Man'oushe image

Za'atar can be found at your local Middle Eastern store, Kalustyan's and on Amazon. You can also make za'atar yourself. Use a good olive oil for the topping. Since there are only two ingredients, you want each to taste good. With the baking steel, my flatbreads baked fast, and came out with very crisp crusts. Man'oushe is normally eaten just as is, but you can serve it as an appetizer with olives and feta cheese alongside. Or it can be part of a Middle Eastern meal composed of hummus, baba ganoush, eggplant caviar, eggplant jam and cucumber feta salad. If you don't have a baking steel, use a baking stone, or bake the flatbreads on parchment-lined baking sheets, perhaps passing them under the broiler during the last-minute or so of baking, to brown them nicely. If using a baking sheet, you'll likely need to cook them longer than the 7 minutes indicated, so keep an eye on them and remove them from the oven when the crust is golden brown.

1 cup (250ml) tepid water ((slightly warmer than room temperature))
1 teaspoon active dry yeast
1 teaspoon sugar
1 tablespoon olive oil
2 1/2 cups (350g) all-purpose flour
1 1/2 teaspoons kosher or sea salt
1/4 cup (40g) za'atar
1/4 cup (60ml) extra-virgin olive oil

Steps:

  • To make the dough, in a bowl of a stand mixer (if mixing by hand, use a large bowl), sprinkle the yeast over the water along with the sugar and let sit in a warm place until the yeast starts to bubble, about 10 minutes.
  • Stir in the olive oil, flour, and salt. If using a stand mixer, use the dough hook attachment. If mixing by hand, stir with a wood spoon or spatula until it becomes too thick to stir, then turn the dough out onto a lightly floured counter. Knead the dough in the machine on medium-high speed, or by hand, until the dough forms a smooth ball, but is slightly sticky when you touch it with your finger. It'll take about 5 minutes and will pull away from the sides of the mixer bowl. Cover the dough in the bowl with a kitchen towel, and let rise in a warm place until the dough doubles in volume, about 1 1/2 hours.
  • To make the flatbreads, preheat the oven to 500ºF/260ºC and move the oven rack to the upper third of the oven. Set a baking steel on the rack. (Check the manufacturer's instructions for your baking steel or stone.) Otherwise, line two baking sheets with parchment paper. Preheat the baking steel or stone for 45 minutes.
  • Turn the dough out onto a lightly floured countertop and divide the dough into six pieces. Roll each piece of dough into a small oval, rolling it just until each starts to resist. When each one does, set it aside on the countertop and begin rolling another. Continue to roll each of the six pieces of dough into ovals, stopping when the dough starts stretching back on itself.
  • When ready to bake, take the first oval of dough and roll it out to its final size, adding a bit more flour if necessary to keep it from sticking to the counter or rolling pin, turning it over a few times to ensure it's not sticking. Roll it until it's about 12-inch long by 4- or 5-inches wide (30cm by 10- to 12cm).
  • Spread the oval with a layer of the za'atar mixture, about 1 1/2 tablespoons per flatbread leaving, not quite reaching the edge so there's space for a crust. Don't worry about any bare spots when smearing on the za'atar: it doesn't need to be perfect.
  • (Note: My za'atar was quite fresh, and strong. But if yours isn't, you can use more of the topping is you wish. If you need more for spreading, mix za'atar and olive oil together in even amounts.)
  • Lift the finished flatbread with your hands, or slide a pizza peel dusted with flour underneath, and transfer the flatbread on the baking steel or stone. Continue rolling and topping the rest of the flatbreads, baking each until the crust is golden brown, about 7 minutes.
  • (If you don't have a pizza peel and are worried about transferring the dough, another option is to cut six sheets of parchment paper to a size that will fit under the rolled dough, then transfer the unbaked flatbreads to the parchment paper before smearing them with za'atar. Leave the parchment paper under the flatbreads and lift them, holding the ends of the paper, then bake the man'oushe breads on the parchment paper, setting them directly on the baking steel or stone.)
  • Remove the flatbreads from the oven when the crusts are golden brown and serve warm or at room temperature.

A favorite Middle Eastern street snack is a small freshly baked flatbread, brushed with a mixture of olive oil and za'atar, the flavorful Middle Eastern spice mixture that contains wild thyme, sumac and sesame seeds. It is uncommonly good. For a more complex, pizzalike flatbread, this recipe adds spiced ground lamb and feta, along with a shower of herbs. But if you simply want the plain za'atar version, omit the lamb topping altogether.

1 teaspoon sugar
1 cup/240 milliliters lukewarm water
3 cups/385 grams "00" flour or all-purpose flour
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt

1 large onion, diced (about 1 1/2 cups)

4 garlic cloves, minced
1 pound ground lamb, preferably shoulder meat
1/2 teaspoon black pepper
1/2 teaspoon ground cloves
1/2 teaspoon allspice powder
1/4 teaspoon cayenne powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1 teaspoon sumac powder
1 tablespoon pomegranate molasses
3 tablespoons za'atar, combined with 3 tablespoons extra-virgin olive oil
8 ounces mild feta or halloumi
1/4 cup pine nuts (optional)
Parsley leaves, for garnish
Mint leaves, for garnish
Cilantro leaves, for garnish

Steps:

  • Make the dough: In a large mixing bowl or the bowl of a stand mixer, dissolve yeast and sugar in water. Stir in 1 cup flour to form a thin batter. Leave to rest until mixture is bubbly, about 20 minutes.
  • Add remaining flour, olive oil and salt. Mix until dough comes together, then knead until smooth, about 5 minutes. The dough should be soft and a bit sticky; dust lightly with flour as necessary. Return dough to bowl, cover and let rise until doubled, about 1 hour. (Alternatively, put dough in a resealable plastic bag and refrigerate overnight.)
  • Meanwhile, prepare the filling: Put 3 tablespoons olive oil in a wide skillet over medium-high heat. When oil is hot, add onions, season generously with salt and stir to coat. Cook, stirring, until softened and nicely browned, 5 to 7 minutes. Stir in garlic and cook for 1 minute more.
  • Add lamb to skillet and mash into onions with a large spoon until crumbled. Sprinkle with salt, then stir in pepper, clove, allspice, cayenne, cumin, coriander, cinnamon, sumac and pomegranate molasses. Turn heat to low and stir to combine. Cook for 5 minutes, until meat is just cooked through. Transfer mixture to a rimmed baking sheet and spread out to cool. (You will have a bit more lamb filling than you need - it's good on buttered toast for a cook's treat.)
  • Heat oven to 450 degrees. Punch down dough and divide into 8 2 1/2-ounce pieces. Knead each piece into a ball. Cover with a damp towel and let dough rest 20 to 30 minutes, then roll thinly or stretch each piece into a 6-inch round. Make the dough as thin as possible.
  • Arrange 4 rolled-out dough rounds on a parchment-lined baking sheet. Brush each with a generous amount of za'atar-oil mixture over dough (all the way to the edges or you'll get a puffed up "lip"). Make a layer of thinly sliced or crumbled feta, then sprinkle 1/4 cup of the cooled lamb mixture over the entire surface. Sprinkle on a few pine nuts, if using. Press topping down with the palm of your hand.
  • Bake 4 flatbreads at a time, on the upper rack of the oven, for 5 to 8 minutes or until puffed and lightly browned. The dough should still be soft and pliable, not crisp. Serve hot or at room temperature, garnished with parsley, mint and cilantro leaves, whole or roughly chopped.

Manaqeesh are one of the most popular breakfast foods for Arabs, particularly Palestinians, Lebanese, Syrians and Jordanians - but they're excellent any time of day. Most often topped with a za'atar and olive oil mixture as they are here, these simple flatbreads are now often found coated with varied ingredients, such as cheese, labneh, pepper paste, eggs and even sweet spreads. But the traditional za'atar still reigns supreme. You can roll the dough out with a pin, but, for the fluffiest and softest version of this flatbread, stretch the dough by hand.

3 1/2 cups/450 grams all-purpose or bread flour
1 1/4 cups/150 grams whole-wheat or white whole-wheat flour
1 teaspoon fine sea salt
1/2 teaspoon granulated sugar
1/4 cup extra-virgin olive oil, plus more as needed
2 teaspoons instant yeast
1 to 2 cups lukewarm water
3/4 cup/60 grams za'atar spice blend (see Tip)
1/2 cup extra-virgin olive oil

Steps:

  • Prepare the dough: In a large bowl, mix both flours, the salt and sugar. Add the oil, yeast and 1 cup water, and knead in the bowl with your fingers. Gradually knead in another 1/4 cup water, then knead in more water, 1 tablespoon at a time, until the dough comes together into a somewhat sticky ball. Let rest 5 minutes, then knead until smooth, supple and elastic, 5 to 7 minutes. Alternatively, in the bowl of a stand mixer fitted with the dough hook, combine all the dough ingredients with 1 cup water and mix on low speed, gradually adding water until the dough comes together. Continue mixing until the dough is smooth and elastic, about 5 minutes.
  • Rub the dough ball lightly with some oil, cover the bowl with plastic wrap and set aside until the dough doubles in size, 45 minutes to 1 hour. Timing will vary depending on water and room temperatures.
  • Meanwhile, make the topping: Combine the za'atar and olive oil in a bowl and mix well.
  • Divide the risen dough into 6 equal portions, roll into spheres and place on a greased baking sheet. Cover loosely with plastic wrap or a damp tea towel so the dough doesn't dry out. Let rise again until almost doubled in size, about 30 minutes. Meanwhile, heat oven to 500 degrees. Very lightly grease 2 baking sheets with olive oil.
  • Place a dough round on a prepared sheet. With your fingers, flatten it into a thin circle 7 to 8 inches in diameter. Use a spoon to spread about one-sixth of the za'atar mixture on top, leaving a narrow border along the perimeter and pressing the za'atar into the dough firmly with the spoon to prevent the bread from rising as it bakes. If your baking sheet can fit another piece or two of dough, repeat the process on the same sheet.
  • Bake until golden at the edges and the topping is lightly bubbling, 5 to 7 minutes. Transfer to a wire rack to cool. While the first batch is in the oven, prepare more on the second sheet. Bake as soon as the first sheet comes out. Repeat with the remaining dough and toppings.
  • Serve as soon as they're cool enough to handle or at room temperature. Once cooled, leftovers can be stored in the freezer, with parchment or wax paper between each piece, for up to 2 months. Reheat in the oven when ready to enjoy.

GRILLED FLATBREADS WITH ZA'ATAR

1 1/4 cups warm water (105°F to 115°F)
1 teaspoon active dry yeast
3 cups (or more) all purpose flour
2 teaspoons coarse kosher salt
5 tablespoons (about) olive oil, divided
2 tablespoons za'atar*
*Available at specialty foods stores and Middle Eastern markets, and online at adrianascaravan.com.

Steps:

  • Place 1 1/4 cups warm water in small bowl. Sprinkle yeast over. Let stand until yeast dissolves, about 10 minutes. Whisk 3 cups flour and salt in large bowl. Add yeast mixture and 2 tablespoons oil. Using wooden spoon, mix until sticky dough forms. Turn out onto floured surface. Knead until smooth and elastic, sprinkling with more flour if very sticky, about 6 minutes.
  • Oil another large bowl. Add dough; turn to coat. Cover with plastic wrap. Let dough rise until doubled in volume, about 1 1/2 hours. Punch down dough; divide into 6 pieces. Shape each piece into ball. Roll out each on lightly floured surface to 7x4-inch oval.
  • Prepare barbecue (medium-high heat). Grill each flatbread until cooked through and golden, about 4 minutes per side. Transfer hot flatbreads to board. Brush with olive oil; sprinkle with za'atar. Serve warm or at room temperature.

  • Place the dough in a large, well-greased bowl, cover with plastic wrap and a tea towel, and let rise until doubled. Alternatively, allow the dough a long, cool rise in the refridgerator, several hours or overnight. Bring the dough to room temperature before shaping; it'll rise as it warms up.
  • Divide the dough into 8 pieces. Stretch or roll the pieces into irregular slabs, and let rest for 15 minutes, covered with a tea towel. Spread some lemon/olive oil/za'atar mixture onto each piece of dough.
  • Rub grill with vegetable oil. Preheat the grill to its hottest temperature. Place the flatbreads gently on the grill. Cover and bake for 1 to 2 minutes, then check for doneness. Allow to bake until the tops begin to brown. Brush with additional topping if desired and remove from the grill.
  • For The Za'atar Topping: Mix topping ingredients with a whisk until well blended. Set aside until ready to use.
