NANA'S EASY MEATLOAF RECIPE

Nana's Easy Meatloaf Recipe image

The classic meatloaf recipe with a twist - oatmeal and olives.

Provided by Lise Sullivan Ode

Categories     Main Course

Time 1h15m

Number Of Ingredients 12

1.33 pounds organic ground beef
1/2 teaspoon salt
1/2 teaspoon lemon pepper
3/4 teaspoon garlic powder
1/2-3/4 teaspoon poultry seasoning (may substitute sage)
1-2 tablespoons worcestershire sauce
10-12 green olives, chopped
1/2 cup chopped onion, celery, & green peppers (1/2 cup total of the 3 veggies)
1 large egg, beaten
1/4 cup gluten free oatmeal
1/4 cup ketchup (for topping) (or more if you wish)
8 green olives, sliced (slice each olive into 3 sections for top of meatloaf)

Steps:

  • I start with a big bowl and spread out the ground beef around the bottom and sides of the bowl. Then I add the dry seasonings and the worcestershire and mix by hand literally getting my hands on the meat. Next I add the chopped vegetables and olives mixing that by hand as well. I beat the egg and add that in; then add the oatmeal. I mix by hand 'til all the ingredients are blended.
  • I add the mixed meat, seasonings, and vegetables to a greased glass loaf pan shaping it in on sides. Last I add enough ketchup to cover the top surface of the meatloaf spreading it over the top with my fingers. Then I arrange the sliced olives on the top of the ketchup for a decorative topping. Bake for an hour at 350 degrees. Cool, pour off excess fat and you're ready to serve your meat before it has time to loaf.

NANA'S MEATLOAF WITH TOMATO GRAVY

Nana's Meatloaf with Tomato Gravy image

Provided by Food Network

Categories     main-dish

Time 2h25m

Yield 6 to 8 servings

Number Of Ingredients 20

2 pounds 80/20 ground beef
1 pound pork sausage, meat removed from casings
2 eggs
1 cup panko breadcrumbs
One 32-ounce can whole peeled tomatoes
1/2 cup red wine vinegar
1/2 cup Worcestershire sauce
2 teaspoons dried oregano leaves
2 teaspoons ground black pepper
2 teaspoons dried thyme leaves
1 teaspoon kosher salt
1 teaspoon seasoning salt
5 cloves garlic
1 yellow onion
1 Anaheim chile
1/2 red onion
1/2 cup ketchup
1/2 cup tomato paste
1/4 cup yellow mustard
Kosher salt and ground black pepper

Steps:

  • For the meatloaf: Preheat oven to 350 degrees F. Place beef, sausage, eggs and panko in a large bowl. Set aside.
  • Place tomatoes, vinegar, Worcestershire, oregano, pepper, thyme, kosher salt, seasoning salt, garlic, yellow onion, chile and red onion in a high-powered blender and puree. Reserve half of this mixture for the tomato gravy. Pour the remaining half into the mixing bowl with the meat. Mix the meat really well with your hands until the meatloaf mixture is all the same color.
  • Pack the meatloaf mixture into a 6-by-11-inch pan (or something similar). Place pan on a baking sheet to catch any fat that spills out during cooking. Bake the meatloaf until an instant-read thermometer inserted in the center registers 155 degrees F, 1 hour 30 minutes. Let meatloaf rest for 10 minutes, then pour the fat out of the pan.
  • For the tomato gravy: Meanwhile, whisk together ketchup, tomato paste, mustard and reserved vegetable mix in a saucepan. Place over medium heat and bring up to a simmer. Reduce heat to low, then simmer, stirring every couple of minutes, for 30 minutes. Adjust the seasoning with salt and pepper. Serve the tomato gravy with your finished meatloaf! Most importantly, enjoy with friends and family!

NANA'S MEATLOAF

Nana's Meatloaf image

I remember when i first made meatloaf for my husband philip. his first words were ugh i hate meatloaf. (not an insult, we were so close that little truths like this didnt bother us) I talked him into trying at least a bite and he was hooked. Meatloaf isnt suppose to be ground meat formed in a pan. Nanas meatloaf had bell peppers and onions and lots of seasonings. It was so delicious. After that first time, Philip would actually request this. He loved it made with my garlic mashed potatoes and my nana's cucumber salad!

Provided by Deneece Gursky @Smokeygirlxo

Categories     Beef

Number Of Ingredients 17

- 1 1/2 lbs lean ground beef
- 1/2 lb ground pork
- 1/2 c parmesan cheese
- 3/4 c italian bread crumbs
- 2 eggs
- 1 t ketchup
- 1 green bell pepper chopped fine
- 1 onion chopped fine
- 1 1/4 t salt
- 1 1/4 t pepper
- garlic powder (i use alot)
- 1 clove garlic, crushed
- 1 t italian seasoning
DO NOT COMBINE THESE IN TO MEATLOAF
- 2 slices of bread (i use the heels since noone in my house likes them)
- ketchup to spread on top
- additional parmesan for on top

Steps:

  • Combine all meatloaf ingredients in a large bowl and with clean hands mix all together until completely mixed.
  • In a loaf pan put your two slices of bread (the heels work best) in the bottom. (this soaks up the grease and ensures meatloaf doesnt burn on bottom)
  • Form meat mixture into a loaf and place in pan. I then push mine in so that it takes up the whole pan.
  • Bake in 350 degree preheated oven for an hour and 10 to 15 minutes. Remove from oven and drain off any grease there might be. Now cover top of meatloaf with ketchup (you can also use tomato soup, i usually do) and sprinkle with parmesan.
  • Return to oven and continue baking until meatloaf is completely done. Another 10 to 15 minutes usually depending on oven.
  • Remove from oven and allow to cool a bit so meatloaf does not fall apart when cutting. You can cut it right in the pan (just remember the bread is on the bottom) or invert it onto a serving plate, remove bread and cut and serve.
