This stuff is so beautiful and delicious, you and your Valentine may not even need the cake. This will absolutely work even if you use frozen raspberries, but nothing compares to the flavor of the sauce if you can somehow find and use fresh raspberries.

1 ½ pounds fresh raspberries
¼ cup white sugar
1 tablespoon water, or as needed
2 teaspoons lemon juice, or more to taste

Steps:

  • Combine raspberries, sugar, water, and lemon juice in a saucepan over medium heat; cook and stir until raspberries break down, sugar dissolves, and sauce is heated through, 3 to 7 minutes. Remove from heat and press sauce through a fine-mesh strainer to remove seeds. Cool to room temperature, cover the bowl with plastic wrap, and refrigerate until chilled, at least 45 minutes.

4 fresh bay leaves
2 cinnamon sticks
1 vanilla pod
4 seeds from half a star anise
½ tsp freshly ground black pepper
zest and juice of 3 oranges
4 tbsp clear honey
3 tbsp light muscovado sugar
6 fresh peaches or nectarines
6 fresh figs
25g unsalted butter
crème fraîche and macaroons or soft amaretti biscuits , to serve

Steps:

  • The day before: tear the bay leaves and break the cinnamon into two or three pieces to release the oils and perfumes. Split the vanilla pod in half and scrape out the seeds with the back of a knife. Mix with the star anise seeds and the pepper, orange zest and juice, honey and sugar to make a sauce. Cover and chill until ready to serve.
  • Half an hour before serving: Preheat the oven to 200C/gas 6/fan 180C. Cut the peaches or nectarines in half and remove the stones. Halve the figs. Put the peaches or nectarines skin-side down in a large baking dish or a roasting tray with sides. Pour the spicy sauce over the fruit and dot with the butter.Roast in the oven for 10 minutes, add the figs and baste the fruits with a large spoon.Roast for 15 minutes more, basting at least three times, until the fruits are tender. Serve with crème fraîche and macaroons or amaretti biscuits to soak up all the lovely juices.

This raspberry dessert sauce topping is fresh, quick, & easy and gives desserts and breakfast dishes that little something extra! You can use fresh or frozen raspberries.

Number Of Ingredients 6

1 Tablespoon water
2 teaspoons cornstarch
3 cups (about 12 ounces/375g) fresh or frozen raspberries
1/4 cup (50g) granulated sugar
1 teaspoon fresh lemon juice (do not leave out)
optional: 1/2 teaspoon vanilla extract

Steps:

  • Whisk the cornstarch and water together until all the cornstarch has dissolved. (I just use a fork to mix-very easy.) Combine cornstarch mixture, raspberries, granulated sugar, and lemon juice in a small saucepan over medium heat. Using a wooden spoon or rubber spatula, stir the mixture, lightly mashing the raspberries as they begin to heat.
  • Bring to a boil and let it boil for 3 full minutes, stirring occasionally. Remove the pan from heat and-if desired for a richer flavor-stir in vanilla extract.
  • Press the warm sauce through a fine mesh strainer to remove the seeds, if desired. I use the back of a spoon to press the liquid through the strainer, held over a bowl. It takes a couple minutes to really squeeze it all out.
  • Feel free to serve warm over warm desserts, but it should be cooled to really thicken up. Cool the sauce completely at room temperature or in the refrigerator. The sauce will thicken slightly as it cools, but the strained version is still liquid and perfect for drizzling.
  • Cover and store for up to 1 week in the refrigerator.

150g punnet raspberries
142ml carton of double cream
50g demerara sugar
cocoa powder for dusting, sieved

Steps:

  • Heat the grill to medium. Place the nectarines cut-side up in 4 individual gratin dishes and pile the raspberries in the centre of each half. Drizzle cream over the fruit, sprinkle with sugar, then grill for 8-10 mins until bubbling and golden. Dust with cocoa and serve.

1/2 cup orange juice
1/3 cup granulated sugar
1 tablespoon cornstarch

2 nectarines, medium size, sweet, juicy and ripe
1/2 cup cream cheese, softened
1 1/2 teaspoons lemon juice
1 cup raspberries, fresh, sweet
1 tablespoon Grand Marnier, liquer (may use more if desired)
icing sugar (to garnish)
2 mint sprigs (to garnish)

Steps:

  • Slice the fruit in half and remove the pit.
  • Form the cream cheese into a ball to fit inside the nectarine, it should be slightly larger than the original pit.
  • Place in one half of the fruit, brush the fruit with the lemon juice to prevent browning if not serving right away.
  • Puree the raspberries, press threw a strainer, stir in the liquer and taste for sweetness, if necessary add some icing sugar and mix well.
  • When ready to serve, spoon the puree onto the plate, place half the fruit with the cream cheese onto the puree. Now place the other half of the nectarine so that it is slightly overlapping on top.
  • Drizzle with a little of the raspberry puree and sprinkle with icing sugar and garnish with the mint.
  • Enjoy.
