FROZEN PINEAPPLE SALAD
This is an easy, delicious frozen dessert. Though it makes a great summertime snack, frozen pineapple salad has been a holiday staple in my family for decades.

Steps:
- Combine pineapple, cherries, marshmallows, and confectioners' sugar in a large bowl.
- Mix cream cheese and mayonnaise in a large bowl until smooth. Add to pineapple mixture along with vanilla, stirring gently to combine.
- Beat heavy cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Fold into pineapple mixture.
- Pour into a freezer-safe dish, cover, and freeze for at least 12 hours.

Steps:
- Preheat oven to 350°. Coat 12 muffin cups with cooking spray. Mix brown sugar and melted butter; divide among prepared cups. Quarter each pineapple slice; place one piece in each cup. , For cakes, cream butter and sugar until light and fluffy, 3-5 minutes; beat in egg and vanilla. In another bowl, whisk together flour, baking powder, baking soda and salt; add to creamed mixture alternately with yogurt and milk, beating well after each addition. , Fill prepared cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 12-15 minutes. Cool in pan 2 minutes; invert onto a serving plate. Serve warm or at room temperature.

- Beat in egg.
- Stir in flour through pineapple just enough to moisten.
- Pour batter into greased muffin tins.

- Serve with whipped butter.
FROZEN PINEAPPLE SALAD

- Blend together cream cheese, yogurt, and sugar. Stir in drained pineapple. Spoon into 6 paper baking cups set in muffin tins. Cover freeze.To serve, remove paper from salad cups. Arrange salad on lettuce leaves. Sprinkle with chopped nuts. Let stand 10 minutes before serving.
