OLD FASHIONED PEACH COBBLER
This classic old fashioned peach cobbler is the perfect summer time dessert!

Steps:
- (Skip this step if using canned peaches). In a small saucepan add the sliced peaches lemon juice, and ¾ cups of sugar. Place over medium heat for a few minutes, stirring occasionally, just until the sugar has dissolved (we want to bring out the juices of the peaches). Remove from heat and set aside.
- Preheat oven to 350°F. Place the butter in a 13x9 inch pan and place pan in the preheated oven. Once the butter has melted, remove the pan from the oven.
- In a medium sized bowl whisk the flour, 1 cup of granulated sugar, baking powder, and salt. Stir in the milk. Stir until just combined, don't overmix. Pour this mixture into the 13x9 inch pan, overtop of the butter. Gently smooth into an even layer.
- Spoon the peaches mixture over the batter. (Or if using canned peaches**, spoon that over the batter). Sprinkle the top with ground cinnamon, use as much or as little as you'd like. I used about 1/2 to 1 teaspoons worth.
- Bake at 350°F for 38-44 minutes or until the top is golden brown and baked through.
- Serve warm with a scoop of vanilla ice cream*, if desired.

- Preheat oven to 375 degrees F.
- In a mixing bowl, combine tapioca, peaches, sugar (if used), cinnamon and nutmeg.
- Mix thoroughly.
- Pour the fruit mixture into a buttered 9" X 13" baking dish.
- In a bowl mix thoroughly the ingredients for the Cobbler Dough.
- Spread over the fruit mixture.
- In a medium mixing bowl, stir together DRY cobbler topping ingredients.
- Sprinkle evenly over the cobbler dough layer.
- Then pour the boiling water evenly over the cobbler.
- (Do Not Stir.) Bake for 1 hour and 20 minutes or until knife inserted comes out clean and top has a golden crust.

- Preheat oven to 400 degrees F (200 degrees C).
- Combine 1/2 cup sugar, cornstarch, and cinnamon in a saucepan and whisk to mix. Stir in sliced peaches (see Editor's Note) and lemon juice, tossing until peaches are evenly coated.
- Cook filling over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Pour mixture into an ungreased 2-quart casserole dish. Keep mixture hot in oven while you make the topping.
- In a medium bowl combine flour, 1 tablespoon sugar, baking powder, and salt. Mix thoroughly, then cut in shortening until mixture looks like fine crumbs. Add milk and stir until mixture is evenly moistened.
- Remove peach filling from oven and drop dough onto peaches in 6 equal-size spoonfuls.
- Return cobbler to oven and bake until topping is golden brown, 25 to 30 minutes.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. - For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
