EMERIL'S HOMEMADE SWEET AND SPICY PICKLES

Emeril's Homemade Sweet and Spicy Pickles image

NOTE: When selecting cucumbers for pickling, there are a few things to remember. For crisp pickles, choose ripe, pickling cucumbers, which are shorter and chunkier than regular eating cucumbers, which tend to be longer and smoother. Ripe pickling cucumbers are darker green, firm, and not "bloated." They should have plenty of spiny bumps on the outer surface. Overripe cucumbers make mushy pickles. They tend to have yellow or white streaks or spots and their surfaces are smoother. Choose pickles that have not been coated in wax, as the pickling brine cannot penetrate through the wax. The fresher the cucumbers, the crisper the pickles will be. For best results, try picking your own cucumbers from a local farm or farmers' market.

Time P14DT2h55m

Yield 4 pints

Number Of Ingredients 13

3 pounds pickling cucumbers, sliced into 1/4-inch thick slices
2 cups sliced onions
1/2 cup pickling salt
6 cups water
3 cups white vinegar
1 1/2 cups apple cider vinegar
3 1/2 cups sugar
2 tablespoons yellow mustard seeds
1/2 teaspoon turmeric
4 whole cloves
10 tablespoons roughly chopped garlic
24 dried cayenne peppers
2 teaspoons 100 percent Natural Pickle Crisp, optional

Steps:

  • Place cucumbers, onions, pickling salt, and water in a large, non-reactive bowl. Cover and allow cucumbers to soak for 2 hours. Drain the water from the onions and cucumbers through a colander and rinse well for 5 minutes. Drain well and set aside.
  • Combine the vinegars, sugar, mustard seeds, turmeric, cloves, garlic, and peppers in a medium saucepan over high heat. Bring to a boil, reduce heat to medium and add the cucumbers and onions. Bring to a simmer and remove the saucepan from the heat.
  • Fill each of the hot sterilized pint-size preserving jars with the pickle mixture, dividing them evenly, and enough of the liquid to come within 1/2-inch of the top. Add 1/2 teaspoon of Natural Pickle Crisp to each jar, if desired. With a clean damp towel, wipe the rim and fit with a hot lid. Screw on the metal ring just until the point of resistance is met. Process the jars in a hot-water bath for 15 minutes.
  • Using tongs, remove the jars, place on a towel, and let cool. Test the seals by allowing the jars to stand at room temperature overnight or until the lids pop. Tighten the rings and store in a cool dry place. Let the pickles age for at least 2 weeks before using.

SOUTHERN-FRIED SWEET ONION RINGS

Southern-Fried Sweet Onion Rings image

Thin enough to flash-fry but thick enough to let the sweet onion flavor shine through, these onion rings work well as a side dish but also are great as a stand-alone snack. Less is more when dipping the rings in the buttermilk mixture and then the flour mixture. Be delicate in the coating process, and make sure to let as much liquid and then as much flour fall off as possible. Less breading means less grease absorption and a crisper finished product. The flour should be as fine as possible, so reserve half of the flour mixture. When the first batch starts to get wet and gummy, replace it with the remaining half. The oil temperature matters, too. Heat the oil to at least 360 degrees, and fry the rings in batches. They cook so quickly it is easy to get through the frying in 10 minutes. Keep them warm in a 200 degree oven until all the frying is done.

Time 20m

Yield 4 servings

Number Of Ingredients 9

1 to 2 quarts peanut or other frying oil, such as canola
1 1/2 cups all-purpose flour
1 1/2 cups finely ground cornmeal
1/2 cup cornstarch
1/4 teaspoon cayenne pepper
1 egg
1 cup buttermilk
2 large Vidalia or other sweet onions, sliced 1/4-inch thick
Kosher salt

Steps:

  • Heat oil in a large heavy pot. It should be at least 3 inches deep, but more is better.
  • In a wide shallow bowl, whisk together flour, cornmeal, cornstarch and cayenne. In a second bowl, beat egg and buttermilk. Separate onion slices into rings.
  • Working in batches, lightly toss the rings in the flour mixture, then dip into the buttermilk mixture. Allow most of the liquid to drip off, then toss again in the flour mixture. Shake off as much flour as possible and place the rings into the hot oil.
  • Fry for 2 to 3 minutes or until golden brown, moving the rings around a bit in the oil to keep them separated.
  • Put the onion rings on a plate or bowl lined with paper towel and salt. Repeat until the onions are done.

FRIED, SWEET AND SPICY PICKLED ONION RINGS

Fried, Sweet and Spicy Pickled Onion Rings image

This idea occurred to me when I was thinking about putting an onion ring on a blt. I just thought to myself, "Hmm - I wonder what would happen if I used my sweet and spicy pickling vinegar to marinade the onion slices before making the onion rings". Well you never know until you try it and man they are so good! I would...

Provided by Tammy Brownlow

Categories     Vegetable Appetizers

Time 3h10m

Number Of Ingredients 15

1 large onion, sliced - i would use 1015 if possible
1 c cider vinegar
1/2 c water
1 c sugar
1 tsp salt
1 tsp pickling spice
2 fresh jalapeno peppers sliced
1 habanero pepper, fresh split open
1/2 c corn meal
1/2 c flour
1 tsp baking powder
1/2 tsp salt
1/8 tsp garlic powder
1 egg
3/4 c buttermilk

Steps:

  • 1. In a medium sauce pan add vinegar, water, sugar, salt, pickling spice, jalapeno, and habenero peppers. Heat on medium heat until boiling and boil for 1 minute. Stir to dissolve sugar and salt.
  • 2. Remove from heat and allow to cool to room temperature and pour over onions in a glass container. Cover and refrigerate until ready to use. I let mine marinade about 3 hours.
  • 3. Preheat deep fryer to 350 degrees. In a measuring cup combine buttermilk and egg and whisk to combine.
  • 4. In another container combine cornmeal, flour, baking powder, salt, and garlic powder.
  • 5. Remove the onion slices from the pickling liquid. Do not pat them dry.
  • 6. Drop them into the cornmeal mixture and set aside.
  • 7. Place slices one at a time into the buttermilk mixture, followed by the cornmeal mixture. Shake loose flour off onion rings and set aside.
  • 8. Drop dredged onion slices - 3 or 4 at a time - into deep fryer and cook until golden about 3 minutes. Drain on paper towels. Try to allow them to cool a little before devouring with your favorite dipping sauce. Enjoy!
