2 celery ribs, washed and trimmed
1/4 cup cream cheese or 1/4 cup cheese spread, softened
12 goldfish crackers

Steps:

  • Fill prepared celery stalks with your choice of cream cheese or cheese spread.
  • Add the goldfish crackers on top of cream cheese or cheese spread to look like fish swimming.
  • For fun, you could always use a flavored cream cheese or add something to it for your choice of flavors. To make it even more fun, try tinting the cream cheese with a little blue food coloring to make it look like water.
  • Enjoy!

Fish in a River is a fun finger food that is quick for you and your kids to make! Make them with our delicious and simple yogurt cheese recipe.

4 oz Yogurt Cheese
1/8 tsp oregano
1/8 tsp dill
1/8 tsp garlic powder
dash of blue natural food coloring, if desired
4 celery sticks, washed, dried, trimmed
12-24 goldfish baked snack crackers, any flavor

Steps:

  • directionsStep 1In a small bowl, mix yogurt cheese with oregano, dill, thyme, and garlic powder. Stir in food coloring, if using.Step 1Let rest in refrigerator, if you have the time, to meld the flavors.Step 2 Fill celery trenches with yogurt cheese mixture. Garnish with Goldfish crackers.

4 large swai fillets
1 cup yellow mustard
1 egg
1 tablespoon hot sauce
1 cup Italian seasoned breadcrumbs
1 cup parmesan cheese
1 teaspoon oregano
1 tablespoon Old Bay Seasoning

Steps:

  • Rinse fish and pat dry.
  • Mix mustard, egg and hot sauce.
  • Coat swai fillets in mustard sauce and marinate in the refrigerator for 1 hour.
  • Spray a baking sheet with non-stick cooking spray.
  • In a separate container, mix breadcrumbs, parmesan cheese, oregano and Old Bay seasoning.
  • Remove the fillets from the mustard sauce and dredge both sides of each fillet in the breadcrumb mixture.
  • Place the breaded fillets on the baking sheet.
  • Bake at 375 degrees for 20-30 minutes or until fish is golden brown and flakes easily.
