FRESH SALMON WITH THAI NOODLE SALAD

Ideal for a quick midweek meal, whip up this nutritious salmon and noodle salad in just 20 minutes. The balance of protein and carbs make it super satisfying

2 skinless salmon fillets
1 large orange , the juice and zest of half, the rest peeled and chopped
125g French beans , trimmed and halved
50g mange tout , shredded
75g frozen peas
75g vermicelli rice noodles
2 tsp red curry paste
1 tsp fish sauce
3 spring onions , finely chopped
half a pack basil or coriander, chopped

Steps:

  • Put a pan of water on to boil. Line a steamer with baking parchment, add the salmon fillets and scatter with a little of the orange zest. When the water is boiling, add the beans to the pan, put the salmon in the steamer on top and cook for 5 mins. Take the salmon off, and if it is cooked, set aside but add the peas and mange tout to the pan and cook for 1 min more, or if not quite cooked leave on top for the extra min. Drain the veg, but return the boiling water to the pan, add the noodles and leave to soak for 5 mins.
  • Put the curry paste and fish sauce in a salad bowl with the orange juice and a little of the remaining zest and the spring onions. Drain the noodles when they are ready and add to the salad bowl, toss well, then add the chopped orange with the basil or coriander and the cooked vegetables. Tip in the juice from the fish, then toss well and serve in bowls with the salmon on top.

1 (12 ounce) package angel hair pasta
3 cups shredded napa cabbage
4 large carrots, shredded
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1 small yellow bell pepper, chopped
1 bunch fresh cilantro, chopped
1 bunch fresh green onions, chopped
½ cup chopped peanuts
2 tablespoons toasted black sesame seeds
8 ounces frozen cooked shrimp, thawed and drained
¼ cup peanut butter
2 tablespoons tahini
¼ cup rice wine vinegar
¼ cup sweet chili sauce
5 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon brown sugar
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Break pasta into small pieces and add to boiling water; cook for 8 to 10 minutes or until al dente; drain. In a large bowl, toss together the pasta, cabbage, carrots, green, red and yellow bell peppers, 1/2 of the cilantro, 1/2 of the onions, and shrimp.
  • In a small bowl, stir together the peanut butter, tahini, rice wine vinegar and sweet chile sauce. Season with soy sauce, sesame oil, brown sugar, garlic powder, salt and pepper. Ten minutes before serving, toss the sauce with the cabbage mixture until evenly coated. Garnish with remaining cilantro, green onions, peanuts and black sesame seeds.

15 ounces dried soba noodles
1 ½ teaspoons dark sesame oil
⅓ cup rice vinegar
⅓ cup soy sauce
1 lime, zested and juiced
2 tablespoons brown sugar
2 cloves garlic, minced
2 teaspoons red pepper flakes, or to taste
1 cup finely grated carrot
½ cup chopped fresh cilantro
¼ cup coarsely chopped salted peanuts

Steps:

  • In a large pot, cook soba noodles according to package directions. Drain, rinse noodles with cold water, and set aside.
  • Pour sesame oil, rice vinegar, soy sauce, and lime juice into a large bowl. Mix in lime zest, brown sugar, garlic, and red pepper flakes; stir until sugar dissolves. Toss in carrots, cilantro, and peanuts.
  • Cut noodles into 3-inch lengths. Stir into dressing mixture. Cover, and refrigerate at least 1 hour.
  • Toss salad again before serving. If dry, splash with soy sauce and vinegar. Serve cold.

4 tablespoons fish sauce
4 tablespoons lime juice
2 teaspoons brown sugar
4 Thai chiles, chopped
1 1/2 lbs salmon fillets
1 teaspoon olive oil
1 onion, thinly sliced
1 large tomatoes, chopped
1 cup chopped fresh basil
mixed greens

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Prepare the dressing by combining the fish sauce, lime juice, brown sugar and chopped chiles in a small bowl; set aside.
  • Place the salmon filet on a baking tray, and rub olive oil over.
  • Bake for 20 minutes in the preheated oven, or until easily flaked.
  • Let cool for at least 15 minutes.
  • Place salmon filet into a big bowl; use fork to break salmon meat into big chunks.
  • Add onion, tomato and basil; pour dressing over, and toss lightly until well mixed.
  • Place mixture on lettuce leaves, and serve immediately.

1 tablespoon grated gingerroot
4 teaspoons sesame oil
3 tablespoons reduced sodium soy sauce
1/4 cup seasoned rice wine vinegar
2 teaspoons sugar
1/4 teaspoon cayenne pepper (or to taste)
1 cup shredded carrot
1 cup cucumber, cut into long matchsticks
10 ounces grilled salmon, cut into small chunks
2 tablespoons chopped fresh coriander (optional)
1 tablespoon toasted sesame seeds

Steps:

  • Cook spaghetti in boiling water until cooked al dente. Drain.
  • In a small bowl, mix together ginger, sesame oil, soy sauce, vinegar, sugar and cayenne pepper.
  • In a large bowl, toss together spaghetti, carrots, cucumber, salmon and coriander.
  • Pour in dressing and toss to coat salad.
  • Garnish with sesame seeds.

  • Prepare the noodles: Bring a large pot of water to a boil. Add the noodles, stir, and cook until just ‘al dente’. Drain well , rinse under cold water until cool, and set aside.
  • In a small bowl, whisk together the chili paste, fish sauce, sugar, and two tablespoons cold water. In a large non-stick skillet or wok, heat the oil over medium-high heat. Sauté the shallots for 1 to 2 minutes, stirring frequently. Add the garlic and sauté for another 30 seconds or so, or until fragrant. Add the bok choy leaves to the pan, and stir until just beginning to wilt. Add the cooled noodles, and the chili paste mixture. Don’t stir and allow the noodles to caramelize slightly the pan before stirring gently. Add one tablespoon of lime juice. Transfer the noodles to a large serving platter or bowl, gently stir in the remaining lime juice, scallions, cilantro leaves, basil, mint, and peanuts. Season to taste, adding more fish sauce and lime juice as desired. Set aside to cool slightly while you prepare the salmon.
  • Prepare the salmon: In a small bowl, whisk together the red chili paste, oil, and 1 teaspoon cold water until mostly smooth. Brush the tops of the salmon fillets liberally with the chili paste mixture. Season very lightly with salt and pepper.
  • Heat roughly one tablespoon neutral cooking oil over medium-high heat in a large 12-inch non-stick skillet. Add the salmon fillets, skin-side down, and cook for 3 to 4 minutes (time will vary depending on the thickness of your salmon fillets – my filets were about 1-inch thick). Flip the fillets and continue cooking until the flesh is slightly opaque in the center and the the salmon is caramelized, about 1 to 2 minutes. Distribute the Thai noodle salad, top with a piece of glazed salmon, and serve. Garnish with lime wedges for squeezing.
