1/3 cup milk
1/3 cup Amaretto
1 (8 ounce) container Cool Whip
1 jello vanilla pudding mix (instant kind - French Vanilla works, also, 4-serving package)
fresh fruit

Steps:

  • In a medium bowl, pour in pudding mix- add milk and stir (just to dissolve the mix).
  • Fold in Cool Whip until blended.
  • Add the Amaretto and stir all together.
  • Keep cool until serving- use any fresh fruit for dipping- Strawberries, grapes, and apples work great!

2 tablespoons of sugar
1 tablespoon cornstarh
1 cup soy milk
1 tablespoon of amaretto liqueur or 1/4 th tsp of almond extract
4 cups of sliced fresh peaches

Steps:

  • 1. Stir together sugar and cornstarch in 1-quart stainless steel or nonstick saucepan (do not use aluminum because the sauce will discolor). With wire whisk, stir in soymilk and amaretto liqueur until well blended.
  • 2. Heat to boiling over medium heat, stirring constantly. Boil 1 minute, stirring constantly. Remove from heat; stir in vanilla. Refrigerate about 1 hour or until cold.
  • 3. Divide peaches among 4 individual dessert dishes. Spoon amaretto sauce over peaches. Serve immediately.

  • 5. 10 minute prep and overall done in 1 hour - 10 minutes.

2 cups fresh strawberries, sliced
1 cup sour cream
1/4-1/2 cup sugar (more or less for your sweet tooth)
1/4-1/2 cup Amaretto

Steps:

  • Slice fresh strawberries into thirds.
  • Mix sour cream, sugar and Amaretto well.
  • The sauce should be thick and not runny.
  • Chill the sauce in the fridge for 2- 3 hours.
  • Pour over fresh strawberries.

1 1/2 cup blueberries
1 1/2 cup strawberries
2 bananas
3 peaches
6 tablespoons Amaretto liqueur
6 tablespoons powdered sugar
SAUCE
8 ounces ricotta cheese, part skim milk
8 ounces cream cheese, softened
1/4 cup sugar
4 egg yolks
2 tablespoons heavy cream
4 tablespoons Amaretto liqueur

Steps:

  • Slice bananas, strawberries and peaches. Add to blueberries then toss with Amaretto and powdered sugar. Gently add raspberries and toss. Refrigerate. Mix together in blender or food processor, the ricotta and cream cheese. Add sugar, egg yolks, cream and Amaretto. Process until smooth. Chill. Spoon sauce over fruit to serve.

1/4 cup honey
3 -4 tablespoons Amaretto
1 tablespoon lemon juice
1 1/2 cups cut-up watermelon, honeydew melon, cantaloupe, pineapple (or combination)
1 1/2 cups peach slices, seedless grapes (or combination)
ice cream
toasted almonds or pecans

Steps:

  • For syrup: in a small saucepan, stir together the sugar, water and honey. Bring the mixture to a boil. Reduce the heat and simmer, uncovered, for 5 minutes. Let cool for 30 minutes.
  • Stir in the amaretto and lemon juice. Place fruit in a large mixing bowl. Pour syrup over fruit. Cover and chill for 1-1/2 to 2 hours.
  • Serve over ice cream; sprinkle with toasted almonds or pecans.

1/4 cup water
1/4 cup honey
3 -4 tablespoons Amaretto
1 tablespoon lemon juice
3 cups mixed fruit, cut-up (watermelon, honeydew, cantaloupe, seedless grapes, pineapple, peaches, etc)

Steps:

  • For syrup: In a small saucepan, stir together the sugar, water and honey. Bring the mixture to a boil. Reduce the heat and simmer, uncovered, for 5 minutes. Set the mixture aside to cool.

10 firm-ripe large apricots
2 tablespoons unsalted butter
3 tablespoons sugar
2/3 cup Disaronno Amaretto liqueur
6 amaretti (Italian almond macaroons; if paper-wrapped, use 3 packets), crumbled (1/3 cup)
1 1/2 tablespoons chopped pine nuts for sprinkling (optional)

Steps:

  • Peel apricots with a vegetable peeler, then halve and pit. Finely chop 2 halves and set aside.
  • Heat butter in a 12-inch heavy nonstick skillet over medium heat until foam subsides, then cook sugar, stirring constantly, until golden brown. Stir in Amaretto (be careful; syrup will spatter) and simmer, stirring, 2 minutes.
  • Working in 2 batches, poach apricot halves in syrup at a low simmer, turning, until almost tender, 5 to 10 minutes per batch. Using a slotted spoon, transfer apricots, hollow sides up, to a platter.
  • Add crumbled amaretti to syrup and cook over low heat, crushing cookies with back of a wooden spoon, until melted into a coarse purée.
  • Stir in reserved chopped apricot and gently simmer, stirring, until syrup is deep brown and slightly thickened. Cool syrup slightly.
  • Spoon syrup over apricots and sprinkle with pine nuts (if using). Serve warm or at room temperature.
