2 quarts peanut oil
1 pound mozzarella
1/4 pound thinly sliced prosciutto
1 cup all-purpose flour
1/2 tablespoon garlic powder
1/4 tablespoon onion powder
1/4 tablespoon paprika
3/4 cup buttermilk
1 egg
1/4 cup panko bread crumbs
1/4 pound Parmesan, finely shredded
1 cup sour cream
1 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon paprika
1 tablespoon celery salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon salt
1 tablespoon freshly ground black pepper
1/2 pound blackberries

Steps:

  • Heat the peanut oil in a deep-fryer or heavy-bottomed pot to 375 degrees F.
  • Cut the mozzarella into 1/2 by 1/2 by 2-inch strips and wrap them with prosciutto. Mix the flour, garlic powder, onion powder and paprika together in a bowl. Add the buttermilk and egg and whisk until combined. In a shallow bowl, combine the panko and finely shredded Parmesan.
  • Insert skewers into the mozzarella, dip them into the batter, then coat them with the panko mixture.
  • Deep-fry, in batches if necessary, until golden brown, approximately 2 minutes. Transfer the mozzarella to a serving platter.
  • Combine all of the dipping sauce ingredients, except the blackberries, in a medium bowl. Mash the blackberries through a metal strainer to remove the seeds.
  • Mix the blackberry juice into the dipping sauce and serve with the cheese sticks.

1 1/2 cups all-purpose flour
3/4 cup cornstarch
4 1/2 teaspoons baking powder
12 ounces cold seltzer
Salt and pepper
1 quart canola oil (approximately, as needed for deep frying)
1 cup shredded coconut
1 pound "half-moon" Colby cheese cut into approximately 28 mini wedges

Steps:

  • To make tempura batter, mix the flour, cornstarch, and baking powder in a large bowl and add seltzer in a stream while whisking constantly. Season with salt and pepper.
  • Heat canola oil to 375 degrees F in a deep fryer. Spread coconut on a utility platter. Place slices of cheese on a slotted spoon and ladle tempura batter over. Deep-fry in the basket of a deep-fryer until golden brown, briefly drain then transfer to the plate of coconut so that the coconut will stick to the surface while the batter is freshly fried and still hot.
  • Serve with small skewers or cocktail toothpicks.

DEEP-FRIED CAMEMBERT

2 (4-ounce) Camembert pieces
1 (1 1/2-ounce) truffle, optional, thinly sliced
2 cups flour
4 eggs
2 cups bread crumbs
1 cup finely chopped ground walnuts
3 quarts vegetable oil

Steps:

  • Wrap the Camembert in plastic wrap and place in the freezer for 1 hour.
  • Remove the plastic wrap and, using a knife, slice the cheese in half horizontally so you have 2 round layers as you would a cake for layers.
  • If using the truffles, place the truffle slices on 1 half, slightly overlapping the pieces, until it is covered. Cover with the other half of the Camembert and firmly press together. Repeat with the second Camembert. If you are not using truffles, you may replace them with mixed berries or other mushrooms.
  • Bread the cheese first dipping it in flour, egg, and bread crumbs mixed with the ground walnuts. Repeat this process twice to ensure the cheese is covered and it won't seep out the sides.
  • In a fryer or large pot, heat the oil to 375 degrees F and fry the cheese until golden brown.
  • To serve, slice the cheese and serve on a platter with fruits.

1 pinch cayenne pepper
2 eggs, beaten
2 ounces fresh white breadcrumbs

4 sweet apples, cored and quartered

Steps:

  • Mix the cayenne pepper and the flour, then roll each Camembert portion in flour, then in egg and then in breadcrumbs.
  • Heat the oil in a deep fryer to 350 degrees Fahrenheit or until a bread cube browns in 60 seconds.
  • Fry the portions of Camembert for 30 seconds or until golden brown.
  • Drain on kitchen paper.
  • Garnish with apple wedges and serve immediately.

Steps:

Steps:

  • Butter the bread. Put a wedge of camembert or brie on the unbuttered side of one slice of bread. Top with a spoonful of cranberry sauce. Drizzle with a few drops of balsamic vinegar, if you have some.

Steps:

  • Freeze Camembert cheese for 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
