If tender meatloaf is something your family craves, they'll be delighted to try this Slow-Cooker Italian Meatloaf. Prep the whole meal in 15 minutes, then forget about it until it's time for dinner. This Italian meatloaf recipe uses a few simple ingredients with little mess and makes plenty of servings. What's not to love?

1 1/2 lb lean (at least 80%) ground beef
2 roasted red bell peppers (from a jar), finely chopped
3/4 cup Progresso™ Italian style bread crumbs
1 cup grated Parmesan cheese
2 eggs
1 cup marinara sauce

Steps:

  • Line bottom and side of slow cooker with large sheet of foil. Lightly spray with cooking spray.
  • In large bowl, stir together 1 1/2 lb lean (at least 80%) ground beef, 2 roasted red bell peppers (from a jar), finely chopped, 3/4 cup Progresso™ Italian style bread crumbs, 1 cup grated Parmesan cheese and 2 eggs. Use clean hands to thoroughly mix together. Shape mixture into a loaf; place in slow cooker.
  • Cover; cook on Low heat setting 5 to 6 hours or until meat thermometer inserted in center of loaf reads 160°F.
  • Uncover; pour 1 cup marinara sauce evenly over cooked meatloaf. Cover; cook on Low heat setting 15 minutes longer or until sauce is thoroughly heated.
  • Use sides of foil to remove meatloaf from slow cooker to cutting board. Let stand 10 minutes before slicing and serving.

1 small sweet onion (peeled and grated)
1 cup whole milk
2 large eggs (lightly beaten)
2 Tablespoons light brown sugar (packed)
1 Tablespoon ketchup
1 Tablespoon bbq sauce
1 Tablespoon Worcestershire sauce
1 Tablespoon garlic powder
1 teaspoon kosher salt
½ teaspoon black pepper
1 cup plain panko breadcrumbs
2 pounds ground beef ((85/15))
½ cup ketchup
½ cup bbq sauce
¼ cup light brown sugar (packed)
fresh chopped parsley for garnish (optional)

Steps:

  • Line the crock pot with a large piece of heavy-duty foil, spray with cooking spray, and set aside.
  • In a large bowl add the grated onion, milk, eggs, brown sugar, ketchup, bbq sauce, Worcestershire sauce, garlic powder, salt, and pepper.
  • Whisk this mixture until fully combined.
  • Add in the breadcrumbs. Stir in the breadcrumbs until mixed well.
  • Next, add the ground beef.
  • Using your hands, mix everything together until well combined but do not overmix.
  • Add the mixture to the aluminum foil in the slow cooker, and form it into a long oval shape, set aside.
  • In a small bowl add the ketchup, bbq sauce, and brown sugar. Whisk this mixture together to make the glaze.
  • Brush half of the glaze on top of the meatloaf. Cook on low for 6 hours or until the internal temperature reaches at least 165°F.
  • Take the meatloaf out of the crockpot using the foil to help lift it out. Place on a sheet tray and brush the remaining glaze on top.
  • Broil until the glaze is bubbly and starts to brown slightly. Serve with optional parsley garnish.

Italian Meatloaf tastes exactly like a giant meatball served on a plate of spaghetti. This easy weeknight recipe combines ground beef, parmesan, seasonings, and bread crumbs, all smothered in marinara sauce, and cooked in the crock pot.

3 large eggs, (lightly beaten)
2 garlic cloves, (minced)
1 cup freshly grated Parmesan
1/2 cup bread crumbs, (regular or gluten free*)
1/4 cup chopped fresh parsley
1 1/2 teaspoon salt
1/4 teaspoon ground pepper
2 pounds lean ground beef
2 cups homemade or good quality jarred marinara sauce ((can use additional for serving))
spaghetti, (regular or gluten free, for serving)

Steps:

  • Fold a 2-foot length of aluminum foil in half lengthwise. Place the foil in the slow cooker in the lengthwise direction, pressing along bottom and sides. Roll over the excess foil to make "handles" for lifting when the meatloaf is done. (See picture in "How to Make Italian Meatloaf")
  • In a large bowl place eggs, garlic, Parmesan, bread crumbs, parsley, salt, and pepper. Whisk to combine. Add ground chuck and mix throughly with spoon or hands until mixture is evenly incorporated.
  • Shape it into a loaf and carefully place in the slow cooker on top of foil. Pour 2 cups of marinara over the top.
  • Cover and cook on HIGH for 3 hours or until thermometer reads 165-170ºF.
  • Carefully lift meatloaf out of slow cooker with handles and place on platter to serve with extra marinara. Cut into slices and serve with pasta, if desired.

1 cup onion (chopped)
1-2 tablespoons olive oil
2 teaspoons minced garlic (about 4 garlic cloves)
1 1/2 pounds ground chuck
1/2 pound ground mild or hot Italian sausage
7.5- oz jar sun-dried tomatoes in oil (drained and chopped)
3/4 cup Italian breadcrumbs
3/4 cup Parmesan cheese (grated)
1 egg
1/4 cup fresh basil (chopped)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 large onion (sliced)
1/2-3/4 cup your favorite marinara

Steps:

  • Heat olive oil in a medium skillet. Place chopped onion in oil and sauté for 3-4 minutes or until lightly browned. In the last minute, add garlic.
  • In a large bowl, combine onion-garlic mixture with beef, sausage, sun-dried tomatoes, bread crumbs, cheese, egg and seasonings.
  • Mix with hands and shape into a loaf that will fit into your crockpot.
  • Slice a large onion with enough slices to cover bottom of crockpot. Lay in bottom then pour 1/2 cup water on top.
  • Cut a piece of parchment paper larger than the meatloaf and place underneath. It should be large enough to aid in lifting the meatloaf out of the crockpot when it is done.
  • Lower meatloaf into crockpot. Spread with marinara.
  • Cover and cook on low for four hours.
  • When ready to serve, lift out of crockpot holding the ends of the parchment sling. Tilt slightly over sink and drain any liquid that has accumulated underneath.
  • Place on platter and let rest 10 minutes before slicing.

  • In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top.

This is an awesome recipe and very versitile. I also make up the meatloaf mixture and shape into meatballs. It makes about 3 dozen meatballs. I will freeze in 3 quart size ziploc bags and simmer a dozen or so in a sauce pan and spaghetti sauce when we want to have spaghetti with meatballs for dinner! Very Moist and flavorful

2 lbs lean ground beef
2 slices fresh bread (ripped into small pieces, about 2 cups)
1/2 cup spaghetti sauce
1 large egg
2 tablespoons dried onion flakes
1 teaspoon garlic salt
1/2 teaspoon dried Italian herb seasoning
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
2 tablespoons spaghetti sauce

Steps:

  • Fold a 30" long piece of foil in half lengthwise. Place in the bottom of the slow cooker with both ends hanging over the top edges of the slow cooker.
  • In a large bowl, combine all ingredients except 2 Tbls spaghetti sauce until well blended.
  • Shape into a loaf. Place in a slow cooker on top of foil. Spread 2 Tbls of spaghetti sauce over top.
  • Cover tightly and cook on high 2 1/2 to 3 hours or on low 5 to 6 hours.
  • Use the ends of the foil to lift out meat loaf and transfer to a serving platter.
