Created in the late 1800s, the Tom Collins is said to be named after a wide-spread practical joke that swept the country. This cocktail, however, is no joke.

2 fluid ounces gin
¾ fluid ounce lemon juice
½ fluid ounce simple syrup
1 cup ice
2 fluid ounces club soda
1 lemon wedge

Steps:

  • Fill a Collins glass with 1 1/2 cups ice, set aside in the freezer. Combine gin, lemon juice, and simple syrup in a cocktail shaker. Add 1 cup ice, cover and shake until chilled. Strain into the chilled Collins glass.
  • Top with club soda and garnish with a lemon wedge.

Think of this frozen drink as a Tom Collins meets Italian lemon ice: It's refreshingly sweet-tart, boozy and fully capable of giving you brain freeze in a painfully nostalgic way. Since colder temperatures can shift the way we perceive sweetness, frozen drinks read less sweet on the palate and thus require a bit more added sugar to balance flavors. This recipe employs a final flourish of syrupy maraschino cherries, stirred in to taste. If you're skipping the cherries or don't have time to run out to stock up, you can simply add a bit more simple syrup to taste while blending. You'll lose the brilliant color contrast - and the outright fun of snacking on ice-cold, candylike cherries - but, like most good drinks, this one's adaptable.

8 ounces gin
6 ounces fresh lemon juice (from 3 to 4 large lemons)
4 ounces simple syrup (1:1 granulated sugar and water)
5 to 6 cups cracked or crushed ice cubes
Maraschino cherries and syrup, preferably Luxardo, for serving

Steps:

  • In an airtight container, combine the gin, lemon juice and simple syrup. Seal and refrigerate until thoroughly chilled, at least 4 hours or overnight.
  • Transfer the chilled mixture to the blender, add the ice and blend until smooth and slushy.
  • Divide the mixture among 6 lowball glasses; garnish each with a few cherries and a drizzle of cherry syrup. Serve immediately, and store any extras in the freezer in a covered container until ready to enjoy.

The Tom Collins is perhaps the ultimate highball and one of history's most enduring cocktails. It was historically made with Old Tom gin, which is sweeter than London dry gin, but the drink works well with both types of the spirit. (Old Tom only recently became available again, thanks to the clamoring of mixologists.) A peculiar methodology is used in mixing up a Tom Collins. Though it contains fresh juice, which usually dictates that the drink must be shaken, it is nonetheless often built in the glass in which it is served. But shaking the drink and then straining it into an ice-filled highball works as well, and arguably leads to a better integrated cocktail.

1-1/2 ounces sour mix
1/2 cup club soda, chilled
Optional: orange slice maraschino cherry

Steps:

  • Fill a shaker three-fourths full with ice. Place remaining ice in a Collins or highball glass; set aside. , Add the gin and sour mix to shaker; cover and shake until condensation forms on outside of shaker, 10-15 seconds. Strain into prepared glass. Pour club soda into glass. If desired, garnish with orange slice and cherry.
