Many home cooks are comfortable with spinach but are intimidated by the unfamiliar variety of other cooking greens: chard, mustard, turnips, collards, kale and more. But it doesn't matter much which you include in a given dish: they're all good, and they all cook quickly. This preparation is dead easy. You first steam the kale with butter (you could use olive oil, but here it just isn't the same), white wine (water is almost as good) and garlic, until it's just about done. At that point you top the greens with a fillet or two of white fish and continue to steam until the fish is cooked through. Timed correctly, the greens will be tender and bright green and the fish moist. The juices from both will have combined with the butter, wine and garlic to produce a sauce that is great with rice or bread.

1 medium bunch kale, collards or other greens, about a pound
1/2 cup dry white wine (or water)
1 or 2 cloves garlic, peeled and lightly smashed
3 tablespoons butter or extra virgin olive oil
Salt and pepper
1 1/2 pounds skinless white fillet, like cod, halibut, hake, whiting, red snapper or sea bass

Steps:

  • Wash greens and shake dry, allowing some water to cling to leaves. Cut into rough sections, 3 or 4 inches long; cut off and discard any stems thicker than 1/4-inch.
  • Put greens in a deep skillet that can be covered, along with wine, garlic, half the butter, and some salt and pepper. Turn heat to medium-high, cover and cook, checking occasionally to make sure mixture does not dry out, until greens are just about tender, 10 minutes or so.
  • Put fish on top of greens, season with salt and pepper, and dot with remaining butter. Re-cover, and cook until fish is done and greens fully tender, 5 to 10 minutes more.

1 bunch (about 1 pound kale, collards, or other cooking greens)
2 cloves garlic
1/4 teaspoon red pepper flakes (optional)
1/2 teaspoon fine sea salt (divided)
1/2 cup vegetable broth (dry white wine, or water)
2 pounds skinless white fish fillet (see headnote)
Freshly ground black pepper to taste
Lemon wedges
Peel and thinly slice the garlic.

Steps:

  • In a deep frying pan, sauté pan, or wide pot over medium-high heat, melt 2 tablespoons of the butter or heat the oil. Add the garlic and red pepper flakes, if using. Cook, stirring, until just barely turning golden, about 2 minutes. Add the greens, with whatever water is still clinging to their leaves, and sprinkle them with half of the salt. Stir or toss the greens until they start to wilt, about 1 minute.
  • Add the broth, wine, or water, cover, and cook until the greens are tender, about 10 minutes.
  • Remove the lid and stir the greens. There should be just a bit of liquid in the bottom of the pan; if not, add 2 tablespoons of water.
  • Set the fish on the greens. Sprinkle the fish with the remaining salt, as well as black pepper to taste. Dot the tops of the fillets with the remaining butter or drizzle with the remaining oil. Cover and cook until the fish is cooked through; 10 minutes per inch of thickness should do it.
  • Transfer to plates or shallow bowls and serve with wedges of lemon for spritzing.

Quick Steamed Flounder With Ginger-Garlic Mustard Greens image

This recipe, inspired by a Chinatown dinner, puts the bold tastes of sesame oil, ginger and soy sauce front and center. Here, a steamed piece of flounder sits on a bed of mustard greens, limp, tender and infused with garlic. The greens take the place of choy sum, a relative of bok cho, and give the dish a slightly mustardy flavor. It's a quick, healthy weeknight dinner packed with flavor. Try it tonight.

1 tablespoon vegetable or peanut oil
1 teaspoon toasted sesame oil, more for drizzling
3 garlic cloves, minced
1 1-inch-thick slice peeled fresh ginger root, minced
2 small bunches mustard greens, cleaned, stemmed and torn into pieces
1 tablespoon soy sauce, more for drizzling
2 flounder fillets, 12 ounces each
Kosher salt and freshly ground black pepper

Steps:

  • Heat oils in a very large skillet. Add garlic and ginger and sauté until fragrant and translucent, about 2 minutes. Add mustard greens, soy sauce and 3 tablespoons water, and sauté until greens start to wilt, 2 minutes longer.
  • Spread greens out in pan. Season flounder with salt and pepper, and place on top of greens. Cover pan, reduce heat to medium, and let fish steam until just cooked through, about 6 minutes. If pan dries out before fish is cooked through, add a little more water, a teaspoon at a time.
  • Uncover pan and transfer fish to serving plates. If greens seem wet, turn heat to high to cook off excess moisture. Serve greens on top of fish, drizzled with a little more sesame oil and soy sauce, if desired.

This is a basic and common Chinese recipe for steamed fish. My father taught me how to make this; it is easy to prepare, hard to mess up, and very versatile. Serve over white rice, using some of the sauce mixture from the steaming bowl.

1 ½ pounds halibut, cut into 4 pieces
3 green onions, cut into 3 inch lengths
2 fresh mushrooms, sliced
6 leaves napa cabbage, sliced into 4 inch pieces
2 slices fresh ginger root, finely chopped
2 cloves garlic, chopped
¼ cup low-sodium soy sauce
⅛ cup water
crushed red pepper flakes to taste
fresh cilantro sprigs, for garnish

Steps:

  • Arrange 1/2 of the green onions on the bottom of the steaming bowl (it is important to steam in a container in order to retain the steam and juices around the fish). Place 1/2 of the mushrooms and Napa cabbage sections on top of the onions. Place fish on top of the vegetables. Sprinkle ginger, garlic, and red pepper flakes over fish. Top with the remaining green onions, mushrooms, and napa cabbage. Drizzle soy sauce and water over everything.
  • Place steam bowl in a steamer over 1 inch of boiling water, and cover. Steam for 15 to 20 minutes, or until fish flakes easily. Garnish with cilantro, if desired.
