Make a batch of Alton Brown's homemade Breakfast Sausage for Food Network.

Number Of Ingredients 11

2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces
1/2 pound fat back, diced into 1/4-inch pieces
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
2 teaspoons finely chopped fresh sage leaves
2 teaspoons finely chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1 tablespoon light brown sugar
1/2 teaspoon fresh grated nutmeg
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes

Steps:

  • Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

2 teaspoons dried sage
2 teaspoons salt
1 teaspoon ground black pepper
¼ teaspoon dried marjoram
1 tablespoon brown sugar
⅛ teaspoon crushed red pepper flakes
1 pinch ground cloves
2 pounds ground pork

Steps:

  • In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
  • Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
  • Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).

This recipe is from Mr. Food. This turned out grandkids- approved. It was quick and cheap to make. I used ground turkey in place of the pork. It is very mildly seasoned. I think that is why the kids liked it, the seasonings can be tweaked to your preference. Just be careful not to over-cook the patties or they will be dry. I also microwaved them on a microwave bacon platter that has ridges.

2 teaspoons ground sage
1/8 teaspoon ground nutmeg
3/4 teaspoon salt

Steps:

  • Coat a microwave-safe 9" x 13" baking dish with nonstick cooking spray. In a medium bowl, combine all the ingredients; mix well. Form into 16 patties and place in the dish.
  • Microwave at 80% power for 3 to 4 minutes, or until no pink remains in the pork. Serve immediately.
