This easy and super-fresh pizza sauce can be made in minutes. Best made at the peak of tomato season, the sauce consists of ripe plum tomatoes blended with a few aromatics. After a quick strain, it's ready to top your favorite pizza dough.

Number Of Ingredients 7

2 pounds very ripe plum tomatoes
1 tablespoon extra-virgin olive oil
1 tablespoon tomato paste
1 teaspoon sugar
1 teaspoon dried oregano
1 clove garlic, minced
Kosher salt and freshly ground black pepper

Steps:

  • Halve the tomatoes lengthwise through the stems. Squeeze the tomatoes over a bowl or sink to remove the seeds and watery centers. Chop the remaining tomato flesh roughly and transfer to a food processor. Add the oil, tomato paste, sugar, oregano, garlic, 1 tablespoon salt and some pepper and pulse until mostly pureed with some small chunks. Pour into a fine-mesh sieve over a bowl and let some of the watery liquid drain, shaking gently for about 30 seconds to help it out. Pour the tomato sauce into another bowl or jar and use immediately or refrigerate up to 1 day.

1-3/4 cups sliced fresh mushrooms
1 medium onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
1 teaspoon olive oil
1 can (28 ounces) crushed tomatoes
2 cans (6 ounces each) tomato paste
1 cup water
2 tablespoons sugar
1-1/2 teaspoons dried basil
1-1/2 teaspoons dried oregano
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper

Steps:

  • In a large nonstick saucepan, saute the mushrooms, onion and peppers in oil until tender. Stir in the tomatoes, tomato paste, water, sugar, basil, oregano, garlic powder and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour or until sauce reaches desired thickness, stirring occasionally. , Stir in pepper; cook 5 minutes longer. Spread desired amount over a pizza crust, or cool and then refrigerate or freeze. Sauce may be frozen for up to 3 months.

Number Of Ingredients 9

10 Roma tomatoes
2 tablespoons olive oil
1/2 cup chopped onion
4 cloves of garlic
1 teaspoon dried oregano
2 1/2 tablespoons fresh basil, minced (or 1 teaspoon dried)
1/2 tablespoon sugar, optional depending on sweetness of tomatoes and preference
1/4 teaspoon crushed red pepper
pinch of salt & pepper, to taste

Steps:

  • Bring small pot of water to a boil. While waiting for the water to boil, cut an "X" shape on bottom of each tomato (see above image). This will help the skin remove easily. Once the water is boiling, place the tomatoes in the water for about 30 seconds. Remove the tomatoes and place into bowl of ice water to stop the cooking. Once cool enough to handle, remove the skin and discard. The skin should basically fall off of the tomatoes. Cut tomatoes in half, remove extra seeds from the tomatoes and discard. Set the tomatoes aside. Heat olive oil in skillet over medium-high heat. Add onion and let saute 4-5 minutes. Add garlic and saute about 1 more minute. Add seeded tomatoes and break apart a bit with a spoon. Add the oregano, basil, sugar, crushed red pepper, and salt & pepper. Let simmer for about 30 minutes, stirring occasionally. Transfer to blender to blend or blend with handheld blender in the skillet (this option can get messy) if you want a smoother texture.

8 large tomatoes, cored
1 small sweet onion, chopped
1 clove garlic, chopped
4 leaves chopped fresh basil
2 tablespoons dried oregano
½ teaspoon salt
freshly ground black pepper to taste

Steps:

  • Cut an "x" in the bottom of each tomato. Fill a large mixing bowl with ice water.
  • Bring a large pot of water to a boil. Add tomatoes to the boiling water until skins start to curl, about 30 seconds. Remove tomatoes from the boiling water and submerge in the bowl of ice water. When tomatoes have cooled enough to handle, remove from ice water. Remove and discard tomato skins; transfer tomatoes to a blender.
  • Blend tomatoes until liquefied, and transfer to a medium saucepan. Add onion, garlic, basil, oregano, salt, and pepper. Simmer over medium heat until sauce reduces to desired consistency, 60 to 90 minutes.
  • Puree sauce with an immersion blender until smooth. Use sauce immediately, or store in the refrigerator overnight to allow flavors to develop.

10 roma tomatoes
1 cup water
2 tablespoons olive oil
¼ cup white sugar
2 tablespoons garlic salt
1 tablespoon white vinegar

Steps:

  • Place tomatoes, water, and olive oil in a blender or food processor; blend until smooth. Transfer tomato mixture to a large pot.
  • Stir sugar, garlic salt, and vinegar into tomato mixture and bring to a boil. Reduce heat to medium-low and simmer until thickened, 1 to 2 hours, stirring occasionally.

3 garlic cloves, minced
3 medium tomatoes, cut into 1/2-inch slices
1 large sweet red pepper, halved, stemmed and seeded
1 small zucchini, cut lengthwise into 1/4-inch slices
1 small onion, cut crosswise into 1/2-inch slices
1 teaspoon coarsely ground pepper
1 prebaked 12-inch pizza crust
1/3 cup spreadable garden vegetable cream cheese
8 slices smoked provolone cheese, divided
1/2 cup minced fresh basil, divided
1/4 cup shredded carrots
1 tablespoon minced fresh oregano
1 teaspoon minced fresh thyme

Steps:

  • Mix oil and garlic; brush onto both sides of vegetables. Sprinkle with pepper. Grill, covered, over medium heat until tender, 4-5 minutes per side for pepper and onion, 3-4 minutes per side for zucchini, 2-3 minutes per side for tomatoes., Coarsely chop pepper, onion and zucchini. Spread pizza crust with cream cheese; layer with 4 slices provolone and tomato slices. Sprinkle with 1/4 cup basil, carrots, oregano and thyme. Top with grilled vegetables, then remaining cheese., Grill pizza, covered, over medium heat until bottom is golden brown and cheese is melted, 5-7 minutes. Top with remaining basil.

24 san marzano tomatoes
1/2 onion
4 garlic cloves
1 teaspoon oregano
1 teaspoon basil
1/4 cup red wine
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • blanch and peal the tomotoes. I leave the seeds in as they are small in this type of tomato.
  • 1/2 and run the tomatoes through a food processor or blender.
  • Saute onion and galic in the olive out.
  • Add red wine.
  • Add tomato sauce from step 2.
  • Add oregano, basil, salt and pepper.
  • Let simmer. The length of time will depend on how thick you want the sauce.
