasoned homemade cod fish fingers with mayonnaise in a crusty bun are moreishly good

Steps:
- Mix the fajita seasoning with the flour and some salt and pepper in a bowl. Put the beaten eggs and the breadcrumbs in two separate bowls, then line all three bowls up.
- Working in batches, coat the fish in the seasoned flour, then shake off any excess and dip in the egg, followed by the breadcrumbs. Place the coated fish fingers on a plate.
- Pour enough oil into a large frying pan so that it covers the base. Heat the oil over a medium-high heat, then fry the fish fingers in batches until golden and cooked through (approx 3 mins). Drain on kitchen paper and season with sea salt. Transfer them to a low oven to keep warm.
- Spread each roll with 1 tbsp of mayonnaise and a handful of lettuce, then build up your sarnies with the hot fish fingers, tomatoes and gherkins. Serve with lemon wedges for squeezing over and kitchen paper.

Steps:
- Cut the cod fillet into 6-7 big finger shapes.
- Mix the Parmesan with the panko breadcrumbs.
- Coat the fish fingers with flour, then egg, then breadcrumbs.
- Deep fry the fish fingers in 170˚C (325˚F) hot oil for about 2-3 minutes or until they turn golden brown and are cooked through. Set aside.
- Mix all the sauce ingredients well, set aside.
- Spread a thick layer of the tartar sauce onto a soft and fluffy slice of bread.
- Place some rocket leaves, romaine lettuce, and three chunky fish fingers, then flavour with a squeeze of lemon, salt, and pepper. Finish with a drizzle of ketchup and more Tartar.
- Top with another slice of bread and serve.

- Toast Breadcrumbs: Melt 1 heaped tbsp butter in a pan over medium heat and pour in your Panko. Fry for 5mins, or until the breadcrumbs turn golden, stirring & shaking the pan frequently. Place in a dish to cool.

One by one dip the fish into the flour, then into the egg and finally into the breadcrumbs, ensuring you fully coat at each stage (especially the last).
