1 cup vegetable oil, plus extra for the pan (see Cook's Notes)
3 extra-large eggs
2 teaspoons pure vanilla extract
2 cups grated carrots, unpeeled and grated on a box grater
1 Granny Smith apple, unpeeled and grated on a box grater
1 (8-ounce) can crushed pineapple, drained
1/2 cup pecans, roughly chopped
1/2 cup sweetened shredded coconut
1/2 cup raisins
2 1/4 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350˚ and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  • In a large bowl, whisk together the eggs, oil and vanilla. Add the carrots, apple, pineapple, pecans, coconut and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.

1 medium tart apple, peeled and grated
1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts., Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

  • In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.

Morning Glory muffins are notoriously a lot of work to make. Not these! One bowl, fast, easy, scratch-made muffins with healthier ingredients than the traditional, sugar- and fat-laden recipes. But these are SO GOOD!!

2 cups grated carrots
2 cups white whole wheat flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup honey
1 cup drained crushed pineapple
1/2 cup raisins
1/2 cup coconut
2 eggs
1 cup coconut oil
2 teaspoons vanilla

Steps:

  • Grate carrots into food processor with grating disk.
  • Replace grating disk with chopping blade.
  • Add dry ingredients (flour--you can use all-purpose flour, baking soda, cinnamon and salt) and pulse twice.
  • Add remaining ingredients (raisins, coconut, pineapple, eggs, oil and vanilla). Note: You can use whatever oil you like. Coconut oil is healthy and tastes great in these!
  • Pulse three times.
  • Scoop into paper-lined muffin tins.
  • Bake at 350 degrees for 20 minutes.

2 cups all-purpose flour
1-1/4 cups sugar
2 teaspoons baking soda

3 large eggs, room temperature
1 cup canola oil
1 medium apple, shredded
2 teaspoons vanilla extract
2 cups grated carrot
1/2 cup raisins
1/2 cup sweetened shredded coconut
1/2 cup chopped pecans

Steps:

  • In large bowl, combine the flour, sugar, baking soda, cinnamon and salt. In another bowl, combine the eggs, oil, apple and vanilla. Stir into the dry ingredients just until combined. Fold in the carrot, raisins, coconut and pecans., Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

I put in some whole wheat flour and use less sugar. Serve these moist muffins warm for breakfast. The key to perfect muffins is not to over mix them.

1/2 cup butter, melted
3/4 cup packed brown sugar

1/2 cup peeled and finely chopped apple
1/2 cup shredded coconut
1/2 cup pecans, chopped
1/2 cup raisins

Steps:

  • Preheat oven oven to 350 degrees and grease a 12 hole muffin pan. In a medium mixing bowl stir together flour, baking powder, cinnamon, and salt, set aside.
  • In a large mixing bowl stir together butter, sugar, eggs, and vanilla. Mix in carrot, apple, coconut, pecans, and raisins. Add flour mixture and stir just until blended (do not over mix!).

1/3 cup nonfat milk
2/3 cup unsweetened applesauce
1/4 cup brown sugar, packed
1/4 cup light molasses
2 tablespoons canola oil
1 large egg
3 medium carrots, shredded (1 1/2 cups)
1/2 cup dried plum, chopped (prunes)

Steps:

  • Preheat oven to 400 degrees. Grease 12 standard muffin-pan cups or line cups with paper liners.
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; stir in oats.
  • In a medium bowl, with fork, mix milk, applesauce, brown sugar, molasses, oil, and egg until blended; stir in carrots and dried plums.
  • Add applesauce mixture to flour mixture; stir just until flour is moistened (batter will be lumpy).
  • Spoon batter into prepared muffin-pan cups. (Muffin cups will be full.) Bake 25 minutes or until toothpick inserted in center of muffin comes out clean.
  • Immediately remove muffins from pan. Serve warm, or cool on wire rack to serve later.
