Gails Christmas Cookies Recipes

GAIL'S CHRISTMAS COOKIES

Steps:

• Cream butter and sugar.
• Beat in eggs.
• Add sour cream and flavoring, mix well.
• Sift in dry ingredients.
• Refrigerate 8 hours or more.
• Roll thin.
• Cut with cookie cutters, making a hole for hanging.
• Bake at 350°F until only slightly brown, about 7-10 minutes.
• Cool.
• Icing: Whip egg white until stiff.
• Add sugar and lemon juice as needed.
• Ice cookies.
• Decorate and let dry.
• Put dental floss through hole and hang on tree (making sure they are above level of hungry children or pets, or not!).

CHRISTMAS COOKIES

Steps:

• Cream butter and sugar.
• Add all other ingredients.
• Mix well.
• Chill at least 2-3 hours. Roll out.
• Cut in to shapes and bake in 400°F till edges are pale golden brown.
• Recipe easily doubled.

GRANDMA'S CHRISTMAS COOKIE

Steps:

• Preheat an oven to 375 degrees F (190 degrees C).
• Stir the sifted flour, baking soda, cream of tartar, and salt together in a bowl.
• Beat the margarine, butter and sugar together with an electric mixer in a large bowl until smooth. Add one egg, and continue beating until completely incorporated; add the remaining egg along with the vanilla extract, and beat on low speed until incorporated. Mix the flour mixture into the butter mixture until just incorporated. Gently mix the pecans into the dough with your hands.
• Roll the dough into 1-inch balls; arrange onto baking sheets about 2 inches apart.
• Bake in the preheated oven until the edges are golden-brown, 8 to 9 minutes. Allow the cookies to cool on the baking sheet for 8 minutes. Place confectioners' sugar into a bowl, and lightly dip both sides of each warm cookie into the sugar. Tap of excess, and allow cookies to finish cooling.

GAIL'S CHOCOLATE CHIP COOKIES

Steps:

• 1. Preheat oven to 375°F. Prepare baking sheets by spraying lightly with Pam.
• 2. Cream butter, both sugars, and vanilla. Beat in egg. Add baking soda and flour mixing only until smooth. Fold in chocolate chips. Use 16x24-inch baking sheets and drop cookies in 3 rows of 4.
• 3. Bake cookies, two baking sheets at a time. After 5 minutes take cookies out of the oven and rap on the stovetop until they deflate. Then return sheets to oven, placing the top sheet on the bottom rack, and the bottom sheet on the top rack. Continue to bake until cookies are golden brown, 4-6 more minutes.
• 4. Transfer immediately from cookie sheet to wire rack for cooling.

GAIL'S FAMOUS CHRISTMAS PUNCH

Steps:

• Mix cranberry juice, orange juice, vodka, orange liqueur, sugar, cinnamon, allspice, and nutmeg in a punch bowl. Refrigerate 2 hours to overnight. Serve punch over ice; garnish with orange slices.

GLUTEN FREE FORGOTTEN CHRISTMAS COOKIES

Steps:

• Preheat oven to 350°F
• Beat egg whites and salt until stiff, slowly adding sugar; add vanilla. Gently fold in nuts and chips. if they look like they don't have enough "dough" in between the nuts and chips then you've made it right. Drop by teaspoonfuls onto a greased cookie sheet Place into oven and immediately turn oven off. Leave cookies in oven all night, without opening oven door. i usually like to make these cookies after a day of baking. it's nice not to have to worry about taking that last batch of cookies out of the oven.
• Note: don't use stoneware. they just kind of melt all over and don't really stay in the nice poofs that they should.
