SUPER EASY FRUIT COCKTAIL COBBLER CAKE



Super Easy Fruit Cocktail Cobbler Cake image

This is a super quick, super easy dessert to make. Three ingredients and two minutes of prep time is all it takes. Doesn't get any easier. I've used other items instead of fruit cocktail like canned pears, canned blueberries or canned cherries. I've also sprinkled coconut on top of the cake before baking which adds great flavor. Serve plain, with Cool Whip or your favorite ice cream.

2 (15 ounce) cans fruit cocktail (I use Del Monte Carb Clever to cut down on some of the sugar)
1 (18 ounce) box yellow cake mix
1/2 cup unsalted butter, melted

Steps:

  • Pre-heat oven to 350 degrees.
  • Melt one stick of butter in a microwave safe dish for 1 minute 40 seconds on 50% power.
  • Pour entire contents of fruit cocktail cans (juice and all) into a 8 X 11 glass pan that has been sprayed with cooking spray. Spread fruit cocktail evenly on bottom of pan.
  • Sprinkle box of yellow cake mix, evenly, over top of fruit cocktail. Do NOT mix cake mix and fruit cocktail. Use the back of a spoon to smooth out cake mix.
  • Drizzle melted butter over top of cake mix. (Cake mix does not need to be completely covered in butter).
  • (Optional - sprinkle a small amount coconut on top of the cake before baking, photo shows it with coconut).
  • Bake on 350 degrees for 45 minutes.

1 cup white sugar
1 egg
1 teaspoon baking soda
1 teaspoon vanilla extract
1 (16 ounce) can fruit cocktail
½ cup packed brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x9 inch square baking pan.
  • Combine the flour, white sugar, egg, baking soda, vanilla and undrained fruit cocktail. Mix until blended. Pour batter into the prepared pan and sprinkle the top with the brown sugar.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes or until golden brown and firm.

Steps:

  • Mix cream cheese, butter, sugar, eggs and vanilla until fluffy.
  • Fold in flour and baking powder until just mixed.
  • Stir in fruit cocktail.
  • Pour into 2 greased and floured 9x5 inch loaf pans.
  • Bake at 325 for 1 hour.
  • Cool 10 minutes in pans; then remove from pans and finish cooling on wire rack.
  • May drizzle with powdered sugar icing when cool.

  • In a large bowl, combine the first six ingredients; stir until smooth. Pour into a greased 9-in. square baking pan. 2 cups sugar
1 cup vegetable oil
2 teaspoons vanilla extract
2 cups chopped peeled zucchini
1 can (17 ounces) fruit cocktail, drained
3 cups all-purpose flour
2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon salt
3/4 teaspoon ground nutmeg
1 cup chopped walnuts

Steps:

  • In a large bowl, beat eggs. Add sugar, oil and vanilla; beat well. Stir in zucchini and fruit cocktail. Combine dry ingredients; stir into zucchini mixture. Stir in nuts. Pour into two greased and floured 8x4-in. loaf pans. Bake at 325° for 60-70 minutes or until bread tests done. Cool 10 minutes before removing from pans to a wire rack.

2 (15.25 ounce) cans fruit cocktail
2 cups self-rising flour
1 teaspoon baking soda
1 cup white sugar
½ cup evaporated milk
¼ cup butter
1 teaspoon vanilla extract
½ cup chopped walnuts
½ cup flaked coconut

Steps:

  • Cream 1 1/2 c sugar with the eggs. Add fruit cocktail (including liquid). Add the flour and baking soda--mixing well with beater. Pour into a greased and floured 9 inch round cake pan.
  • Bake at 350 degrees F (175 degrees C) about 15-20 minutes. Usually bakes best in thick aluminum cake pans.
  • To Make Frosting: Mix well the cup of sugar, canned milk and stick of margarine. Cook slowly till mixture blends. Cook about 2 minutes more; remove from heat. Add vanilla, chopped nuts and coconut. Stir mixture until thick. Spread on cake.
