HEALTHY MEDITERRANEAN BAKED HADDOCK



Healthy Mediterranean Baked Haddock image

Haddock is a mild-tasting, flaky white fish similar to cod. Here it is baked to perfection atop a sweet cherry tomato sauce spiked with salty capers and olives. Pair it with some crusty bread to soak up the juices.

Number Of Ingredients 12

Two 14-ounce cans cherry tomatoes
1/2 cup dry white wine
1/2 cup pitted Kalamata olives, sliced in half
4 cloves garlic, minced
2 tablespoons capers, drained
1 tablespoon honey
Kosher salt and freshly ground black pepper
Four 6-ounce haddock fillets, skin removed
1/2 teaspoon Italian seasoning
1/2 teaspoon sweet paprika
2 tablespoons olive oil
4 slices crusty bread

Steps:

  • Preheat the oven to 425 degrees F. Combine the cherry tomatoes, white wine, olives, 3 of the garlic cloves, capers, honey, 1/2 teaspoon salt and a few grinds of pepper in a 9-by-13-inch baking dish.
  • Pat the haddock fillets dry with a paper towel and season the flesh side with the Italian seasoning, paprika, 1 teaspoon salt and a few grinds of pepper. Nestle the fillets into the sauce in the baking dish. Bake until the sauce is bubbling around the edges and the fillets are cooked through and easily flaked with a fork, 15 to 20 minutes.
  • Meanwhile, mix the remaining 1 garlic clove with the olive oil, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Brush both sides of each slice of bread with the oil mixture and place onto a baking sheet. Bake until the bread is toasted, 5 to 7 minutes.
  • Serve the fish on plates with the sauce and bread on the side.

Fresh Haddock
1 Tablespoon Olive Oil
2 Cloves of Garlic Minced
1 Can Crushed Organic Tomatoes
1/4 White Wine
Salt and Pepper to Taste
1/2 Can Organic Cannellini Beans
1/4 Organic Cherry Tomatoes Sliced
Crumbled Organic FETA Cheese
Organic Asparagus (or sliced organic Zucchini)
**Possible Add-On Kalamata Olives

Steps:

  • Preheat Oven to 350 Degrees
  • Heat olive oil in Iron Skillet.
  • Mince garlic.
  • Add minced garlic to skillet for 1 minute or until aromatic
  • Remove skillet from heat and add 1/4 cup white wine and crushed tomatoes.
  • Add Salt and pepper to taste
  • Return skillet to heat and simmer on low for 110 minutes.
  • Snap ends off asparagus, rinse and place in the bottom of your baking dish.
  • Meanwhile place haddock in an un-greased baking dish.
  • Remove sauce from heat.
  • Pour cannellini beans over fish.
  • Pour Tomato Sauce over fish.
  • Crumble Feta Cheese on top.
  • Bake Fish in Oven for 10-15 minutes until fish is opaque
  • Serve and enjoy with a nice glass of white wine!

Number Of Ingredients 10

1 ½ lb white fish fillet such as cod or halibut, ((1 to 1 ½ in thickness))
Kosher salt and ground black pepper
Extra virgin olive oil
Juice of ½ lemon (more for later)
8 ounces cherry tomatoes, (halved)
3 ounces pitted olives, (halved (I used a combination of kalamata olives and green olives) )
3 tablespoons minced red onion
4 to 5 garlic cloves, (minced)
1 tablespoon fresh thyme leaves
2 teaspoons dried oregano

Steps:

  • Heat the oven to 425 degrees F.
  • Pat the fish dry and season with salt and pepper on both sides. Brush a 9 ½ x 13-inch baking dish with a little extra virgin olive oil and put the fish in it. Squeeze ½ lemon juice all over the top of the fish.
  • In a medium mixing bowl, combine the tomatoes, olives, onions, garlic and spices. Add a very small pinch of salt and ground pepper. Add a generous drizzle (about 3 tablespoons extra virgin olive oil) toss to combine.
  • Pour the tomato and olive mixture over the fish.
  • Bake in the heated oven for 15 to 20 minutes (this will depend on the thickness of your fish).
  • Remove from the heat and serve.

The fish itself is mild, flavored with a delightful lemon and garlic sauce, and served with artichoke hearts, fresh tomatoes and herbs.

1 teaspoon dried oregano
1 teaspoon Aleppo pepper
1 teaspoon coriander
1/2 teaspoon paprika
4 fillets haddock ((thawed if previously frozen, 6 ounces each))
Black pepper
1/4 cup extra virgin olive oil
1 tablespoon butter
3 cloves garlic ((minced))
1 shallot ((minced))
Kosher salt
1/2 cup white wine
1 lemon ((juice of))
15 ounces artichoke hearts ((rinsed and drained))
1 roma tomato ((chopped))
1/4 cup fresh parsley ((chopped))
1/4 cup fresh dill ((chopped))
1/2 cup green olives ((pitted))

Steps:

  • In a small bowl, combine the oregano, Aleppo pepper, coriander, and paprika. Stir to mix.
  • Pat the fish dry and season with kosher salt and black pepper on both sides, then rub the spice mixture all over the fish. Set aside for now.
  • In a large cast iron skillet, heat the olive oil and butter over medium heat. Add the garlic and shallot and cook for 3 to 5 minutes, stirring occasionally until softened (manage your heat so the garlic does not burn)
  • Add the white wine, lemon juice, and artichoke hearts and cook for another 5 minutes until the liquid is slightly reduced.
  • Add the fish to the skillet and turn the heat down to medium-low. Cover and cook for 4 to 5 minutes, or until the fish is flakey and fully cooked through.
  • When the fish is ready, remove it from the heat and finish with the Roma tomato, fresh herbs, and olives. Serve immediately!

1 tbsp olive oil , plus extra
4 skinless unsmoked or smoked haddock fillets, approx 140g/5oz each
2 handfuls cherry tomatoes
3 tbsp mayonnaise
1 tsp garlic paste or 1 garlic clove, crushed
100g white breadcrumbs
zest and juice 1 lemon
2 handfuls flat-leaf parsley , leaves roughly chopped

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.
  • In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. Top the fish with the breadcrumb mixture. Drizzle olive oil over the fish and tomatoes, and bake for 15 mins or until the fish flakes slightly when pressed and the crust is golden and crunchy.

6 ounces Haddock filets - 4
1/4 cup Chopped roasted tomatoes in oil
1/4 cup Roasted peppers - tri-color julienned
1/4 cup Pitted kalamata olives, sliced
1/8 cup Roasted garlic cloves, chopped
1/4 cup Pepadew peppers
2 tablespoons Basil infused olive oil
3 tablespoons Lemon juice
2 cups Baby spinach
3 teaspoons Salt
2 teaspoons Freshly ground pepper
1/4 cup White wine
1/4 - 1/2 teaspoon Crushed red pepper flakes
1 handful Chopped parsley

Steps:

  • Drizzle olive oil over the bottom of a shallow roasting pan large enough for 4 haddock filets. Pat the filets with a dry paper towel and place in the roasting pan. Sprinkle with salt and pepper.
  • Chop the roasted tomatoes, pepadew peppers and tri-color roasted peppers and spread over the filets equally.
  • Top the filets with the chopped roasted garlic and the sliced kalamata olives.
  • Drizzle with the basil infused olive oil and lemon juice and zest from 1-2 lemons.
  • Pour the white wine into the bottom of the pan and place the pan in the oven preheated to 400 degrees.
  • Bake in the oven 15 minutes. Remove the pan from the oven and place the baby spinach in the pan around the filets. Return the pan to the oven and cook 5-7 minutes until the spinach is just wilted.
  • Remove filets from the oven and top with the crushed red pepper flakes and the chopped parsley.

¼ teaspoon ground dried thyme
4 haddock fillets
¼ cup butter, melted

Steps:

  • Preheat oven to 500 degrees F (260 degrees C).
  • In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.
  • Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.
