WART-TOPPED QUESADILLA WEDGES

Give the lowly olive a ghoulish spin when it turns into a lumpy decoration for these Halloween snacks.

Cooking spray
4 Old El Paso™ flour tortillas for burritos, 8 inch (from 11.5-oz package)
1/2 cup refrigerated original barbeque sauce with shredded pork (from 18-oz container)
2 teaspoons dill pickle relish
1/2 cup shredded Cheddar-American cheese blend (2 oz)
4 teaspoons shredded Cheddar-American cheese blend (1/3 oz)
8 pitted large ripe or green olives, cut in half lengthwise

Steps:

  • Heat oven to 375°F. Spray cookie sheet with cooking spray. Place 2 tortillas on cookie sheet. Spread half of barbeque sauce with pork over each tortilla. Sprinkle half of the pickle relish over each. Top each with 1/4 cup cheese and remaining tortillas. Spray top of each with cooking spray.
  • Bake 10 to 12 minutes or until tortillas are lightly browned and filling is hot.
  • Remove partially baked quesadillas from oven. Immediately drop 4 teaspoons cheese by 1/4 teaspoonfuls around edges of quesadillas, spacing evenly and making 8 piles of cheese on each. Top each pile of cheese with 1 olive half to resemble wart.
  • Return to oven; bake about 1 minute longer or until cheese is melted. Let stand 5 minutes before serving. Cut each quesadilla into 8 wedges.

1 flour tortilla (8 inch)
1 oz. BAKER'S Semi-Sweet Chocolate, coarsely chopped
2 Tbsp. chopped PLANTERS Dry Roasted Peanuts
1/2 banana, sliced

Steps:

  • Heat grill to medium heat.
  • Fold up sides of 16-inch-long sheet of heavy-duty foil to resemble shallow pan; spray with cooking spray. Sprinkle with cinnamon sugar. Place on grill grate.
  • Place tortilla on foil; heat 30 to 40 sec. or until softened.
  • Sprinkle chocolate and nuts onto half the tortilla; top with bananas. Fold tortilla in half to enclose filling.
  • Grill 3 to 4 min. or until chocolate is melted. Turn quesadilla; grill 1 min. Cut into 4 wedges to serve.

2 (8 inch) flour tortillas
1 teaspoon Vegetable oil spread or margarine
¼ cup JIF® Creamy Reduced Fat Peanut Spread
1 large banana, peeled and sliced 1/4-inch thick
1 tablespoon brown sugar

Steps:

  • Combine the cinnamon and sugar. Set aside.
  • Cover one side of tortilla sparingly with vegetable oil spread. Place spread side down in 10-inch skillet. Spread topside with peanut butter, top with banana slices, sprinkle with brown sugar and top with remaining tortilla. Spread top of tortilla sparingly with vegetable oil spread and sprinkle with half of the cinnamon and sugar mixture.
  • Cover skillet. Cook over medium-high heat until the bottom is golden brown. Turn tortilla with a wide spatula. Sprinkle top with remaining cinnamon and sugar. Continue cooking covered until bottom is golden brown. Remove to cutting board and slice into 8 wedges. Serve warm.

These are delicious dessert quesadillas! An Emeril recipe from his episode on tortillas. My young nephew loves these, but we did too! I serve drizzled with store-bought caramel sauce or chocolate sauce. This makes 10 servings, so you may want to scale down the recipe.

1 lb cream cheese, at room temperature
1/2 cup confectioners' sugar
2 medium ripe bananas, peeled
10 flour tortillas (7 inches in diameter)
4 tablespoons butter
2 1/2 cups caramel sauce, warm,recipe follows
4 medium bananas
whipped cream (optional, for serving)

Steps:

  • In the bowl of an electric mixer, beat the cream cheese until smooth.
  • Add the sugar and bananas, continue to beat until smooth.
  • Spread 1/4 cup of the filling over half of each tortilla.
  • Fold the other half over the filling and press slightly.
  • Place on a large plate and cover with plastic wrap.
  • Refrigerate until the filling sets, about 30 minutes.
  • In a large saute pan, over medium heat, melt 1 tablespoon of the butter.
  • Pan-fry the tortillas in batches, 3 at a time, until golden on each side, about 2 minutes per side.
  • Repeat the above process with the remaining butter and filled tortillas.
  • To serve, slice each filled tortilla into thirds.
  • Arrange the slices in the center of each serving plate.
  • Spoon a 1/4 cup of the warm caramel sauce over each plate.
  • Peel the bananas and slice 1/4-inch thick.
  • Garnish each plate with the sliced bananas and whipped cream, if desired.

8 flour tortillas
2 cups shredded Mexican blend cheese
1/2 lb shaved deli roast beef or 1/2 lb roasted deli chicken, cut into strips
1/4 cup canned green chilies or 1/4 cup jalapeno, drained
1 (2 ounce) can sliced ripe olives, drained
4 teaspoons olive oil or 4 teaspoons vegetable oil
salsa (optional)
sour cream (optional)
guacamole (optional)

Steps:

  • Preheat oven to 400°F
  • Place 4 tortillas on cookie sheet sprayed with nonstick cooking spray.
  • Sprinkle 1/4 cup cheese evenly on each tortilla. Top evenly with beef, jalepenos, olives and remaining 1 cup cheese.
  • Top with remaining tortillas. Brush with olive oil. Cover loosely with foil.
  • Bake 10-12 minutes or until hot and cheese melts. Or, if desired, spray quesadillas with nonstick cooking spray and brown in a large nonstick skillet over medium high heat for 1 to 1 1/2 minutes per side. Or, if desired, broil 4-6" from heat for 1-2 minutes.
  • Cut each tortilla into 8 wedges. Serve with salsa, sour cream and guacamole, if desired.
