COFFEE JELLY
A refreshing Japanese summertime treat! My favorite way to serve it is with frozen whipped cream and chocolate sauce, although it's also delicious with ice cream, regular whipped cream, or flavored coffee cream! It can be served solid in glasses, or cubed in bowls.

Steps:
- Dissolve gelatin in the hot water in a small bowl. Pour gelatin mixture, coffee, and sugar in a saucepan and bring to a boil over high heat. Pour coffee mixture into glasses for individual servings or a large pan for cubing. Chill in the refrigerator until solidified, 6 to 7 hours.

- stir in crushed graham into melted butter then place at the bottom of container.
- put in first layer of cream mixture.
- place 1 layer of coffee jelly.
- apply second layer of cream mixture.
- place 1 layer of fruit jelly.
- apply third layer of cream mixture.
- top with diced peaches.

This is a very quick dessert, which tastes very good and is easy to modify, because you can simply add everything to it you like.

- Mix the red fruit jelly and the yoghurt. Blend well until it has a creamy texture and a light pink colour.
- Add whatever you like (e.g. grated chocolate, fresh berries, nut pieces, etc.). You can also use it as a topping for waffels or pancakes.

WAKE UP COFFEE JELLY
I have been making this coffee jelly for years and have not seen recipes for it. If you like coffee, you will probably like this.

Steps:
- Inspect five 8-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jelly is ready. Wash new, unused lids and rings in warm soapy water.
- Mix water and instant coffee in a pot; bring to a boil. Add pectin and bring back to a boil. Add sugar and bring back to a boil.
- Boil the mixture for 8 to 10 minutes, stirring constantly. Pour jelly into hot, sterilized jars. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
- Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

- To make the jelly, put the sugar and agar-agar powder into a pot and then add the coffee. Put the pot on the stove and stir it while bringing it to a boil.
- When the mixture comes to a rolling boil, remove it from the heat and pour it into an 8 x 8-inch mold (other similar sizes will work). Let this cool to room temperature, cover it, and put it in the refrigerator to fully set.
- To make the sauce, add the cream and sweetened condensed milk to a bowl and stir the mixture together until it's evenly combined. Keep the cream chilled in the fridge until you're ready to serve it.
- When the coffee jelly has been set, unmold it by inverting it onto a cutting board. You can run a toothpick along one edge of the mold to release any suction that may be holding it in.
