1 ¼ cups all-purpose flour
⅓ cup white sugar
⅓ cup dry farina cereal (such as Cream of Wheat®)
¼ cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt

Steps:

  • Combine buttermilk, flour, sugar, farina, oil, egg, vanilla extract, baking powder, baking soda, and salt in a bowl. Beat using an electric mixer on low until just combined.
  • Heat a lightly oiled griddle over medium-low heat. Drop batter by large spoonfuls onto the griddle and cook until middle is set, about 4 minutes. Flip and cook until golden brown on the other side, 3 to 5 minutes. Repeat with remaining batter.

A lemon pound cake made with yogurt instead of sour cream. I have used this recipe for a long time and had misplaced it. I went to my daughter and had her give me another copy.

1 cup butter, room temperature
2 cups white sugar
3 eggs, room temperature
1 teaspoon lemon extract
2 ¼ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 (8 ounce) container lemon flavored yogurt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch bundt pan.
  • Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy. Beat one egg at a time into the butter mixture; add lemon extract with last egg.
  • Sift together the flour, baking soda and salt. Alternately mix in the flour mixture and the yogurt, starting and ending with the dry ingredients. Beat just until incorporated.
  • Pour batter into prepared pan. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool 10 minutes in the pan, then turn out onto a wire rack and cool completely.

A delicious, dense, chewy chocolate cake made with whole wheat flour and yogurt. Use any flavor of yogurt you want. I used strawberry and it was delicious, you could also use raspberry or vanilla or whatever else goes well with chocolate. Baking time is approximate. As one of the reviewers pointed out, it is better after it has cooled for a few hours, or even overnight. :)

1 cup any flavour yogurt** (I find flavoured regular natural yogurt to be the best / room temperature ) ((250 grams))
3 large eggs (room temperature)
1/2 cup vegetable oil ((112 grams))
3/4 cup sugar ((154.50 grams))
1 1/2 cups all purpose flour or cake flour ((225 grams))
1 1/2 teaspoons baking powder
2-3 tablespoons powdered sugar
1 cup blueberries
1/3 cup sugar
1/2 tablespoon cornstarch
2 tablespoons water
1/2 tablespoon lemon juice

Steps:

  • Pre-heat the oven to 350F degrees (180 cm). Grease an 8 inch (20cm) cake pan or a 9½-10 inch (24 cm) bundt pan.
  • In a medium bowl, using a hand mixer on medium speed, lightly beat the eggs approximately 30 seconds, add oil, sugar and yogurt, beat for 1 minute until smooth, add flour and baking powder and beat until well combined approximately another minute.
  • Pour into the prepared cake pan and bake for approximately 35-40 minutes or until tested done (when a toothpick inserted in the centre of the cake comes out dry or with a few crumbs attached). Let cool 15-20 in the pan then move to a wire rack to cool completely. When cool, sprinkle with powdered sugar if desired.

FILLING:

2 tablespoons cornstarch

Cool for 10 minutes; remove from pans to wire racks to cool completely., In a small saucepan, combine sugar and cornstarch. Gradually stir in milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in vanilla. Cool completely. In a small bowl, cream butter until light and fluffy. Gradually beat in cooled mixture. , Place one cake layer on a serving plate; spread with half of the filling. Repeat layers. Top with remaining cake. , For glaze, in a small saucepan, melt butter; stir in cocoa until smooth. Add milk. Bring to a boil. Remove from the heat. With an electric mixer, beat in confectioners' sugar until blended. Cool for 15-20 minutes; spread over top of cake. Garnish with chocolate curls if desired. Store in the refrigerator.

1 1/2 cups sugar
1/2 cup olive oil
1/4 teaspoon baking soda
1 cup plain yogurt
1 lemon, zest of
2 1/2 cups flour
1 tablespoon baking powder
powdered sugar

Steps:

  • Preheat over to 375 F (190 C).
  • Grease and line a 9- inch round cake pan.
  • In a bowl, whisk egg yolks and sugar until creamy.
  • Gradually mix in oil.
  • Stir baking soda into yogurt.
  • Stir yogurt and half the lemon zest into egg yolk mixture.
  • Sift flour and baking powder into mixture and fold carefully.
  • Beat eggwhites until stiff but not dry, then fold into batter.
  • Pour mixture into the prpared pan.
  • Bake 40-50 minutes. Leave in pan for 5 minutes, then transfer to a wire rack to cool.
  • Dust with powdered sugar and sprinkle remaining lemon zest over the top.
