PUERTO RICAN FRIED PORK CHOPS (CHULETAS FRITAS)
These authentic Puerto Rican Fried Pork Chops otherwise known as "Chuletas Fritas," are juicy, tender and hyper flavorful. Pair them up with rice, pasta, potatoes, veggies or salad for a full meal. Bonus: Quickly fried and on the table in less than 20 minutes!

Steps:
- Mash garlic and oregano in a mortar and pestle.
- Add 2 tablespoons of oil to garlic and oregano. Stir ingredients together. Note: If you do not have a mortar and pestle you can add ingredients to a small food chopper to blend together or finely mince garlic with a knife.
- Rinse pork chops and lay them on a cutting board or plate. Top all pork chops with a teaspoon of the garlic and oregano mix.
- With your fingers or using a spoon, spread garlic all over the surface of pork chops. Repeat process on the other side of pork chops.
- Now, sprinkle all pork chops with adobo on both sides. Followed with paprika on both sides. Set chops aside.
- In a large skillet, over medium high heat, add about a ¼-⅓ cup of oil.
- When oil has heated through, carefully add 2 or 3 pork chops.Do not overcrowd pan.
- Depending on how thick your pork chops are, cook on one side for about 5-7 minutes.
- Using a fork, flip over to other side and cook for an additional 5-7 minutes.Pork chops should be done.

- Heat oil in a large skillet over medium-high heat. Combine flour, seasoning salt, salt and pepper in a paper or plastic bag. Place pork chops into the bag, and shake to coat.
- When the oil is nice and hot, shake off excess flour from pork chops, and fry in the hot oil. Cook on each side for about 4 to 5 minutes, or until golden on the outside, and juices run clear.

- In large bowl, add pork chops, vinegar and water. Let sit for 10 minutes. Rinse well, pat dry, and place in ziploc bag or lg. bowl.
- Add lime juice, soy sauce, garlic, oregano, salt and pepper. Toss to combine. Let marinade at least 30 minutes preferably overnight. The longer they marinade the better they will taste. Note: If marinating 1 hour or less you can leave them out at room temperature. If marinating over 1 hour or more refrigerate then bring to room temperature before cooking.
- In large frying pan on medium heat, add canola oil and 1 teaspoons sugar (other teaspoons is for next batch). When oil is hot and sugar turns a dark brown color (careful not to burn) add 4 pork chops. Cover and cook for 4 minutes. Flip pork chops, cover and cook for 2 minutes. Remove cover and cook for 1 minute. Remove pork chops and drain on plate lined with paper towels, add 1 more teaspoons sugar to oil, heat and repeat process with remaining pork chops.

PAN FRIED PORK CHOPS

- Salt and pepper both sides of the pork chops.
- Combine the flour and some cayenne, salt and black pepper. Dredge each side of the pork chops in the flour mixture, and then set aside on a plate.
- Heat the canola oil over medium to medium-high heat. Add the butter. When the butter is melted and the butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side. Flip and cook until the chops are golden brown on the other side, 1 to 2 minutes (make sure no pink juices remain). Remove to a plate and repeat with the remaining pork chops.
- Delicious and simple! Serve with smashed new potatoes.
PANKO FRIED PORK CHOPS WITH TEXAS TOAST
I absolutely love the fried pork chop from Bertha's Kitchen in Charleston. If you're ever in my neck of the woods, you've got to go there and try it! This sandwich is inspired by her fried pork chop, with my spin, of course. For that extra crunch, I coat the pork chops in panko breadcrumbs after they've had a dip in some seasoned buttermilk.

- Pour the oil to a depth of 1 inch in a large cast-iron skillet with high sides. Heat the oil to 350 degrees F.
- Meanwhile, sprinkle the pork chops with salt and pepper and set aside. Set up the dredging station: Place the flour in a shallow dish. Whisk together the eggs, buttermilk and mustard in a separate shallow dish. Combine the panko and House Seasoning in a third shallow dish.
- Dredge one pork chop in the flour. Dip in the eggs, then in the panko. Place on a wire rack and repeat the process with the remaining pork chops. Fry the pork chops, in batches, until golden brown and a meat thermometer inserted in the thickest portion registers 145 degrees F, 3 to 4 minutes. Serve hot with the Texas toast.
- Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

- Tenderize meat pork with a meat mallet. If you're short on time, pound to at least 1/4 inch thickness or thinner.
- Mix together all the ingredients except cornstarch and oil and pour over pork. Allow to marinate for 30 minutes. (I've marinated it as long as 1 day and as little as 10 minutes.).
- Just before frying, pour cornstarch on top of pork and stir into marinade.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Heat the vegetable oil in a large skillet over medium heat. Sprinkle pork chops with salt and black pepper, and brown them on both sides, about 5 minutes per side. Set chops aside.
- Mix the water, rice, tomato sauce, picante sauce, and taco seasoning in the prepared baking dish. Lay the chops into the rice mixture, and top with the green bell pepper slices. Cover the dish.

- Rinse pork chops and pat dry with paper towels, making sure to remove all excess moisture.
- In a medium bowl, combine flour, seasoned salt, black pepper, steak seasoning, and salt to taste.
- Dip each side of the pork chops into the seasoning mixture, then set aside on a plate.
- Heat canola oil over medium-high heat in a large skillet and once it is hot (between 325-375 degrees F), add butter to the skillet.
- When the butter is melted, cook pork chops 2 to 3 minutes on the first side; 1 to 2 minutes on the other side.
- Dispose of the excess oil.
- Remove fried pork chop to a plate and repeat with remaining porch chops.
