Fresh Apple Cake with Brown Sugar Glaze is a sugary sweet cake filled with fresh apples, pecans, and topped with buttery brown sugar decadence.

1 1/4 cups cooking oil
2 cups sugar
2 eggs
2 1/2 cups self rising flour
2 tsp vanilla
1 cup nuts (chopped)
3 apples (peeled & chopped, (I use granny smith apples))
1 stick butter
1 cup brown sugar
2 Tbsp milk
3/4 cup powdered sugar (sifted)

Steps:

  • Preheat oven to 325 degrees. Spray 9 X 13 pan with cooking spray.
  • In a large bowl or stand mixer, mix oil and sugar until well combined. Add in eggs one at a time. Slowly add in flour until combined and mix in vanilla. Fold in nuts and apples.
  • Bake for about 40 to 55 minutes or until golden brown. Remove from oven and let cool as your start the glaze.
  • In a saucepan, over medium heat, while stirring add butter and brown sugar and cook until it dissolves. Add in powdered sugar and milk and stir until well combined and melted into glaze.
  • Immediately pour glaze over cake and serve warm.

1 1/2 cups packed light brown sugar
2 large eggs
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
  • In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
  • To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
  • To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

BROWN SUGAR GLAZE:
1/2 cup packed light brown sugar
3 Tablespoons butter
1/2 teaspoon vanilla
1 Tablespoon heavy cream

Steps:

  • CAKE: Heat the oven to 350° F. Grease an 8-inch pan and set aside. In a medium bowl, combine the flour, sugar, baking soda, salt and cinnamon.Stir with a whisk to mix everything together. In a large bowl, mix the eggs with a hand mixer til light in color and foamy. Add the oil and vanilla and beat well. Stir in the flour mixture with a spoon and continue stirring the batter til the flour disappears. Add the apples and nuts (if using) and stir to mix them into the batter. Scrape batter into prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Place the hot cake on a wire cake. While it's still hot, prepare the glaze. GLAZE: Combine all the ingredients into a saucepan. Cook over medium heat, stirring often, until the mixture comes to a gentle boil. Cook for 3-5 minutes. Spoon the hot glaze over the still hot-from-the-oven cake. Let the glazed cake cool completely before serving straight from the pan.

3/4 cup sugar
1 large egg, room temperature
1 cup all-purpose flour
1/2 teaspoon baking soda

1/2 cup chopped walnuts
CARAMEL SAUCE:
1/2 cup packed brown sugar
2 tablespoons cornstarch
1/2 cup light corn syrup

1/4 teaspoon salt
1 large egg, lightly beaten

Steps:

1 cup sugar
1/2 cup brown sugar
1/2 cup shortening
1 cup buttermilk
2 eggs, beaten
1/2 teaspoon cinnamon
2 teaspoons baking soda
2 1/4 cups flour
1/2 teaspoon nutmeg
1/4 teaspoon clove
1/4 teaspoon salt
2 cups peeled chopped apples
1/2 cup chopped nuts
1/4 cup brown sugar
1/4 cup white sugar
1/8 teaspoon cinnamon

Steps:

  • Preheat oven to 350 deg F.
  • Grease and lightly flour a 13 x 9 inch cake pan.
  • Mix together sugars, eggs and shortening.
  • Dissolve soda in buttermilk.
  • Mix together the dry ingredients, adding to the sugar mix alternately with the buttermilk.
  • After mixing the above well, fold in apples and pour into prepared cake pan.
  • Mix topping and sprinkle over batter.

1/2 cup sugar
1 teaspoon cinnamon

Steps:

  • To make the cinnamon sugar topping: in a small bowl, mix together the 1/2 cup sugar and 1 teaspoon cinnamon; set aside.
  • To make the cake: In a small mixing bowl, sift together the flour, baking powder, and salt; set aside.
  • In a larger mixing bowl, beat together the oil, sugar, and eggs, using an electric mixer on medium speed; beat for about 3 minutes or until light and thick.
  • Add the dry ingredients to the egg/sugar/oil mixture in three parts, alternating with the milk and vanilla, beating after each addition until smooth.
  • In another bowl, toss the apples with half the cinnamon-sugar topping; then stir half the apples into the batter.
  • Pour the batter into a greased and lightly floured 10-inch tube pan.
  • Drop the remaining apples on top of the batter and sprinkle with the remaining cinnamon sugar.
  • Bake in a 325 degree oven for 60-70 minutes or until a pick comes out clean.
  • Let the cake cool in the pan for 1 hour.
  • Remove cake from pan and cool completely on a wire rack.
