GRILLED CORN SALSA

- Brush the corn liberally with olive oil and season well with salt and pepper. Grill, turning every few minutes, until light gold all over and cooked, about 12 minutes. Let cool and cut off the kernels. Discard the cobs.
- Core the tomatoes and cut a small X on the bottom of each. Brush with olive oil, season with salt and pepper, and place on the grill, X side down, away from direct heat. Cover the grill and cook until the tomatoes begin to soften but are not cooked all the way through (or they will melt through the grate!), about 15 minutes. Set aside until cool enough to handle, then peel. Cut the tomatoes in half crosswise and squeeze out the juice and the seeds through a sieve into a bowl. Reserve the juices and chop the flesh.
- Put the onions in the non-reactive medium bowl and toss with 2 tablespoons of the vinegar. Let marinate until the color changes, about 10 minutes.
- Add the chopped tomatoes, reserved tomato juice, onions, basil, and 1/3 cup olive oil to the corn. Toss well. Taste for seasoning and adjust with salt, pepper, and remaining vinegar. The salsa is best eaten the same day but will keep, covered and refrigerated, a day or so.
- Serve with tortilla chips or as a topping for tacos.

Founder Steve Ells, a former San Francisco chef, hit on a magic formula with his concept for a mix-and-match taqueria: He opened his first Chipotle in Denver in 1993 and now has nearly 1,100 locations. Ells came up with all the recipes himself, including this popular corn salsa. If you get lucky at the restaurant, your burrito maker will pile on a little extra. If you don't, you can make this recipe from Food Network Kitchens - and eat as much as you want.

- Preheat a grill to medium high. Brush the poblano with 1 teaspoon olive oil and grill, skin-side down, until charred but still firm, about 5 minutes. Cool slightly; peel and finely chop.
- If using fresh corn, bring a small pot of salted water to a boil. Add the corn and cook until tender, 2 to 3 minutes; drain.
- Mix the corn (if using frozen, add it here), poblano, jalapeno, cilantro and red onion in a bowl. Stir in the remaining 2 teaspoons olive oil, the lime juice, sugar and 1/2 teaspoon salt.
GRILLED CORN SALSA

- Remove husks from corn; brush corn and sweet red pepper with 2 teaspoons oil. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack., Prepare grill for indirect heat using a drip pan. Place corn over drip pan and grill, covered, over indirect medium heat for 20-25 minutes or until tender, turning often. , Grill red pepper over indirect medium heat for 5 minutes on each side or until tender. Cool., Cut corn from cobs and dice the sweet red pepper; transfer to a large bowl. Stir in the onion, jalapenos, lime juice, salt and remaining oil; toss to coat. Serve with tortilla chips.

GRILLED KNOCKWURST
Knockwurst can be boiled or steamed but is at its best when lightly grilled and served with good pretzels, yellow or Dijon mustard, and a pale ale; a "hobo pack" of cremini mushrooms and garlic, also cooked on the grill, makes the meal a feast.

- Preheat a grill to medium (if you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 5 to 6 seconds). BEST EVER CILANTRO CORN SALSA
This is a recipe I have been making for years. It is the number one dish people ask me to bring to parties. It is great with tortilla chips or on top of grilled chicken or steak. It also makes a wonderful filling for vegetarian tacos.

- Add 3-tablespoons fine sea salt to a pot of water and bring to a full boil. Add corn and blanch. Cut kernels from cobs, place into a glass bowl.
- Add roasted peppers, red onion and fresh cilantro to salsa. Season with fine sea salt and fresh ground black pepper.
- In a medium saucepan add bay leaf, vinegar, fine sugar, mustard, minced garlic, bring to a boil and reduce to a simmer for 10-12 minutes. Stir sauce to preventt from burning. .
- Fold sauce into corn, season with salt and pepper to taste. Chill Fresh Corn Salsa for 30-minutes. Bring salsa to room temperature for 30- minutes before service and remove bay leaf.
- Grill Jumbo Hebrew National Kosher Beef Knockwursts.
- Serve Fresh Corn Salsa over grilled knockwursts with a side of Potato Salad.

CORNED BEEF AND KNOCKWURST SANDWICH
This corned beef and knockwurst sandwich recipe is an original from my hometown of Richmond, Virginia. Cooked on the griddle, it was created at Richmond's own NY Deli in the 1940's, and soon became a staple of diners and bars across the city. Crazy that it's still completely unknown anywhere else.

- Slice knockwurst into long slices.
- Melt butter on a large griddle over medium heat. Throw corned beef onto the griddle and get it sizzling. Add knockwurst slices; cook 4 to 5 minutes.
- Add bread, making sure it gets a good coat of butter and grease from the griddle. Cook for 1 minute, then flip. Place Swiss cheese on bread slices. Cover with a lid or pot to steam until cheese melts, about 1 minute.
- Remove everything from the griddle and assemble sandwich. Place one slice of bread on a plate with the melted cheese facing up. Pile on corned beef, knockwurst slices, and mustard. Top with second slice of bread, cheese facing down. Eat hot.

- In a large pot of cold water add 3-tablespoons fine sea salt and bring water to a full boil. Cook corn for 5-7 minutes; do not oover cook the corn.
- Place corn in a ice bath to cool down for 3-4 minutes. Cut kernels from cobs and place in a bowl.
- Roast peppers over an open gas flame for about 5-7 minutes. Place peppers in a brown paper bag and let rest for 5 minutes.
- Peel skin from roasted peppers, cut peppers in half and remove seeds. Add diced peppers, red onion, cilantro and garlic to corn.
- In a medium saucepan add vinegar, sugar, mustard, bay leaf and whisk. Bring vinegar to a slow boil and reduce sauce by half. Stir sauce to prevent from burning. Season with sea salt and white pepper. Remove sauce from heat and fold into corn.
- Stir olive oil into Salsa and cover with plastic. Chill Fresh Corn Salsa for 30-minutes.
- Let Corn Salsa come to room temperature before service. Remove Bay Leaf and season with sea salt and fine black pepper.
- Grill Jumbo Hebrew National Kosher Beef Knockwursts.
- Serve Fresh Corn Salsa over the knockwursts.
