Steps:
- Place first five ingredients in a food processor; pulse until peaches are coarsely chopped. Add chilies, vinegar, lime juice and pepper; pulse just until blended., Remove to a bowl; refrigerate, covered, until serving. Serve with chips.

EASY PEACH SALSA RECIPE

- Peel and dice the peaches. Prepare all other ingredients. Toss to combine, making sure lime juice is distributed evenly. If your peaches are particularly juicy, you can toss them with one tablespoon sugar and the lime juice and let them sit while preparing the rest of the ingredients. The sugar helps release the juice, and the lime prevents untimely browning of the fruit. Before you toss them in with everything else, just strain the liquid. Serve immediately with chips, or however, you plan to enjoy it. Leftovers can be stored covered in the fridge for two days, or until the peaches turn brown and soft.

FRESH AND EASY PEACH SALSA
This Fresh and Easy Peach Salsa is the perfect summer recipe. It's both sweet and savoury, is delicious with tortilla chips, tacos or grilled fish, chicken or pork, and makes the best use of those last few peaches you have kicking around your fridge.

Steps:
- Wash two peaches and chop them into bite-sized pieces.
- Wash and seed a red pepper and dice into small pieces.
- Mince about 1/4 of a red onion. You might use a little more or less depending on the size of your onion and how much you like onion. Start with a little less - you can always add more.
- Wash and chop a small handful of cilantro.
- Combine all the ingredients in a bowl. Add juice of 1/2 a lime*. Stir it together and give it a taste. Limes can vary dramatically in how juicy they are. If it needs a little more zesty kick, add juice from the other half of the lime.
- Stir together and enjoy! :)

FRESH PEACH SALSA
This salsa has peaches, lime juice, sweet onion, and jalapeno peppers. Its sweet and spicy salsa and goes great with chips or grilled chicken or fish.

- In a medium mixing bowl stir together peaches, onion, lime juice, peppers, garlic, and cilantro. Cover and chill for 1 to 2 hours. Makes 2 cups. Serves about 8. Serve with corn chips (blue corn chips are pretty with this). Salsa is also very good when used as a condiment over grilled chicken or fish.
- NOTE: Can be made with frozen peaches but its better with fresh.

- Finely chop seeded bell pepper and jalapeños. Finely chop onion and transfer all your veggies to the bowl.
- Dice the peaches. I liked the slightly larger dice for peaches to give them more of the center stage in this salsa. No need to peel them. You won't notice the peels and the color is prettier with the peel on. Transfer peaches to your bowl.
- Add 1/2 bunch chopped cilantro, 2 Tbsp lime juice, 1 1/2 tsp salt and 1/4 tsp pepper. Add more salt and pepper to taste if desired. Fold everything together until well mixed and enjoy!
