FRENCH STYLE MUSTARD
For a variation on this mustard when it has just cooled add 4 tsp drained rinsed & crushed green peppercorns. To keep an opened jar of mustard fresh longer put a slice of lemon on top & close. Be careful how long you store a mustard that has eggs in it - you are safe for at least 2 weeks

Steps:
- In a saucepan combine mustard, sugar& salt.
- Combine the eggs and vinegar and add slowly to the dry mixture, stir constantly Cook over moderate heat, stirring all the while until it thickens and is smooth If it is not completely smooth use a whisk.
- Cool the put into a jar& refrigerate.

- Combine all ingredients in a small saucepan over medium heat.
- Whisk until smooth.
- When mixture comes to a boil, reduce heat and simmer for 5 to 10 minutes, stirring often.
- Remove pan from heat.
- Leave uncovered for 1 minute, then cover pan with a lid until cool.
- Chill and store in a covered container.

GOLD RUSH SAUCE (FRENCH'S MUSTARD RECIPE)
This recipe came from an old French's mustard booklet. My mom used to make it and put on everything from grilled steaks and burgers to chicken, even on corn, vegetables, and burger buns. Nothing says summer grilling is here to me than some of this on the first steak of the season! We jazz it up sometimes changing type of mustard, as well as changing the the dry ingredients, but the original is GREAT!

Steps:
- Allow butter to come to room temperature.This time is not included in prep time.
- Combine all other ingredients; add gradually to butter mixing throughly.
- Grill steaks or hamburgers on one side, turn, spread cooked side with butter mixture.
- When other side is cooked, spread with mixture.
- Store in refrigerator.

Steps:
- Combine mustard seeds, dry mustard and cold water; and soak for 3 hours and set aside.
- Combine the rest of the ingredients in 1 to 2 quart non reactive pan, and simmer for 10 to 15 minutes, uncovered, over medium heat until reduced by half.
- Pour liquid through wire strainer into mustard seed mixture then whirl in blender until coarsely ground.
- Cook in top of double boiler over simmering water for 8 to 12 minutes, stirring occasionally, until thickened. Let cool, pack into jar or crock, and cover tightly.
