A decadent four-layer chocolate cake that's filled with buttercream and topped with sour cream chocolate frosting.

Number Of Ingredients 19

3/4 dark unsweetened cocoa powder
1 1/4 cups hot water
2/3 cup sour cream
2 2/3 all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
6 ounces unsalted butter (softened)
1/2 vegetable shortening (at room temperature)
1 1/2 cups granulated sugar
1 cup firmly packed dark brown sugar
3 eggs
1 tablespoon vanilla
1 cup unsalted butter (at room temperature)
2 tablespoons heavy cream (or milk)
1 teaspoon vanilla
3 1/2 cups powdered sugar
1 cup sour cream
8 ounces semi-sweet or dark chocolate chips

Steps:

  • 1. Preheat oven to 325 degrees F. Spray two 9-inch cake pans with non-stick cooking spray. Cut out two parchment paper circles to fit the pans, and place one in the bottom of each pan. Spray the parchment paper with non-stick cooking spray as well.
  • 2. In a small bowl, whisk together cocoa powder and hot water until smooth. Add sour cream and combine. Set aside to cool.
  • 3. In a medium bowl, mix together flour, baking powder, baking soda, and salt.
  • 4. In a large bowl, beat together butter and sugars until fluffy, 1 to 2 minutes. Add eggs and vanilla; mix to combine, scraping sides of bowl as needed.
  • 5. Add flour mixture to butter mixture in three additions. Alternate adding flour mixture and cocoa mixture, mix just until combined after each addition.
  • 6. Pour 2 1/2 cups of batter into each cake pan. {This recipe is made for 3 cake pans, if you have a third add the rest of the batter to than pan. Otherwise you can do whatever you like with the extra batter, like eat it with a spoon...I won't tell.}
  • 7. Bake the cakes for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and col completely.
  • 1. Add all ingredients to a large bowl and beat until smooth. If this frosting is too thick/dry add another tablespoon of milk, and mix again. If the frosting is too wet, add 1/4 cup powdered sugar and mix. Adjust as needed until desired consistency is reached.
  • 1. Place chocolate in a heatproof bowl. Place bowl over a medium saucepan filled 1/3 way with water. Bring water to a simmer. Occasionally stir chocolate until it is completely melted.
  • 2. Remove from heat, and stir in sour cream. Fold and stir until completely combined.
  • 1. Remove cakes from pans. Using a cake saw (or serrated knife) cut each cake into two layers (horizontally). Place one layer on serving plate or cake board. Top with a 1/3 cup buttercream. Spread buttercream evenly over top of cake layer. Repeat with remaining 3 layers. Using remaining buttercream to frost around the sides and top of the cake. Freeze cake for 20 minutes.
  • 2. Remove cake from freezer. Frost cake with chocolate frosting, and top with chocolate jimmies or other sprinkles or your choice. Grab a big glass of milk or cup of coffee and enjoy!

10 graham crackers, crushed
¾ cup granulated sugar, plus 3 tablespoons, divided
⅓ cup cocoa powder, plus 4 tablespoons, divided
14 tablespoons unsalted butter, 1 3/4 sticks, melted, divided
4 large eggs
1 teaspoon vanilla extract
½ cup all-purpose flour
2 cups whole milk
½ teaspoon cream of tartar
1 ½ cups heavy cream
2 tablespoons powdered sugar

Steps:

  • Preheat the oven to 350˚F (180˚C). Line an 8-inch (20-cm) square baking pan with parchment paper.
  • In a large bowl, combine the graham cracker crumbs, 3 tablespoons of granulated sugar, 2 tablespoons of cocoa powder, and 6 tablespoons of melted butter until fully incorporated and the mixture looks rich and chocolaty.
  • Transfer the mixture to the prepared baking pan and pack down to cover the bottom of the pan in an even layer.
  • Bake for 10 minutes, then let cool.
  • Reduce the oven temperature to 325˚F (160˚C).
  • Separate the eggs into two large bowls.
  • Add the remaining ¾ cup (150 G) of granulated sugar to the egg yolks and whisk until pale yellow.
  • Add the remaining ½ cup (115 G) of melted butter and the vanilla and mix until fully incorporated.
  • Sift in the flour and ⅓ cup (40 g) of cocoa powder and mix thoroughly.
  • Slowly add the milk, stirring continuously, until a very wet batter forms. Set aside.
  • Beat the egg whites with an electric hand mixer until frothy. Add the cream of tartar and continue beating until medium peaks form. Whisk ⅓ of the egg whites into the egg yolk batter, then gently fold in the remaining egg whites with a rubber spatula.
  • Pour the batter over the graham cracker crust and bake for 40 minutes, or until the edges are set and the center jiggles slightly. Let cool for at least 1 hour.
  • In a large bowl, whip the heavy cream until soft peaks form and the cream has doubled in volume.
  • Sift in the remaining 2 tablespoons of cocoa powder and the powdered sugar and fold with a rubber spatula to incorporate.
  • Invert the cooled cake onto a cutting board. Remove the parchment paper and flip the cake again so the graham cracker crust is on the bottom.
  • Spread the chocolate whipped cream onto the cake.
  • Slice and serve.

1/4 cup unsweetened cocoa
1 cup mayonnaise
3 large eggs
1 cup water
2 (16 ounce) containers chocolate frosting
1/4 cup sour cream
2 teaspoons vanilla
1 cup flaked coconut, toasted
1/2 cup chopped almonds, toasted

Steps:

  • Preheat oven to 350°. Spray 2 8-inch cake pans with non-stock cooking spray. Line bottoms with wax or parchment paper and spray paper. Dust with flour; set aside.
  • Cake: Beat devil's food cake mix, cocoa, mayonnaise, eggs and water until blended. Beat two more minutes on high. Divide cake batter evenly into two pans.
  • Bake about 35 minutes or until tests done. Cool for 20 minutes in pans and then remove onto racks. Peel off paper to cool completely.
  • Filling: Whisk frosting, sour cream and vanilla. Transfer 1 1/2 cups into a medium bowl and stir in almonds and coconut; set aside.
  • Frost the Cake: Using a serrated knife, split each cake in half. Place one layer, split side down, on serving platter. Place 1/3 of filling on top of layer and spread evenly. Repeat with following layers until final cake layer. Spread frosting over the top and sides of cake. Can store up to 4 days.

½ cup butter
2 cups white sugar
6 eggs
3 cups milk
3 cups self-rising flour
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 4 or 5 - 8 inch round cake pans.
  • In a large bowl, cream together the shortening, 1/2 cup butter and 2 cups sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour alternately with the 3 cups milk; beat well. Pour 1/4 cup of batter into each prepared pan, and spread evenly. You will need to bake the layers in two or three batches.
  • Bake for 5 to 7 minutes in the preheated oven, just until the layers are dried out. Do not brown.
