Lemon & Basil Pasta Salad image

2 1/2 cups (625 ml) bow tie pasta, cooked according to package directions
1 medium red bell pepper, chopped
1 green onion, trimmed and thinly sliced
2 tbsps (30 ml) Lemongrass
2 tbsps (30 ml) Basil
1 tbsp (15 ml) olive oil
1 tsp (5 ml) French's® Dijon Mustard
1 large tomato, sliced

Steps:

  • Combine the pasta, red pepper and green onion in a large bowl.
  • In a separate bowl, mix together the Lemongrass Paste, Basil Paste, mustard and oil. Toss with pasta mixture. Serve with topped with tomato.

1 pint grape tomatoes, halved
1/2 cup chopped green onion
1 (16-ounce) bottle Italian-style salad dressing
1/2 cup grated Parmesan

Steps:

  • Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.
  • Mix carrots, celery, peppers, tomatoes, and green onion together in large bowl. Add the cooled pasta and mix together. Pour the dressing over mixture, add the Parmesan and mix well.
  • Chill before serving.

Homemade pasta salad that's perfect for any potluck or backyard bbq!

1 box uncooked short-cut pasta (I used farfalle (but rotini or penne work as well), 16oz)
2/3 cup sliced red onions
1 pint heirloom cherry tomatoes (halved (regular cherry or grape tomatoes work as well))
1 cup diced cucumbers
1/4 cup pickled capers (jarred)
1 cup crumbled feta cheese
1/2 cup red wine vinegar
2 1/2 tsp lemon juice (freshly squeezed if possible)
2 1/2 tsp minced garlic
1 1/2 tsp granulated sugar
1 tsp dijon mustard
1 tsp dried oregano
1 tsp fresh minced oregano
2 tsp fresh minced parsley
3/4 cup extra-virgin olive oil
Salt and pepper (to taste)

Steps:

  • Fill a large stockpot with water and bring to a boil over HIGH heat. Salt the water with about a tablespoon of salt. Add pasta and cook until just al dente (according to package instructions).
  • Drain pasta and toss with a light drizzle of olive oil. Set aside to cool slightly.
  • While pasta is cooling, chop tomatoes, cucumber, and red onion. Set aside in a large mixing bowl and add capers to the bowl.
  • Add dressing ingredients, except for olive oil, to a bowl and whisk to combine. While whisking, slowly pour in the olive oil, and continue whisking until completely combined. Taste and adjust salt and pepper accordingly.
  • Add the cooked pasta and crumbled feta cheese to the large bowl with the vegetables. Pour dressing over the top and toss to combine.
  • Cover bowl with plastic wrap and refrigerate for several hours, up to 2 days.
  • Serve cold or at room temperature, and enjoy!

1 pound fusilli or pasta of your choice
2 medium eggplant
2 medium zucchini
2 medium yellow summer squash
1 large red onion, cut into 1/2-inch slices
1 medium sweet red pepper, cut in half and seeds removed
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
3 plum tomatoes, chopped
1-1/2 cups (6 ounces) crumbled feta cheese
2 cans (2-1/4 ounces each) sliced ripe olives, drained
2 tablespoons minced fresh parsley
PARMESAN VINAIGRETTE:
3/4 cup olive oil
1/3 cup grated Parmesan cheese
1/3 cup white wine vinegar
3 tablespoons lemon juice
1 teaspoon sugar
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl and set aside., Meanwhile, cut the eggplant, zucchini and summer squash lengthwise into 3/4-in.-thick slices. Brush the eggplant, zucchini, summer squash, red onion and red pepper with oil; sprinkle with salt and pepper. Grill vegetables, covered, over medium heat for 4-6 minutes on each side or until crisp-tender. When cool enough to handle, cut into cubes., Add the tomatoes, feta cheese, olives, parsley and grilled vegetables to the pasta. In a small bowl, whisk the vinaigrette ingredients. Pour over salad; toss to coat. Cover and refrigerate until serving.

1 pkg. (16 oz.) whole wheat farfalle (bow-tie pasta), uncooked
2 cups broccoli florets
1 each red onion and red pepper, chopped
2 cups halved cherry tomatoes
1 bottle (8 oz.) KRAFT Sun Dried Tomato Vinaigrette Dressing
1/2 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 3 min. Drain.
  • Rinse pasta mixture with cold water; drain well. Place in large bowl. Add all remaining ingredients except cheese; mix lightly.
  • Refrigerate 1 hour. Stir gently before serving; top with cheese.

12 ounces egg noodles, cooked and chilled
1 cup yellow pear tomato, cut in half
1 cup zucchini, thinly sliced
1 cup yellow squash, thinly sliced
1 cup cauliflower floret
1 cup fennel, thinly sliced
1 cup red onion, thinly sliced
1 cup asparagus tips, blanched for 3 minutes and chilled
1 1/2 cups roasted red peppers, thinly sliced
1/2 cup flat-leaf Italian parsley, chopped
2 cups fresh basil leaves
2 cups sun-dried tomatoes, packed in oil
4 roasted garlic cloves
1/4 cup mascarpone cheese
1/2 cup parmesan cheese, grated
1 1/2 teaspoons kosher salt
1 teaspoon pepper
1 1/4 cups extra virgin olive oil

Steps:

  • In large bowl, toss together egg noodles, vegetables and parsley. Set aside. For dressing, combine basil leaves, sun dried tomatoes, garlic, mascarpone and Parmesan cheeses, salt and pepper in a food processor. Process, and slowly add in the olive oil and reserved oil from tomatoes; blend until smooth. Pour dressing over pasta mixture. Chill for one hour. Top with Parmesan cheese before serving.

8 ounces uncooked spiral or cartwheel pasta
3 cups assorted chopped fresh or frozen vegetables
1 bottle (16 ounces) zesty Italian salad dressing, divided
1 cup cubed cooked chicken, turkey or ham
1 cup cubed cheddar, mozzarella or Monterey Jack cheese
1 can (2-1/4 ounces) sliced ripe olives, drained
Minced fresh parsley or basil, optional

Steps:

  • Cook pasta according to package directions. Drain but do not rinse. Return pasta to the pan; add vegetables and toss. Cover for 3-5 minutes. Vegetables will lightly steam in pasta. , Place pasta in a large salad bowl. Top with three-fourths of the dressing and lightly toss. 1/2 cup prepared pesto

1 medium sweet red pepper, chopped
1 medium tomato, seeded and chopped

This is my favorite pasta salad. It makes a perfect summer lunch served with cold red grapes and a fruity rosé wine. You can use whatever kind of salami you prefer (sopressata and genoa are both excellent).

2 tablespoons lemon juice
1/2 cup extra virgin olive oil
3/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/3 cup mixed fresh herbs, finely chopped (basil, oregano, thyme)
1 lb fusilli (spiral pasta) or 1 lb rotini pasta (spiral pasta)
1/2 red onion, sliced
2 1/2 ounces black olives, sliced
1 (12 ounce) jar olive oil-packed roasted red peppers, drained and sliced (Dell Alpe recommended)
4 ounces feta cheese, crumbled
1/4 cup sun-dried tomato packed in oil, chopped
1 cup salami, chopped

Steps:

  • For the dressing, place all ingredients in a jar. Close lid tightly and shake until blended.
  • For the salad, cook the pasta according to package directions in salted boiling water (about 1-2 tablespoons salt for a big pot of water).
  • While the pasta is cooking, soak the red onion in ice water to mellow its flavor.
  • Drain cooked pasta and place in a large bowl.
  • Drain onions and pat dry, then add them to the pasta. Add the dressing, olives, peppers, feta, sun-dried tomatoes and salami to warm pasta and toss.
  • Serve immediately at room temperature or refrigerate until ready to use.
