These deep-fried dessert pastries, which are sweetened with honey, are known as _sebadas_.

Steps:
- Mix all cheeses and lemon peel in large bowl; set cheese mixture aside.
- Lightly flour 2 baking sheets. Mix bread flour and salt in another large bowl; mix in beaten eggs. Using fingertips, rub in butter a few pieces at a time until well blended. Add 1/2 cup water; stir to blend, adding more water by tablespoonfuls if dough is dry. Knead in bowl until dough comes together. Turn dough out onto floured surface; knead until smooth and elastic, about 10 minutes.
- Divide dough into 4 pieces. Roll out 1 dough piece on lightly floured surface to scant 1/8-inch thickness. Using 3 1/2-inch-diameter cookie cutter or biscuit cutter and using sharp knife as aid, cut out rounds. Repeat with remaining dough pieces. Transfer half of dough rounds to prepared baking sheets. Place 2 level tablespoons cheese mixture in center of each dough round on baking sheets. Brush edges of dough rounds lightly with water. Cover with remaining dough rounds, pressing firmly on edges to adhere and seal.
- Preheat oven to 300°F. Pour enough oil into heavy large pot to reach depth of 2 inches. Heat oil to 350°F. Add 3 to 4 ravioli at a time to hot oil in pot and deep-fry until golden, turning once, about 4 minutes. Transfer to paper towels to drain. Place ravioli on baking sheets and keep warm in oven while frying remaining ravioli. (Can be prepared 1 day ahead. Cool; cover and refrigerate. Place on baking sheets and rewarm in 350°F oven until heated through and cheese melts, about 10 minutes.) Place ravioli on platter. Drizzle with honey and serve hot.

- In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., For filling, place Oreos in a food processor; process until finely crushed. Add cream cheese, confectioners' sugar and extract; process until blended., Preheat oven to 350°. On a lightly floured surface, roll one portion of dough to 1/8-in. thickness. Cut with a floured 2-in. round cookie cutter. Place about 1-1/2 teaspoons filling in center of half of the cookies. Cover with remaining cookies. Press edges with a fork to seal. Place 1 in. apart on greased baking sheets. Repeat with remaining dough and filling., Bake 15-20 minutes or until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over cookies; let stand until set. Store in an airtight container in the refrigerator.

- Melt semisweet chocolate and unsweetened chocolate in the top of a double boiler or in a bowl in the microwave. Stir until smooth. Set aside to cool. Heat the 2 cups shortening in a large, heavy skillet or deep fryer.
- In a small bowl, stir together the pureed garbanzo beans, sugar, and cinnamon. Stir in the dates and nuts. Blend with the cooled chocolate. Chill while you make the dough.
- In a medium bowl, beat the eggs until fluffy. Stir in the 1/4 cup melted shortening. Sift together the flour, sugar, and salt, and fold into the egg mixture. Add extra flour if necessary to make the dough easy to handle.
- On a lightly floured surface, roll the dough out to 1/8 inch thickness. Cut into 3 inch circles using a cookie cutter or a large drinking glass. Place 1 teaspoon of the chocolate filling mixture onto the center of each cookie, fold over into a half circle, and pinch to seal.
- Fry cookies in 1 1/2 inches of hot oil, turning once. Cookies should be light brown. Remove with a slotted spoon and drain on paper towels. Refrigerate when cool. Sprinkle with confectioners' sugar before serving.

- In a small bowl, combine the banana, sugar and walnuts. Using a pastry brush, lightly brush the edges of each won ton wrapper. Put about a teaspoon of the chocolate-hazelnut spread in the center of each wrapper and top with 1 to 2 teaspoons of the banana mixture. Fold 1 corner of each won ton wrapper diagonally over the filling to form a triangle. Press the edges together to seal and refrigerate for 15 minutes.
- Fill a large heavy-bottomed saucepan with about 3/4-inch oil. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F. (If you dont have a thermometer, a cube of bread will brown in about 2 minutes.) Fry the ravioli, 2 or 3 at a time, turning occasionally, until golden, about 60 to 70 seconds. Drain on paper towels. Cool for 2 minutes and serve warm.

- MAKE THE COOKAROLIS: Cut cookie dough in half lengthwise and place onto a long sheet of plastic wrap (about 2 feet). Place one half of the dough into the center, then place another sheet of plastic wrap loosely over top. Roll out cookie dough into a 4" wide strip 1/4" thick. Lift off top sheet of plastic wrap and discard. Place 3-4 chocolate morsels in a group onto the bottom of cookie strip 1/2" apart.
- Using the top part of the plastic wrap, fold top half of cookie strip over filling. Using your finger, gently press between and bottom the cookaiolis to seal. Holding the ends of the plastic wrap taut, place the strips onto a cookie sheet and freeze till needed. Repeat with the other half of cookie dough.
- MAKE THE PASTRY DOUGH: In the bowl of a food processor, combine the flour, baking powder and salt. Pulse for a few seconds and then pour into a large mixing bowl.
- Add the shortening and knead it into the flour with your hands until it is crumbly. Add the milk all at once and mix in with a spatula until it begins to come together.
- Lightly flour your hands and the countertop and turn the dough out onto the countertop. Knead the dough ball, folding over about 12 times. Divide dough in half. Roll each half out to 6" wide strips and about 1/8" thin.
- Remove cookarolis from the freezer and separate them into individual pieces using a knife or pizza pie cutter. Place cookarolis onto the dough 1/4" apart on the bottom half of the dough. Brush the edges of half of the dough lightly with the egg wash (remember egg wash sticks to dough, but not itself). Fold top part of dough over and separate (using a pizza cutter works well) and then gently seal the edges together with the tines of a fork, dipping the tines into some flour as needed. Repeat with second ball of dough. Place on cookie sheet and refridgerate for a minimum of 30 minutes. NOTE: at this point, they can be frozen on the cookie sheets, then placed into a ziploc bag and frozen for up to a year till needed.
- DEEP FRY: Heat oil in a deep fryer to 350°F Carefully fry in batches for about 3 minutes until just light brown. Drain on paper towels. When cooled (about 5 minutes), dust with powdered sugar. Serve immidiately but be careful, as filling may still be hot.

- For Ravioli---------------.
- Gently mix bananas, brown sugar, graham cracker crumbs, pecans and chocolate.
- Roll dough and cut into 3 inch squares or use wontons and lay out on a clean work surface.
- Fill each square or wrapper with 1 1/2 t's of filling.
- Brush edges with egg wash and fold in half diagonally, sealing edges completely.
- Place on wax papaer and repeat.
- Heat oil to 350-375 degrees.
- Fry ravioli until golden, around 2 minutes.
- Remove and drain.
- Sprinkle with powdered sugar and serve with chocolate rum sauce.
- Chocolate Rum Sauce-------------------.
- Heat milk and chocolate in a 2 quart saucepan over medium heat.
- When the chocolate has melted, remove from heat and stir in butter and rum.
- Serve warm.

SWEET RAVIOLI WITH CHOCOLATE-NUT FILLING

- You will need a pasta machine and a couple of days to make this recipe. 1. TO MAKE THE FILLING: The day before making the ravioi, put the chickpeas, almonds, dried fruit, and chocolate in a food processor and pulse until processed into a sticky paste. Transfer to a medium bowl and stir in the preserves, honey, and rum. Cover and refrigerate overnight. 2. TO MAKE THE DOUGH: Put the flour in a food processor. Mix the olive oil, wine, and water in a glass measuring cup. With the machine running, add the liquid through the feed tube and process just until the dough forms a ball on top of the blade. If the dough is too wet or too dry, it will not form a ball. Feel the dough, and if it is sticky and wet, add additional flour, 2 tablespoons at a time, processing after each addition, until the dough forms a ball. If it seems too dry, follow the same procedure, adding additional water, 1 tablespoon at a time. To make the dough by hand, place the flour in a large bowl. Stir in the liquids to make a stiff dough. Turn out onto a lightly floured surface and knead just until smooth, about 5 minutes. Do not overknead the dough. Gather up the dough into a ball, wrap in plastic wrap, and let stand at room temperature for 2 hours. 3. Place a kitchen towel on a baking sheet and dust with flour set aside. Divide the dough into quarters. Attach a hand-cranked pasta machine to a work surface. Working with 1 portion of dough at a time and keeping the remaining dough covered, fold the dough into thirds and dust with flour on both sides. Pass the dough through the widest setting of the pasta machine (setting No.1 on most machines). Continue folding and rolling until the dough comes together, usually after 5 or 6 passes. Pass it through a few more times without folding, dusting with flour as needed. Adjust the rollers to the second setting, fold the dough into thirds again, flour both sides, and pass it through the rollers. Continue folding and rolling for 4 or 5 more passes. Adjust the rollers to the third setting, and repeat the folding and rolling for 4 or 5 passes. By now the dough will be transformed into a thin sheet of pasta. Adjust the rollers to the fourth setting. Dust the dough with flour. Without folding, pass the dough through the pasta machine 3 or 4 times. Adjust the rollers to the fifth setting (on most machines, this will be the next-to-last setting). Flour and pass the pasta through the rollers. The dough should be about 1/16 inch thick. 4. Place the long strip of dough on a work surface. On the bottom half of the dough, about 1/2 inch from the bottom edge, place scant teaspoons of the filling about 1 1/2 inches apart. Using a pastry brush, lightly brush a border of water around each spoonful of filling. Fold the pasta strip over to cover the filling. Using your fingers, press all around each mound of filling to seal the two layers of pasta together. Using a fluted pastry wheel, cut out 1 1/2-inch-square ravioli. Place the ravioli on the kitchen towel and set aside. 5. Line a baking sheet with paper towels. In a deep Dutch oven, melt vegetable shortening over high heat to a depth of 2 to 3 inches and heat it to 350°F. In batches of about 10, deep-fry the ravioli until golden, about 2 minutes. Using a wire-mesh skimmer, transfer to the paper towels to drain. Let cool completely. (The ravioli can be prepared up to 2 days ahead and stored in an airtight container, with the layers separated with paper towels and waxed paper.) Just before serving, dust the ravioli with the confectioners' sugar.
