Winter Fruit Compote image

This easy fruit mixture can be served atop ice cream, shortbread or angel food cake-or give it as a holiday gift!

1 cup ruby port
1/2 cup orange juice
1/2 cup packed light brown sugar
1 package (9 oz) dried pitted plums
1 package (8 oz) dried Mission figlets, trimmed, cut in half
1 package (6 oz) dried apricots, thinly sliced
1/2 cup golden raisins
2 teaspoons grated lemon peel
4 star anise

Steps:

  • In 4-cup glass measuring cup, stir ruby port, orange juice and brown sugar until sugar is dissolved.
  • In ungreased 11x7-inch pan, mix remaining ingredients. Pour port mixture over dried fruit mixture; toss gently to combine. Cover with foil; refrigerate 12 to 24 hours.
  • Heat oven to 350°F. Bake compote covered 45 to 50 minutes or until thoroughly heated and fruit is soft. Let stand 15 minutes. Remove and discard star anise. Serve with slotted spoon.

2 tablespoons sugar
1/4 teaspoon pumpkin pie spice
2 cinnamon sticks

Steps:

  • In 2-quart saucepan, mix all ingredients until blended. Heat to boiling over medium high heat; reduce heat to low. Simmer uncovered 8 to 12 minutes or until pears are tender.
  • Let stand at room temperature 10 minutes. Remove cinnamon sticks. Serve compote warm or cold.

¼ cup frozen raspberries
¼ cup raw sugar

1 tablespoon unsalted butter

Steps:

  • Combine blueberries, strawberries, raspberries, sugar, water, and butter in a small saucepan. Bring to a boil and cook until berries break down, about 5 minutes. Reduce heat to medium and continue to simmer mixture, stirring occasionally, for 5 minutes.
  • Remove from heat and allow to thicken until consistency is similar to a chutney or thick jam, adding flour to thicken even more if desired. Serve warm or chilled.

1/2 teaspoon salt
1/4 cup melted butter
1 egg
3/4 cup milk
1 cup fruit cocktail, well drained

Steps:

  • Mix dry ingredients together in a large bowl.
  • Mix together melted butter, egg and milk and add to dry ingredients.
  • Stir just until mixed and then fold in fruit cocktail.
  • Fill paper lined muffin cups 2/3 full and bake at 400° for about 25 minutes.

1 can (20 ounces) pineapple chunks
1/2 cup sugar
2 tablespoons cornstarch
1/3 cup orange juice
1 tablespoon lemon juice
1 can (11 ounces) mandarin oranges, drained
3 to 4 medium apples, chopped
2 to 3 medium bananas, sliced

Steps:

  • Drain pineapple, reserving 3/4 cup juice. In a large saucepan, combine sugar and cornstarch. Whisk in the orange, lemon and pineapple juices until smooth. Cook and stir over medium heat until thickened and bubbly; cook and stir 1 minute longer. Remove from the heat; set aside. , In a large bowl, combine the fruits. 1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 cup granulated sugar
1 cup milk
2 eggs
1/4 cup canola oil
1 cup dried fruit
1/2 cup walnuts (chopped)

Steps:

  • Preheat oven to 375 degrees fahrenheit.
  • In a small saucepan add 1/2 cup of water to dried fruit and cook until nice and tender then set aside.
  • In a blender or food processor pulse fruit mixture until nicely blended together to form a compote mixture.
  • Combine dry ingredients in a medium size bowl and put aside.
  • In a large mixing bowl put milk, eggs and oil together and whisk until nice and smooth.
  • Put the softened fruit in the egg mixture and stir until well blended.
  • Add the chopped walnuts and mix until they are well coated in batter.
  • Fill muffin cups 2/3 full and put in the oven for 20 minutes.
  • Let cool for 10 minutes before removing from pan to serving plate.
