FRESH TUNA IN COCONUT CURRY SAUCE
Warm, spicy, creamy and delicious! Serve this tuna dish over jasmine or basmati rice. If your'e in a mood for noodles you can serve it with small egg noodles too. Either way you are in for a tasty treat.

Steps:
- In a small saucepan place 2 cups of water and bring to a boil, lower heat to simmer and place tuna steaks into the water for about 8-10 minutes, covered on low heat.
- Remove from heat once steaks are opaque and drain water from them and let them cool a bit.
- Heat oil in frying pan and place diced onion in pan and saute until opaque.
- Open your coconut milk and place in a med saucepan or deep fry-pan.
- Add curry powder and stir it in well ( you can adjust curry powder to taste).
- Cut up tuna steaks into 1" cubes and add to the sauce keeping on a low flame.
- Add onion and peas to mixture and simmer for about 5 minutes.
- Serve over a bed of rice or noodles.

SEARED TUNA WITH COCONUT SAUCE

- Combine all sauce ingredients in a medium-size saucepan and bring to a boil over medium heat. Reduce the heat and simmer for 15 minutes, stirring occasionally. Remove the pan from the heat and strain the sauce through a sieve, pressing as much of the sauce through as possible. Return the sauce to a clean saucepan and keep it warm. Rinse the tuna steaks and pat them dry with paper towels. Rub them with the salt and coarse pepper. Heat the oil in a large skillet over medium-high heat, and sear the steaks for 3 to 4 minutes on each side (or to taste). Spoon a pool of Coconut Curry Sauce onto each plate, and set the tuna on top of the sauce. Serve immediately.;
TUNA CURRY IN A HURRY
Steps:
- Over medium-low heat melt butter in a large saucepan. Add garlic, onions and green pepper. Cook slowly, stirring occasionally, until onions are soft.
- Stir in tuna, sour cream, curry powder, salt and pepper. Heat until warm and serve.

- Pour sauce into a 1- to 1 1/2-quart pan; bring to a boil over high heat, stirring. Or bring to a boil in a microwave-safe container in a microwave oven at full power (100%). Keep warm.
- Lay tuna on a lightly oiled barbecue grill over a solid bed of very hot coals or high heat on a gas grill (you can hold your hand at grill level only 1 to 2 seconds), close lid on gas grill. Cook tuna until bottom is pale color about 1/4 inch into fish (cut to test; center is red), about 2 minutes. Turn tuna with a wide spatula and cook until side on grill is the same color as it is on the top, and center is still pink to red, about 1 minute longer.
