Warm melted brie oozes out of a crispy breadcrumb coating when you bite into these pieces of heaven. Serve with cranberry sauce and a small side salad and you have the perfect dinner appetizer or snack.

- In a small bowl, whisk the egg with some salt and pepper using a fork. Place the bread crumbs in a separate bowl. Dip the cubes of Brie into the egg, then roll in breadcrumbs until evenly coated and well covered. Place the cheese cubes on a tray, and refrigerate for about 20 minutes, to firm up.
- Heat oil in deep-fryer or heavy saucepan to 375 degrees F (190 degrees C). Fry the cheese cubes for 3 to 5 minutes, until deep golden brown. Remove with a slotted spoon, and drain on paper towels. Serve warm with cranberry sauce for dipping. You can also make these before your guests arrive, and keep them in a warm oven.

FRIED BRIE BITES
Better than fried Mozzarella, these fried brie bites are smooth, buttery, and impossible to eat just one! Serve with a raspberry dipping sauce for the perfect combination of savory and sweet.

- Place the wheel of brie in the freezer for 20 minutes. While the cheese is freezing, get your bowls ready for the dredging. Add the flour to a bowl and add 1 teaspoon of the garlic powder and mix. In another bowl, whisk the egg with the tablespoon of water. And in the last bowl combine the Panko with the remaining 1 teaspoon of garlic powder.
- After the 20 minutes, remove the Brie from the freezer and remove the rind (you can leave on if you like it. I don't like texture of the rind so I cut it off). Dice the cheese into pieces, I made 28 bites. Coat each piece in the flour, then the egg, and lastly the Panko. Make sure to press the Panko into the bite so it sticks and there's a nice even coat all the way around. Place on a plate lined with parchment paper, place back in the freezer for 20 minutes.
- While the cheese is re-freezing, make the raspberry sauce. Place the 1 cup of raspberries into a small pot over medium-low heat and mash with a fork. Add the white sugar and brown sugars and continue to mash until the raspberries have broken down completely. Mix the water with the cornstarch to make a slurry, pour into the pot along with the vinegar and cook for about 2-3 minutes, then pour into a bowl to let cool. If too thick, add a little more water to get the consistency you want.
- To begin frying, heat the oil in a large pan over medium high heat. See post for detailed description of how to know when the oil is ready for frying! To fry, add about 6-7 brie bites into the oil at a time, cook 20 seconds, flip each bite, then cook another 20-30 seconds. The total frying time should not exceed 1 minute. Repeat until all brie has been fried, sprinkle all the brie bites with salt. Serve with the raspberry dipping sauce and enjoy!
BAKED BRIE BITES
Flaky puff pastry meets creamy brie in these warm oozy throwback apps. An ice cube tray is the secret to stuffing them full of goodies like candied pecans and grapes.

- Lightly flour a work surface and roll out both puff pastry sheets into 12-inch squares. Lay half of 1 sheet over a 12-compartment ice cube tray (the other half of the sheet will hang off the tray) and gently use the back of your fingers (or the handle of a wooden spoon) to press the pastry down into each compartment of the tray. Repeat with the remaining pastry sheet and a second ice cube tray.
- Fill each ice cube compartment with 1 piece of brie, 1 teaspoon pecans, 1 red grape half and a pinch of black pepper.
- Brush the top of the pastry that is hanging off the ice cube tray with egg and fold it over the compartments to cover the fillings. Trim the excess pastry around the edges of the tray, then press the dough together with your fingers to seal. Freeze the ice cube trays for 15 minutes.
- Position a rack in the center of the oven and preheat to 400 degrees F.
- Use your fingers to gently loosen the puff pastry from the ice cube trays then flip out onto a cutting board. Cut in between each brie bite to separate. Use a fork to crimp the edges of each bite.
- Line a large baking sheet with parchment. Put the bites on the baking sheet, brush the egg on the tops and sprinkle with pepper.
- Bake, rotating the baking sheet about halfway through, until the brie bites are puffed and golden brown, about 25 minutes. Let cool for 5 minutes on the baking sheet before serving.
FESTIVE BAKED BRIE BITES

- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Cube each wheel of Brie into 12 pieces. They do not need to be perfect cubes. Set aside.
- Mix the cranberries and pistachios together in a small bowl. Set aside.
- Lightly dust a cutting board with flour. Unroll the crescent dough (it should be an 8-by-12-inch sheet) onto the dusted surface. Using a knife, cut 4 lines down the 8-inch side and 6 across on the 12-inch side to get 24 squares.
- Place a cube of Brie in the center of each dough square. Sprinkle about 1/2 teaspoon of the pistachio and cranberry mixture over the top of each cube of Brie. Fold the corners of each square together, lightly pinching to seal everything in. Transfer the bites to the prepared baking sheet.
- Whisk together the egg and 1 tablespoon water in a small bowl and brush the top of each bite with the egg wash. Sprinkle each with a little rosemary and a bit of sea salt. Bake until golden brown, 12 to 14 minutes. Let cool for 2 to 3 minutes.
- Carefully transfer the bites to a serving platter. Scatter the pomegranate seeds around the bites, drizzle with honey and frame the platter with rosemary sprigs for color and festive fun. Enjoy!

- Put the breadcrumbs in a plate or a bowl.
- Mix flour, parmesan, parsley, your favorites spices, and salt and pepper in another bowl or plate.
- Heat the oil in a skillet at medium-high heat.
- Dip each piece of cheese, one by one, in the egg mixture, then in roll into the breadcrumbs and in the flour. Repeat a second time.
- Shake the excess of flour and cook in the oil, 1 minute each side. Be careful that the cheese doesn't melt in the skillet. Serve.

- Stir apples, Brie cheese, 20 crushed vanilla wafers, honey, and vanilla extract together in a bowl. Cover the bowl with plastic wrap and refrigerate until cold, at least 15 minutes.

- Make the blueberry maple bourbon sauce: In a small saucepan, stir together the blueberry jam, maple syrup, and water. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes. Add the bourbon and continue simmering for 1-2 minutes, until the alcohol cooks off. Remove the pot from heat and stir in the vanilla, salt, and pepper. Set aside until ready to serve. If making ahead of time, cover and refrigerate for up to 1 month. Re-warm before serving.

- Serve the Brie sticks hot with the warm blueberry maple bourbon sauce and bacon jam alongside for dipping.
