5 cups frozen tater tots
1/4 cup olive oil
Salt and freshly ground black pepper
1 1/2 tablespoons crushed garlic
3 tablespoons chopped flat-leaf parsley
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the tater tots and the olive oil in a bowl. Toss to coat, spread on a baking sheet and bake until golden brown and crisp, about 30 minutes.
  • Remove the tater tots from the oven, season with salt and pepper and transfer to a mixing bowl. To the taters, add the garlic, parsley and cheese. Toss to combine and serve immediately.

Steps:

  • Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain, and transfer to a large bowl.
  • Fold in the cream cheese and mash with a potato masher or beat with an electric mixer until smooth.
  • Add the butter and cover with potatoes; once softened, stir to mix.

2 pounds tater tots, thawed
1 (10.5 ounce) can condensed cream of chicken soup
1 cup finely chopped onion
1 (16 ounce) container sour cream
1 (8 ounce) package sharp Cheddar cheese, shredded
1 dash garlic powder
½ teaspoon seasoning salt
½ cup butter, softened
3 cups cornflakes cereal
½ cup butter, melted
2 tablespoons grated Parmesan cheese
paprika to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch casserole dish.
  • In a large mixing bowl combine tater tots, soup, onion, sour cream, cheese, garlic powder, seasoning salt and softened butter; mix well. Transfer to casserole dish. In a medium bowl combine cereal and melted butter; spread over casserole. Sprinkle the top with parmesan cheese (use more or less according to your taste) and paprika.
  • Bake in preheated oven for 45 minutes to 1 hour, or until browned. (Note: It's a good idea to put a cookie sheet under the casserole dish, in case it bubbles over while cooking.)

1/8 teaspoon pepper
1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1/3 cup 2% milk
1 package (16 ounces) frozen chopped broccoli, thawed
1 can (2.8 ounces) french-fried onions, divided
1 cup shredded Colby-Monterey Jack cheese, divided
1 medium tomato, chopped

Steps:

  • Preheat oven to 400°. Spread Tater Tots evenly in an ungreased 13x9-in. baking dish. Bake, uncovered, 10 minutes., Meanwhile, in a large skillet, cook and crumble beef over medium heat until no longer pink, 5-7 minutes; drain. Stir in seasonings, soup, milk, broccoli, 3/4 cup onions, 1/2 cup cheese and tomato; heat through. Pour over potatoes. , Bake, covered, 20 minutes. Sprinkle with the remaining onions and cheese. Bake, uncovered, until cheese is melted, 5-10 minutes.

My husband loves my fried taters. It's just something I've whipped up and the spices are more to the person's taste than anything. They can be a bit spicy so you can hold back on the salt. Let me know what you think.

4 -5 medium potatoes
3 -4 tablespoons lemon pepper seasoning
2 -3 tablespoons garlic salt
2 -3 tablespoons garlic powder
1/8 cup olive oil
1 tablespoon Emeril's Original Essence

Steps:

  • In a large skillet, pour the olive oil and heat on med-high heat.
  • Wash potatoes well and cut with skin on into thin cubes or triangles.
  • Add potatoes to skillet.
  • Next sprinkle the lemon& pepper, garlic salt, garlic powder and essence over the potatoes as you turn them to make sure you get all of the potatoes.
  • Lower your heat to medium and turn potatoes until browned on each side.
  • Takes about 10-15 minutes.

Every time he goes to Granny's house, she has to make this for him. *If you can make the sour cream mix a day ahead, and refrigerate it, it's even better! **Use the Hidden Valley Ranch ORIGINAL BUTTERMILK Ranch Dressing mix. It makes a difference!

3 lbs new potatoes
1 bunch green onion (one whole "bunch", chopped)
1 (16 ounce) carton sour cream
1 ounce hidden valley ranch dressing mix (*needs to be the Original buttermilk flavor)
1/4 cup butter
2 (5 ounce) cans evaporated milk

Steps:

  • Mix the package of Original Ranch mix into the sour cream. (If this is made a day ahead, it gets even better!).
  • Wash the potatoes, and cut them into halves if they are very large new potatoes.
  • Boil the potatoes in salted water, until soft (about 10-15 minutes).
  • When potatoes are soft, drain them in a colander.
  • Put the potatoes back in the pot after draining, add the butter, the evaporated milk, salt and pepper to your taste, and stir together.
  • Add in the sour cream mixture, and the chopped green onions.
  • Cover and let sit for 10-15 minutes.
  • Heat over a medium-low heat for about 3 minutes, stirring often, until all is hot again.
  • Serve.
