PATRIOTIC FROZEN DELIGHT

Steps:
- In a bowl, combine milk, lemon juice and zest. Stir in yogurt, marshmallows and pecans. Spread half into an ungreased 11x7-in. dish. Sprinkle with half of the strawberries and blueberries. Cover with the remaining yogurt mixture; top with remaining berries. Cover and freeze until firm. Remove from the freezer 15-20 minutes before serving.

FROZEN RASPBERRY DELIGHT

Steps:
- In a bowl, combine wafer crumbs, sugar and butter; set aside 1/4 cup. Press the remaining crumb mixture into a 13 x 9 x 2 inch dish. Cover and refrigerate for 15 minutes.
- Place hot fudge topping in a microwave safe bowl; civer and microwave on high for 15 - 20 seconds. Spread over crust. Spoon ice cream over fudge layer. Place spoonfuls of sherbert over ice cream; cut through sherbert with a knife to swirl. Top with raspberries. Spread with whipped topping; sprinkle with reserved crumb mixture. Cover; freeze for 2-3 hours or overnight. Remove from freezer 15 minutes before serving.

FROZEN ORANGE DELIGHT
I love oranges, but diabetics have a hard time with the sugar content. This frozen dessert is deeelish and the exchanges are not all that high. 1 cup is equal to 1 1/2 fruit and 1 fat. Diabetics rejoice!

- Dissolve the Jello in the boiling water. Stir in the pineapple juice.
- Refrigerate for 20-30 minutes or until slightly thickened. Fold in the whipped topping.
- Fill the cylinder of an ice cream freezer with the mixture. Freeze according to the directions.
- Allow to firm up in the freezer for 2-4 hours before serving.

NEAPOLITAN DELIGHT
Steps:
- Make the pasta frolla: Sift the flour, granulated sugar, and salt onto a clean, dry work surface. Make a well in the center of the dry ingredients and add the butter, eggs, and lemon zest to the well. Work the butter and eggs together with your fingertips, then gradually begin to incorporate the flour into the egg mixture. Continue working the dough with your fingertips until smooth. Gather the dough into a ball, wrap it in plastic wrap, and refrigerate at least 30 minutes or up to 1 day.
- Meanwhile, make the filling: Cut the dried figs into quarters, dropping them into a small bowl as you do. Pour the Marsala over the figs and soak, tossing from time to time, 30 minutes.
- Scrape the figs and Marsala into the work bowl of a food processor fitted with the metal blade. Process the figs and wine to a smooth paste. Scrape the paste into a medium bowl, and stir in the raisins, honey, walnuts, almonds, and lemon and orange zest.
- Preheat the oven to 350° F. Lightly grease two baking sheets with butter. (This is not necessary if you're using nonstick baking sheets.) Cut the pasta frolla into quarters. Roll each into an 8 × 8-inch square. Spread one-fourth of the filling evenly over the square and roll it up like a jelly roll. Cut the roll crosswise into 3/4-inch slices. Lay the slices flat on the prepared baking sheets and bake until the underside is deep golden brown, about 20 minutes. Remove to a wire rack to cool completely. Serve at room temperature, plain or sprinkled with powdered sugar.
FROZEN STRAWBERRY DELIGHT
This dessert is like a frozen strawberry mouse but with a delicious shortbread/walnut crust. This is an very easy dish that can be made up ahead of time and frozen. I have divided this recipe into 2 smaller springform pans. For a dramatic presentation, drizzle chocolate over on top of the dessert

- Crust: Combine flour, brown sugar, walnuts and butter and set 2/3 of the crumbs in a 13 x 9" pan. Set some aside for the topping.
- Whip the cream and set aside.
- Filling: In a food processor, combine the egg whites, sugar, strawberries and lemon juice. Process the mixture until frothy, about 5 minutes. Fold in the whipping cream and pour into the pan.
- Top with remaining crumbs. Freeze at least 6 hours.
- Note: If you plan on dividing this into smaller containers, make the crust 1-1/2 times so that you have enough crumbs for the topping.
