2 tablespoons extra virgin olive oil
½ Spanish onion, chopped
2 cloves garlic, chopped
1 pinch Italian seasoning
24 kalamata olives, pitted and chopped
¼ cup white wine
¼ cup capers
1 teaspoon fresh lemon juice
6 leaves fresh basil, chopped
3 tablespoons freshly grated Parmesan cheese
1 pound flounder fillets
6 leaves fresh basil, torn

  • Place flounder in a shallow baking dish. Pour sauce over the fillets and top with remaining basil leaves.
  • Bake 12 minutes in the preheated oven, until fish is easily flaked with a fork.

FLOUNDER FILLETS IN A BEURRE BLANC SAUCE

Flounder Fillets in a Beurre Blanc Sauce image

Provided by Robert Farrar Capon

Categories     dinner, pastas, main course

Time 20m

Yield 2 servings

Number Of Ingredients 12

1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon white pepper
2 small or 1 large flounder fillet
4 tablespoons clarified butter, or oil
1/2 cup dry white wine
2 tablespoons lemon juice
2 tablespoons chopped shallots or onion
3 tablespoons heavy cream
8 tablespoons (1 stick) cold, unsalted regular butter, cut up
Salt, white pepper and cayenne, as desired
1 1/2 cups chopped cooked pasta, or cooked orzo

Steps:

  • Preheat oven to low. Mix the flour, salt and pepper together and dip the fillets in the mixture to coat both sides. Shake off excess. Heat a large skillet very hot, add the clarified butter and when it is very hot fry the fillets quickly, turning once, until golden brown on both sides (about 2 minutes). Remove fillets to dinner plates and keep warm in the oven.
  • Pour off any remaining clarified butter or oil from the skillet, add the wine, lemon juice and shallots and boil hard over high heat until reduced to about 1/8 cup. Add the cream and boil until reduced once again to about 1/4 cup. Lower the heat and vigorously whisk in the unsalted butter bit by bit, incorporating each piece almost completely before adding the next. As the last piece disappears, remove the pan from the heat. Do not boil the sauce after all the butter is in. 3.
  • Spoon a small amount of the sauce over the fillets in the oven, return the skillet to the heat, add the chopped pasta and toss with the rest of the sauce until heated through. Spoon the pasta onto the dinner plates and serve with a tossed salad.

FLOUNDER SAUTE WITH MUSHROOMS AND WILTED SPINACH

Flounder Saute With Mushrooms And Wilted Spinach image

Provided by Molly O'Neill

Categories     easy, quick, weekday, main course

Time 10m

Yield Four servings

Number Of Ingredients 9

2 tablespoons all-purpose flour
Salt and freshly ground black pepper to taste
4 3-to-4-ounce flounder fillets or 2 8-ounce fillets, split down the center
3 teaspoons olive oil
1/2 lemon
1 scallion, trimmed and minced
2 cups sliced mushrooms
1/4 cup dry white wine
4 cups torn spinach leaves, cleaned and dried

Steps:

  • Place the flour on a plate and season with salt and pepper. Lightly dust the flounder on both sides with the seasoned flour. Heat 2 teaspoons of the olive oil in a large, heavy nonstick skillet over medium-high heat. Place the flounder in the pan and saute on one side for about 90 seconds. Turn the fish over. Squeeze the lemon juice on the fish and sprinkle the scallions evenly over the fillets. Cook for 30 seconds and divide among 4 warm plates.
  • Place the remaining teaspoon of olive oil in the skillet. Add the mushrooms and season them lightly with salt and pepper. Saute until soft, shaking the pan constantly, about 3 to 4 minutes. Add the wine, increase the heat to high and continue to cook for about 1 minute, until the smell of alcohol disappears. Remove the pan from the heat, add the spinach and toss quickly until it barely wilts. Taste and season again with salt and pepper. Divide the spinach over each flounder fillet and serve immediately.

  • Note: Have everything ready to go for this dish. The fish is very quick cooking, so have all the ingredients prepared.
  • Fish ... Remove from the refrigerator to take the chill off. You don't want to cook with cold fish. In a small pie plate or bowl, add the flour, salt and pepper, dry off the fish and dredge in the flour mix and. Make sure to shake off any extra flour - you want a very light coating, almost like a dusting. Set to the side as your oil heats up.
  • Cook ... In a large saute pan (I prefer non-stick), add the butter and bring to medium high heat. Add the fish and the lemon slices (alongside the fish) and cook 3-5 minutes per side until golden brown. Don't forget to flip the lemon slices too. Now, every type of fish is going to cook differently, so you just have to check it as it cooks. Thin white fish usually will cook in 3-5 minutes per side; and the second side - cooking quicker. Thicker fish, such as cod, haddock, salmon will take longer. Once the fish is flaky but firm to the touch, remove to a plate, top each fish with the lemon slices, and cover as you make the sauce.
  • Sauce ... After you remove the fish, return the pan to the heat, and reduce to medium. Add in the shallot and cook just a minute to lightly soften. Then add in the wine to deglaze the pan, making sure to scrape up any bits (the best part), and cook a minute. Next, add in the butter, lemon juice, zest, and the capers, and cook another minute to warm everything up. Return the fish to the pan for just a few seconds to coat with the sauce.

  • Preheat the oven to 400°. In a small bowl, combine the chives, parsley, tarragon and lemon zest. Cut down the length of each whole flounder fillet to remove the spine strip. Season the flounder with salt and pepper and lay on a work surface, skinned side down. Spread equal amounts of the herb mixture over the top of each flounder strip. Roll up the flounder strips and secure each one with a toothpick through the center.
  • In a large, ovenproof, nonstick skillet, heat the oil. Add the flounder rolls seam side down and cook over moderately high heat until browned on the bottom, about 3 minutes. Turn and cook for 2 minutes. Transfer the skillet to the oven and bake for 3 to 4 minutes, until just cooked. Transfer 2 rolls, 1 large and 1 small, to each plate. Put the skillet over moderately high heat, add the wine and water and bring to a boil, scraping up the browned bits from the bottom of the skillet. Remove from the heat and swirl in the butter, 1 tablespoon at a time. Season with salt and pour the sauce over the fish. Serve right away.
