MOROCCAN GARBANZO BEANS WITH RAISINS

Steps:
- Cook rice in water as directed on package.
- Meanwhile, in 3-quart saucepan, heat oil over medium heat. Add sliced onion, chopped onion and garlic; cook about 7 minutes, stirring occasionally, until onions are tender. Stir in remaining ingredients except garbanzo beans.
- Heat to boiling. Reduce heat; cover and simmer about 8 minutes, stirring occasionally, until squash is tender. Stir in beans; heat thoroughly. Serve over rice.

- In a saucepan, combine brown sugar, water, shortening, cloves, nutmeg, cinnamon and raisins. Bring to a boil, and continue boiling for 3 minutes. Remove from heat and allow to cool.
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour an 8x4 inch loaf pan. Sift together flour, baking powder, baking soda and salt.
- In a large bowl, combine the raisin mixture with the flour mixture. Pour into prepared pan.
- Bake at 325 degrees F (165 degrees C) for 55 minutes, or until toothpick inserted into cake comes out clean.

- In a food processor, combine the orange, raisins and pecans. Cover and process until mixture is finely chopped; set aside. , In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla until well blended. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in orange mixture. , Pour into a greased and floured 10-in. flouted tube pan. Bake at 325° for 45-55 minutes or until a toothpick inserted in the center comes out clean. - Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 10 x 10 inch baking pan.
- In a large saucepan boil the raising with the water for 10 minutes. Add the butter or margarine and let cool.
- In the same pan add the flour, soda, salt, sugar, cinnamon, nutmeg, and chopped nuts (optional), mix well and pour batter into a lightly greased 10x10 inch baking pan

GARBANZO CAKE
I have not made this recipe myself. It is from a Mexican cookbook that I keep in my classroom. I have had students make this recipe in the past, and it is moist and delicious. You would never guess that it contained garbanzo beans (chick peas) The cookbook describes the cake's texture to be like that of Christmas pudding. It suggests slicing in thin slices and serving with fresh mango or pineapple and a spoonful of yogurt. We tried it plain, in thicker slices, and it was delicious. It contains no flour, so it would be perfect for wheat-free diets. The recipe states that it serves 6, but since it is a whole loaf, I've changed it to 12 servings.

- Combine topping ingredients in a small bowl.
- Preheat oven to 350.
- Drain the chickpeas thoroughly in a colander, and rub them between the palms of your hands to loosen and remove the skins.
- After separating and discarding the skins, place the chickpeas in a food processor and process until smooth.
- Spoon the puree into a bowl and stir in the eggs, sugar, baking powder, cinnamon, orange zest, and orange juice.
- Grease and flour a 1 pound loaf pan.
- Pour the cake mixture into the loaf pan. Level the surface and bake 1 1/2 hours, or until a toothpick inserted into the center comes out clean.
- Remove cake from oven, and let stand in the pan for 10 minutes. Remove from pan, place on wire rack, and sprinkle with cinnamon sugar topping to taste. Reserve remaining cinnamon sugar (if any) for another use.

- Place raisins in a bowl; cover with boiling water and let stand for 5 minutes. Drain, reserving 1 cup liquid; set raisins and liquid aside., In a large bowl, cream butter and sugar. - Preheat oven to 350 degrees. Butter and flour a nonstick Bundt pan (12-cup capacity), tapping out excess flour; set aside. In a large bowl, whisk together flour, nutmeg, and baking powder; set aside.
- In another large bowl, using an electric mixer, beat butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add brandy; beat until combined. - Preheat oven to 350 degrees.
- Lightly oil an 8 inch square baking pan or spray with a nonstick cooking spray.
- In a blender container, combine beans, one of the egg whites, milk, vanilla, sugar, baking powder, cinnamon, and lemon peel. Blend until smooth. Spoon into a large bowl. Add raisins.
- Place remaining 2 egg whites and cream of tartar in a deep bowl. Beat on medium speed of an electric mixer until foamy. Beat on high speed until egg whites are stiff. Gently fold into bean mixture. Spoon into prepared pan. Combine sugar and cinnamon and sprinkle evenly over cake.
- Bake 35 minutes, until a toothpick inserted in the center of the cake comes out clean. Cool in pan on a wire rack.
- Cut into squares to serve. Refrigerate leftovers.
