EASY BUTTERMILK BISCUITS FROM SCRATCH (FOOD PROCESSOR)
Worry about over-mixing? No problem using my food processor method. These biscuits are light and fluffy. I hate to say anything is the 'best ever', but these are pretty close!!

Steps:
- Add flour and butter to a food processor. Pulse until combined and crumbly.
- Add buttermilk and pulse until buttermilk is incorporated into the flour mixture. Do not over mix.
- Pour out onto a lightly floured surface; Pat dough to ½-inch thickness and fold the dough over on itself. Repeat two more times. Cut into biscuits and place on a greased pan.
- Bake at 425°F for 11 to 15 minutes or until golden.

BUTTERMILK BISCUITS - FOOD PROCESSOR
These are so simple to make in the food processor. Using a food processor makes for a more tender biscuit, because you aren't handling the dough as much. A few pulses, and you have biscuit dough. You can make this recipe as you would any other scratch biscuit if you don't have a food processor. Enjoy! My photos

- 1. Preheat oven to 450°F. Combine the dry ingredients in a bowl, or in the bowl of a food processor.
- 2. Cut the butter into chunks and cut into the flour until it resembles course meal. If using a food processor, just pulse a few times until this consistency is achieved.
- 3. Add the buttermilk and mix just until combined. If it appears on the dry side, add a bit more buttermilk. It should be very wet. Turn the dough out onto a floured board.
- 4. Gently pat the dough out until it's about 1/2" thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick. Use a round cutter to cut into rounds.
- 5. If you like soft sides, place the biscuits touching each other on a lightly greased cookie sheet. If you like crunchy sides, put them about 1 inch apart these will not rise as high as the biscuits put close together. I brushed the biscuits with milk, and cracked some fresh black pepper on top. Bake for 10 - 12 minutes ( do not over bake )
- 6. Enjoy with sausage gravy, jam, honey or just a slather of butter.
PERFECT WHOLE WHEAT BISCUITS
These biscuits are sooo delicious! A mix of white and wheat flour makes them light yet healthy. It is preferable to use a soft winter wheat flour for your all purpose flour. My local health food store purchases super fresh ground flour from a nearby flour mill so it makes for spectacular baking! I usually make a double batch and cut them to be the super sized biscuits so that we can make breakfast biscuits with eggs, bacon and cheese! I don't change the recipe at all, ever. Tip: my grandmother always said that to make good, flaky biscuits handle the dough as little as possible, barely kneading it at all.

- Preheat oven to 375 degrees. Use parchment paper on baking pan if you have it on hand.
- Put both of the flours, the baking powder, sugar and salt in large mixing bowl.
- With a pastry cutter or your fingertips gently cut in butter until it resembles coarse cornmeal.
- Make a well in the center and add half and half. Stir gently until mixture forms somewhat of a ball.
- Place on a lightly floured surface and gently knead until a mass is formed.
- Roll to a 1" thickness and cut into circles with flour dipped 2" biscuit cutter.
- Place on baking pan and brush tops with the 3 tbsp of half and half and sprinkle with sugar.
- Bake for 15 to 20 minutes or until lightly browned.
- Serve hot for best flavor!

WHOLE WHEAT BUTTERMILK BISCUITS
Whole Wheat Southern Style Buttermilk Biscuits. This recipe is NOT for everyone. You will need a grain mill in order to use this recipe. The recipe does make a rather good biscuit.

- Mill the wheat berries with the mill set at Pastry setting or as fine as your mill will mill the berries. The flour needs to be fine, not course. You will have about 2 + cups Whole Wheat Flour. (I've never had any luck with this recipe with the WW flour purchased in the store.).
- Mix together the dry ingredients.
- You can cut the butter into the dry mixture in the old fashion way or here's a trick I learned from AB. Melt the butter in the microwave in a 2 cup glass measuring cup (about 45 seconds). Pour the COLD buttermilk in the cup with the melted butter. The butter will coagulate into beautiful little clumps just like you want. Mix in with the dry ingredients until it begins to pull away from the bowl (I use a fork). Do not overmix. Dump out onto a floured or oiled surface and pat out about 1/2 to 3/4 " thick. At this stage you can fold and pat but don't overdo the folding and patting. We're dealing with WW high gluten.
- Cut into circles. I use a Baby Gerber Apple Juice can from our first child who is now 46 years old (that can's cut out a bunch of biscuits!). I like soft sided biscuits so I put them in the pan sides touching.
- Bake at 425°F till lightly browned 10-12 minutes. If you've done everything right when you try to pick one up to butter it the top will come off. Yep, they're that tender and fluffy.

- Put flour, baking powder, and salt in a food processor and pulse to mix.
- Cut the butter into chunks, drop on top of the flour mix, and pulse again, several short bursts, until it is in bits the size of split peas.
- Sprinkle 1/2 cup of the cold milk over the mixture, and pulse. Add a little more milk and pulse again, continuing until the mix just comes together into a ball.
- Wrap the dough in wax paper or plastic wrap, and refrigerate for 1/2 hour.
- Roll out the dough to 1/2", and cut into circles with an average-size coffee cup (flour the rim), or your favourite cutter.
- Bake at 450 on an ungreased baking sheet for approximately 10-12 minutes.
