4 thick-skinned mildly sweet apples, such as 'Rome Beauty'
3 tablespoons packed dark-brown sugar
2 tablespoons unsalted butter, softened
2 tablespoons finely chopped toasted pecans, plus more for sprinkling
1/2 large vanilla bean, halved lengthwise, seeds scraped and reserved
1/8 teaspoon salt

Steps:

  • Preheat oven to 375 degrees. Using a cylindrical apple corer, core apples three-quarters of the way down. Fit snugly in an ovenproof skillet or a loaf pan.
  • Stir together sugar, butter, nuts, vanilla seeds, and salt in a small bowl. Divide sugar mixture among apples (about 2 teaspoons each). Sprinkle with nuts. Bake until apples are soft, about 1 hour. Serve warm with pan syrup spooned on top.

  • Stir pork and beans, bacon, apples, barbeque sauce, brown sugar, and raisins together in a 9x13-inch baking dish.

2 tablespoons brown sugar
1 tablespoon butter, softened
1 tablespoon finely shredded coconut
1 teaspoon ground cinnamon
1 pinch brown sugar, or to taste
1 pinch ground cinnamon, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the core and seeds out of apple, leaving about a 1/2 in the bottom, creating a well-like hole. Mix 2 tablespoons brown sugar, butter, coconut, and 1 teaspoon cinnamon together in a bowl; fill well in the apple with brown sugar mixture. Place stuffed apple in a baking dish.
  • Bake in the preheated oven until apple is tender, about 30 minutes. Transfer baked apple to a serving bowl and drizzle any remaining juices from baking dish over apple; sprinkle with 1 pinch brown sugar and cinnamon.

3 tablespoons packed dark brown sugar
2 tablespoons unsalted butter, softened
1/2 large vanilla bean, halved lengthwise, seeds scraped and reserved
1/8 teaspoon salt

Steps:

  • Preheat oven to 375°F. Using a cylindrical apple corer, core apples three-quarters of the way down. Arrange apples snugly in an ovenproof skillet or a loaf pan.

1/2 vanilla bean, split lengthwise
2 1/4 pounds Granny Smith apples, peeled, cored, sliced 1/2-inch thick
1 1/2 tablespoons all purpose flour
1 tablespoon fresh lemon juice
Pinch of ground nutmeg
1 cup all purpose flour
2/3 cup sugar
1/8 teaspoon ground cinnamon
Pinch of salt
1/2 cup (1 stick) chilled butter, cut into 1/2-inch pieces

Steps:

  • Preheat oven to 400°F. Line rimmed baking sheet with foil. Place sugar in large bowl. Using small sharp knife, scrape seeds from vanilla bean into sugar. Rub mixture with fingertips to distribute seeds. Add next 4 ingredients; toss well. Transfer to 8-inch square glass baking dish. Place dish on prepared baking sheet. Bake until apples are tender and beginning to turn golden brown, about 25 minutes. Remove from oven; stir apples.
  • Blend flour, sugar, cinnamon and salt in processor. Add butter and cut in, using on/off turns, until mixture resembles coarse crumbs. Sprinkle crumbs over apples, spreading evenly. Bake crisp until topping is golden brown, about 25 minutes. Cool crisp 10 minutes.

6 cooking apples (Jonathan, Rome, Granny Smith)
1/4 cup sugar
2 tablespoons cornstarch
1 dash salt
1 1/2 cups nonfat milk
1 teaspoon vanilla

Steps:

  • Core apples, but do not peel.
  • Cut apples in half, width-wise.
  • Place in a microwave-safe container with a lid.
  • Add about 1/2 C water.
  • Cover and microwave on high power until done (about 6 minutes depending upon the size of the apples).
  • While apples are cooking, make sauce.
  • Place sugar, cornstarch and salt in the bottom of a heavy-bottomed saucepan.
  • Mix well.
  • Add milk and bring to a boil over medium heat, stirring with a wire whisk the entire time.
  • Remove from heat.
  • Stir in vanilla.
  • To serve, place 2 apple halves in a dessert dish and cover with 1/4 cup of sauce.
