3/4 pound bulk Italian sausage
1 cup sliced fresh mushrooms
1 medium onion, finely chopped
1 medium sweet red pepper, chopped
1 medium green pepper, chopped
6 large eggs, divided use
1-1/2 cups shredded Havarti cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup ricotta cheese
1/3 cup grated Parmesan cheese
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1 cup butter, melted
30 sheets phyllo dough (14x9 inches)

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage, mushrooms, onion and peppers over medium heat until meat is no longer pink and vegetables are tender; drain. Return sausage mixture to skillet. Whisk five eggs; add to skillet. Cook and stir over medium-high heat until set; stir in Havarti cheese. Set aside., In a small bowl, combine the spinach, ricotta cheese, Parmesan cheese, basil and remaining egg. Brush a 13x9-in. baking pan with butter. Unroll phyllo dough; trim to fit into pan., Layer 10 sheets in prepared pan, brushing each sheet with butter. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) Top with half of the sausage mixture., Layer with 10 additional phyllo sheets, brushing each with butter; spread with ricotta mixture. Layer with five phyllo sheets, brushing again with butter; top with remaining sausage mixture. Layer with remaining phyllo and butter. Using a sharp knife, cut into 12 rectangles. Bake, uncovered, 30-40 minutes or until golden brown., Freeze option: Cover and freeze unbaked casserole for up to 3 months. To use, thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 40-50 minutes or until golden brown and heated through.

1 cup shredded sharp cheddar cheese (i love Cracker Barrel extra sharp cheddar)
1 cup shredded monterey jack cheese
10 eggs
2 cups milk
2 teaspoons dry mustard
2 teaspoons dill
1 teaspoon sugar
1 teaspoon baking powder
1/2 teaspoon white pepper
salt
1/2 small yellow onion, chopped
chives (optional)
green pepper (optional)
red pepper (optional)
orange bell pepper (optional)
yellow bell pepper (optional)
mushroom (optional)
broccoli (optional)

Steps:

  • Prepare a 9 X 13 pan (greased).
  • Spread cubed bread evenly; cover with cheese.
  • Beat eggs until light and fluffy.
  • Add remaining ingredients.
  • pour over bread and refrigerate overnight.
  • Bake for 50 minutes at 350 degrees or until set.

Steps:

  • Preheat the oven to 325 degrees F. Spray a 9-by-13-inch baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it up and stirring with a wooden spoon, until the sausage is no longer pink and is crispy and brown in spots, about 5 minutes. Remove from the heat.
  • Whisk the sour cream, heavy cream, ground mustard, garlic salt, kosher salt, black pepper and eggs together in a large bowl. Add the sausage, hash browns, both cheeses, bell pepper and scallions (reserving 2 tablespoons of scallions for serving) to the egg mixture. Fold to combine.

Pour the egg mixture over the dough and spread it evenly into the dish. Cover with aluminum foil and bake for 40 minutes. Remove the foil. The egg should be somewhat set, but still wet and light in color. Return to the oven and bake uncovered until the egg is completely set and it is browned on the top and sides, 20 to 25 minutes.
  • Let the bake rest for at least 10 minutes. Sprinkle with the reserved scallions and serve warm or room temperature.

  • Chop upper half to 2/3 of stalks of asparagus into 2 inch pieces.
  • Discard lower portion of stalk.

  • Preheat oven to 400 degrees.
  • In a pan sauté ham and onions with butter salt and pepper for 2 minutes.
  • Add asparagus and cook for another 3 minutes or until lightly cooked (should still be somewhat crunchy).
  • Spray square glass baking pan with Pam (or other oil).
