1 jar (2 oz) diced pimientos, drained (1/4 cup)
1/3 cup Italian dressing

Steps:

  • Toss all ingredients except dressing and bacon flavor bits in large salad bowl; refrigerate.
  • Just before serving, toss with dressing and bacon flavor bits.

1 oz. (1/4 cup) shredded fresh Parmesan cheese

Steps:

  • Cook linguine in large saucepan to desired doneness as directed on package. Drain; return to saucepan. Cover to keep warm.
  • Meanwhile, cook green beans and carrots together as directed on green bean package. Drain.
  • Add warm vegetables, pesto and onion to linguine; toss to mix. Add tuna; stir gently to mix. Sprinkle with cheese.

These tuna wraps were inspired by spicy tuna sushi rolls. We love how they taste with peppery watercress, but other greens, such as arugula, romaine, escarole or even radish sprouts, would taste great in the filling. If you want to play on the sushi inspiration, stir some wasabi into the soy sauce for dipping and serve with pickled ginger. Serve with sliced cucumbers and slivered red onions tossed with rice vinegar, a little oil and a pinch of salt.

  • Combine tuna, mayonnaise, hot sauce and scallion in a medium bowl. Combine rice and vinegar in a small bowl.
  • Spread one-fourth of the tuna mixture over a wrap. Top with 1/2 cup rice, 3/4 cup watercress, 4 avocado slices and one-fourth of the carrot matchsticks. Roll up and cut the wrap in quarters or in half. Repeat with the remaining filling and wraps. Serve with soy sauce for dipping, if desired.

1 (15 ounce) can cannellini beans, drained
3 tablespoons olive oil
2 tablespoons red wine vinegar
1/3 cup chopped onion
1/2 cup chopped celery
6 grape tomatoes, halved
1/2 cup sliced stuffed green olive
1 teaspoon dried basil
1 teaspoon dried dill weed
salt and pepper

Steps:

  • Drain the canned beans well.
  • Drain the tuna.
  • In a bowl add the chopped onions, celery, halved tomatoes and slice olives.
  • Add the tuna and cannellini beans.
  • Mix the olive oil, red wine vinegar and spices together.
  • Pour the dressing over the tuna mixture and toss gently to blend well.
  • Chill before serving, overnight if possible.

1 tablespoon olive oil
1 ½ teaspoons whole fennel seeds
3 cloves garlic, minced
1 red bell pepper, cut into thin strips
¾ cube fish bouillon, crushed
½ lemon, juiced
2 tablespoons dry white wine
1 head baby bok choy, cleaned and sliced
salt and black pepper to taste
1 ½ teaspoons fennel seeds, crushed
1 (8 ounce) tuna steak
1 tablespoon olive oil

Steps:

  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in 1 1/2 teaspoons of whole fennel seeds, and cook until they bubble and begin to pop, about 30 seconds. Stir in the garlic and red bell pepper; cook and stir for 2 minutes. Stir in the fish bouillon until dissolved, then add the lemon juice, white wine, and bok choy. Cook and stir until the bok choy is tender, about 5 minutes.
  • Meanwhile, combine some salt and pepper with the crushed fennel seeds on a plate. Press the tuna steak into the salt mixture on both sides. Heat the remaining tablespoon of olive oil in a separate skillet over high heat. Place the tuna steak in the skillet, and cook until browned on both sides and cooked to your desired degree of doneness, about 45 seconds per side for rare.
  • Cut the tuna into 1/4-inch thick slices and arrange onto a serving platter. Top with the bok choy mixture to serve.
