Liven up your pasta with fresh herbs and pistachio nuts

150g fettuccine
15g garlic butter
2tbsp chopped mixed fresh herbs (such as parsley, basil and thyme)
1tbsp finely chopped pistachios
1tsp red chilli flakes (optional)

Steps:

  • Cook the pasta in a large pan of boiling water for 12 mins. Drain. Add the butter and stir to melt through.
  • Stir in the herbs. Serve topped with the pistachios and a sprinkle of black pepper or the chilli flakes, if you like.

Spaghetti with Garlic and Herbs image

For a potent hit of garlic, try it raw. Fresh Parmesan, pepperoncini, and aromatic herbs add spark to this hearty whole-wheat pasta dish.

1/2 pound whole-wheat spaghetti
1 tablespoon olive oil, plus more for drizzling
6 pepperoncini, sliced into rings
2 tablespoons minced garlic (6 to 8 cloves)
3/4 cup chopped parsley, basil, or both
1/2 cup grated Parmesan
Coarse salt and freshly ground pepper

Steps:

  • Bring a large pot of water to a boil. Add a generous amount of salt, then add pasta. Cook until al dente.
  • Just before pasta is done, heat oil in a large skillet. Add pepperoncini and half of the garlic; toss to heat through.
  • Reserve 1 cup of pasta-cooking water, then drain pasta.
  • Add pasta to skillet and stir. Add just enough reserved pasta water to moisten; stir in garlic and herbs. Stir in cheese, then season with salt and pepper. Drizzle with more olive oil and shaved Parmesan, if desired.

1 ½ pounds pasta
¼ cup olive oil
2 cloves garlic, crushed, or more to taste
salt and pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • In a large pot of salted water boil pasta until al dente. Drain well.
  • In a small saucepan heat oil slightly, add garlic. Saute garlic until it is lightly browned. Be careful not to burn garlic.
  • Combine pasta and garlic, salt and pepper to taste. Top with Parmesan or Romano cheese and serve.
