BACON AND SPINACH FRITTATA RECIPE



Bacon and Spinach Frittata Recipe image

Simple recipe for an easy frittata. Baked scrambled eggs in a cast iron skillet with bacon, spinach, swiss cheese, grape tomatoes, green onions and cream.

8 slices bacon (diced)
2 1/2 cups fresh spinach
1 cup grape tomatoes (halved)
3 green onions (thinly sliced)
8 large eggs
1 cup milk
1 1/2 cups swiss cheese (grated)
1 tsp salt
1/2 tsp black pepper

Steps:

  • Saute the bacon in a 10 inch cast iron skillet over medium heat, stirring often. Once the bacon is browned and cripy, scoop out of the skillet and let drain on some paper towel.
  • Drain most of the bacon grease out of the skillet, leaving about 1-2 tbps of the grease in the skillet.
  • Add the fresh spinach and cook just until it has wilted.
  • Evenly spread the bacon, grape tomatoes, green onions and 1 1/4 cups of the swiss cheese in the skillet.
  • Whisk together the eggs, milk, salt and pepper in a bowl. Pour the egg mixture evenly in the skillet.
  • Bake in a 375F oven for 25 minutes. Sprinkle the remaining 1/4 cup of swiss cheese on top and bake another 5 more minutes.

8 oz. bacon, (chopped (8 slices))
3 oz. fresh spinach, (roughly chopped (3 packed cups))
8 large eggs
1/4 cup half and half
1/2 tsp onion powder
1/4 tsp garlic powder
Salt and freshly ground black pepper, (to taste)
1 cup grape tomatoes, (halved)
2/3 cup (2.8 oz) shredded swiss cheese

Steps:

  • Preheat oven to 350 degrees. Butter a 9 - 10 inch deep pie dish, set aside.
  • Place bacon in a 12-inch non-stick skillet and cook over medium-high heat, tossing frequently, until browned and crisp, about 6 - 10 minutes.
  • Transfer bacon to a plate lined with several layers of paper towels to drain, leave 1 Tbsp rendered bacon fat in a skillet drain and reserve or discard excess.
  • Return skillet to medium-high heat, add spinach and saute just briefly until it has wilted, about 15 - 30 seconds, transfer spinach to plate with bacon.
  • In a large mixing bowl whisk together eggs, half and half, onion powder, garlic powder until well combined. Season with salt and pepper to taste*.
  • Add cooked bacon, tomatoes, spinach and swiss and toss mixture to distribute ingredients. Pour into prepared pie dish.
  • Bake in preheated oven until just set, about 30 - 35 minutes. Cut into wedges and serve warm.

1 carton (16 oz) cholesterol-free fat-free egg product
1/4 teaspoon salt-free garlic-and-herb seasoning
1/4 teaspoon salt
2 teaspoons vegetable oil
4 medium green onions, sliced (1/4 cup)
2 large roma (plum) tomatoes, sliced
1/2 cup shredded sharp Cheddar cheese (2 oz)
2 tablespoons real bacon pieces (from 2.8-oz package)
2 tablespoons light sour cream

Steps:

  • In medium bowl, mix egg product, garlic-and-herb seasoning and salt; set aside.
  • In 10-inch nonstick ovenproof skillet, heat oil over medium heat. Add onions; cook and stir 1 minute. Reduce heat to medium-low. Pour in egg mixture. Cook 6 to 9 minutes, gently lifting edges of cooked portions with spatula so that uncooked egg mixture can flow to bottom of skillet, until set.
  • Set oven control to broil. Top frittata with tomatoes, cheese and bacon. Broil with top 4 inches from heat 1 to 2 minutes or until cheese is melted. Top each serving with sour cream.
