This gooey garlic baked brie has only 4 ingredients and takes 15 minutes to prepare! It comes out of the oven gooey and cheesy and loaded with rich garlic and herb flavors! This is the ultimate holiday appetizer for any party!

1 8- ounce wheel Brie (St. Andre or Camembert Cheese)
2 cloves of garlic (sliced thinly)
2 sprigs of fresh thyme
2 tablespoons truffle oil
Crostini or cracker

Steps:

  • Preheat the oven to 375-degrees
  • Remove the cheese from the box and unwrap the cheese to free it from just the plastic.
  • Place the cheese back into its box.
  • Score the top in a crosshatch pattern with a knife. Make sure you do not go all the way through to the bottom. This is done only to the top rind, Do NOT go all the way down to the bottom.
  • Place the pieces of the garlic into the top of the cheese and sprinkle with the fresh thyme.
  • Drizzle with the truffle oil and place onto a baking sheet.
  • Place the baking sheet into the oven for 15 minutes or until beautifully gooey.
  • Remove from the oven and allot it to sit for 2-3 minutes before serving with crostini.

1 or 2 Baguettes
Brie Cheese
2-3 Garlic cloves(or more to taste)
Plum or Meaty tomatoes
Olive Oil(1/2 Cup)
Basil(Fresh or Dried)
Italian Parsley Chopped *Optional

Steps:

  • Slice Baguettes about 1/4" on diagonal. Cut Brie into thin slices smaller than the bread slices In microwave proof cup put Olive oil, Garlic and basil. Micro about 1 min.depending on power, to heat flavors together. Dice tomatoes, removing liquid and seeds. Place bread on jelly roll pans(Can be right against each other tight) Using Pastry brush, brush oil and garlic on breads, and put in oven till just toasty. Remove, turn over and repeat brushing. Then put a piece of brie, some tomato(can be made without also) and some chopped parsley on top. Put back in broiler. Watch carefully, they cook quickly. When removing, they can be stacked after cheese is a little cool. These keep remarkably well, and don't need to be served hot.

Steps:

  • Preheat oven to 400°F, with a rack in center. On a lightly floured sheet of parchment, roll pastry out to a 9 1/2-by-11 1/2-inch rectangle (1/8 inch thick). Trim edges straight. Refrigerate on a baking sheet 10 minutes.
  • Sprinkle tomatoes with salt; arrange on a layer of paper towels. Top with more paper towels (to absorb excess liquid).

1 loaf (10-1/2 ounces) French bread baguette, sliced and toasted

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off bulb. Brush with 1-1/2 teaspoons oil; sprinkle with rosemary. Wrap in heavy-duty foil. thyme
brie cheese, 4 oz
French bread (crusty)

Steps:

  • Preheat oven to 350 degrees.
  • Cut the tops off of the garlic, so that the cluster of cloves can be seen. Do not seperate cloves.
  • Baste with oil and sprinkle lightly with Thyme.
  • Place garlic on a medium piece of foil and then wrap foil around garlic, until it is complelety wrapped up in foil.
  • Bake in oven for 1 hour to 1 hour and 15 mins. Allow to cool.
  • Serve baked garlic with crusty French bread and Brie cheese.
  • Squeeze garlic onto bread slices and alternate with slices of Brie on bread (you can also combine garlic and Brie slices, but it is quite rich).

  • Saute the shallots in the the olive oil over medium heat until the they have softened. It would be easier to tie the spices in a piece of cheesecloth, but I did not have any around, so I came up with this idea. I put them in a tea strainer. It worked just fine if I do say myself. Add everything else to the saucepan and simmer for 30 minutes. Give a taste and check for seasoning and balance. You may need to add more or less vinegar, sugar, or salt.
  • Take the spices out and pour the chutney into a container and let cool. This will keep for about a month in the fridge.
  • Slice the tops of the heads of garlic and put them in an oven proof dish. Pour over some olive oil. Season well with salt and pepper. Cover the dish with tin foil and put in a 400 degree oven for 45 minutes to an hour. When the garlic is done, it will be golden brown and some of the cloves will start to pop out.
  • You can either serve the brie at room temperature like it is in the pictures, or you can warm it in the oven for a few minutes so that it is even more gooey and delicious.
