4 tablespoons extra virgin olive oil (divided)
1 pound thin asparagus (trimmed)
1/2 teaspoon kosher salt (divided)
4 large eggs
2 tablespoons extra virgin olive oil
1/2 cup Panko breadcrumbs
1 teaspoon lemon zest (from 1 lemon)
1/4 teaspoon red pepper flakes
1/8 teaspoon kosher salt
1/2 cup Italian Parsley (chopped)
2 tablespoons grated parmesan cheese

Steps:

  • As seen on: Giada in Italy, Episode 5. Giada's Daily Special.
  • For the gremolata, heat a large skillet over medium heat. Add the olive oil and breadcrumbs and toast, stirring often with a wooden spoon until golden brown. Place in a small bowl and while still hot, add the lemon zest, chili flakes and salt. Mix together and allow the mixture to cool to room temperature. Stir in the parsley and cheese.
  • Wipe out the pan with a dish towel. To that pan, add 2 tablespoons olive oil and heat over medium high heat. Add the asparagus and 1/4 teaspoon salt. Cook for about 4 to 5 minutes, stirring and flipping often with tongs until they are bright green, cooked through and slightly browned. Divide among your serving plates.
  • Crack 2 eggs into the pan, being careful as it may splatter, season it with salt and reduce the heat slightly and cook for about 2 to 3 minutes or until the edges are light brown and crispy and the whites are just set. The yolk should still be runny. Using a slotted spatula slide the 1 egg on top of 2 of the plates. Repeat with the remaining eggs. Sprinkle each dish with the breadcrumb gremolata and a drizzle of olive oil if desired.

Here is a fine variation on the old combination of egg and asparagus. It is a twist on the bistro staple, frisée aux lardons, with pan-fried asparagus standing in for the bacon lardons. It's mixed with the frisée and a pungent garlic vinaigrette laced with a little anchovy. Then, in place of the usual poached egg nestled in curling frisée leaves, fry an egg until the edges are crisp and brown. This adds a vaguely baconlike nuance to the salad, without the meat.

Steps:

  • Mash the garlic and a pinch of salt into a paste with the side of a knife. Mix it in a small bowl with the anchovy, lemon juice and 2 tablespoons oil.
  • Place a large skillet over medium-high heat for 20 seconds. Add 3 tablespoons oil. When it shimmers, add the asparagus. Toss occasionally until golden brown and almost tender, 2 to 3 minutes. Add a pinch of salt and cook until tender, 1 to 2 minutes longer. Transfer to a large bowl; add the frisée and the garlic-anchovy dressing and toss gently.
  • Return skillet to medium heat and add the remaining 1 tablespoon oil. Crack in the eggs; season lightly with salt and pepper. Cook until the eggs are just set, about 3 minutes.

2 pounds fresh asparagus
1 tablespoon finely chopped fresh sage
1 1/2 tablespoons olive oil
Salt
1 cup vegetable or olive oil, for frying
30 fresh medium sage leaves, patted dry
1 wedge (2 ounces) Parmigiano-Reggiano cheese
Zest of 1 lemon, thinly sliced
3 tablespoons freshly squeezed lemon juice
1 tablespoon chopped sage
1/4 teaspoon salt
Freshly ground pepper to taste
1/4 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 450 degrees.
  • Trim bottom of asparagus spears at point where they turn pale and tough. If spears are medium to thick, peel lower two thirds of the trimmed spears with sharp vegetable peeler. Thin spears needn't be peeled. Place them in a bowl, add chopped sage, olive oil and a light sprinkle of salt and toss lightly. Spread asparagus in a single layer on a baking sheet and roast until the spears are slightly limp -- 4 to 8 minutes depending on their thickness. Remove from oven and let cool. Heat olive oil in a 1 1/2 to 2 quart saucepan to 330 degrees. Drop in half of the sage leaves and turn them in the oil with a wire skimmer or slotted spoon. Fry for only 10 to 15 seconds, do not let the leaves brown. Then remove them to paper towels to drain. Fry the remaining sage leaves and sprinkle them all lightly with salt. They should crisp when they cool. The sage can be fried up to 1 day ahead of time -- store in airtight container at room temperature. Shave the Parmigiano cheese into thin curls. For the dressing, combine lemon zest, lemon juice, chopped sage, salt, pepper in a small mixing bowl, whisk in the oil. When ready to serve, toss asparagus with the dressing in a large bowl. Arrange the dressed asparagus on a serving platter, sprinkle with Parmigiano curls and with the fried sage leaves.

It makes sense then, that asparagus and garlic make such a good duo. When cooked with care, both can be mild and sweet (or pungent and bitter when cooked carelessly). To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

  • Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat.   • Meanwhile, sift flour, baking powder and salt into large bowl. Add ice-cold water and whisk just until blended.
  • Dip 1 asparagus spear into batter, then add to oil. Repeat with 4 more asparagus spears. Fry until crisp, about 2 minutes. Using tongs, transfer asparagus to paper towels. Repeat with remaining asparagus and batter in 3 mire batches.
  • Toss greens in large bowl with enough dressing to coat. Mound salad on 4 plates. Arrange asparagus around salads in spoke fashion and serve.
