SIMPLE SAUTEED FISH WITH GARLIC



Simple Sauteed Fish with Garlic image

Number Of Ingredients 6

8-12 ounces skinless white fish fillets
Celtic sea salt and pepper
3 tablespoons grass fed unsalted butter
4 garlic cloves, minced
4 tablespoons roughly chopped flat leaf parsley
2 tablespoons lemon juice

Steps:

  • Rinse the fish fillets and blot dry with a paper towel. Season with salt and pepper.
  • Heat butter in wide sauté pan over medium low heat. Once butter has begun to foam, place the fish into the pan.
  • Add garlic. Sauté 1 minute without disturbing the fish.
  • Tilt the pan toward you and using a spoon, ladle the garlic butter over the fish. Continue to sauté while basting the fish for 2-3 minutes.
  • Using a spatula, gently flip fish. Reduce heat to low, cover pan and cook for 2 minutes.
  • Uncover pan, and continue basting fish with butter until it is just cooked through, another minute or two.
  • Add 3 tablespoons of parsley and turn off the heat.
  • Transfer fish onto a platter or individual plates. Tilt pan and spoon butter sauce evenly over fillets.
  • Sprinkle with remaining tablespoon parsley and lemon juice.

1/4 cup melted butter
1 1/2 tablespoons lemon juice
1/2 teaspoon sugar
1/4 teaspoon pepper
1/8 teaspoon paprika
1/4 teaspoon basil
1/8 teaspoon garlic powder
1/2 teaspoon salt
1 lb fish fillets, cod or 1 lb haddock
1/3 cup dry breadcrumbs
vegetable oil cooking spray

Steps:

  • Melt butter in large glass Pyrex measuring cup and add lemon juice, spices and sugar.
  • Place bread crumbs in a shallow bowl or platter.
  • Spray a shallow baking dish with vegetable spray.
  • Cut fish into individual serving pieces.
  • Dip fish into butter and then coat each fillet well with bread crumbs.
  • Place bread coated fillets into baking dish.
  • Repeat until all fish fillets are covered.
  • Spoon the remaining herb butter mixture over fish.
  • I also use a pastry brush to lightly tap the tops of the breaded fish to make sure it is all cover.
  • You may need to melt more butter to coat fish.
  • Bake, uncovered, for 15 minutes at 400 degrees.
  • Fish is done when fish flakes easily with a fork.

2 small garlic cloves, minced
4 fish fillets (about 6 ounces each) (salmon or whitefish or cod)
1/4 cup thinly sliced green onions

Steps:

  • In a skillet, melt butter over medium heat. Saute garlic 1 minute. Place fish over garlic, cover and cook over low heat 3 minutes. Carefully turn fish; sprinkle with onions. Cover and continue to cook until fish flakes easily with a fork, about 2-3 minutes. Squeeze lemon over fish. Serve immediately.

2/3 cup olive oil
20 cloves garlic, peeled and sliced thinly
1 teaspoon salt
1/2 teaspoon of ground black pepper
2/3 cup clam juice or fish stock
Juice of 3 limes, about 1/4 cup
1 ancho chile, stemmed, seeded and chopped
1 bunch flat leaf parsley, roughly chopped
6 6-ounce skinless, boneless filets of fresh fish
1 pound tomatillos, husked, washed and chopped
1 pound Roma tomatoes, cored and chopped
1 large onion, chopped
1/2 cup olive oil
1/3 cup white vinegar
1 bunch cilantro, leaves only, chopped
1/4 cup sugar
6 garlic cloves, minced
1 jalapeno chile, stemmed, seeded and diced
1 red bell pepper, cored, seeded and chopped
2 teaspoons salt
1 teaspoon fresh black pepper

Steps:

  • Preheat oven to 350 degrees. Season fish filets with salt and pepper. Heat a large cast iron or heavy bottomed skillet over moderately high heat. When hot add 2-3 tablespoons of olive oil. Sear fish fillets about 1-2 minutes per side or until lightly golden, remove to a oven proof platter and set in oven to finish cook for 3-5 minutes or, to desired doneness. Meanwhile add the remaining olive oil, slivered garlic, salt and pepper to the pan and cook over medium low heat stirring often for about 2 minutes. Add chopped ancho chiles and continue cooking a minute or two until a toasty aroma is released. Add the fish stock or clam juice reduce by half, adding any juices that have collected on the platter holding the fish fillets. Then add lime juice and parsley, bring sauce to a boil and pour over fish on platter. Serve immediately along with plenty of white rice.
  • Combine all the ingredients in a pot, cover and simmer about 1 hour. Set aside to cool to room temperature. Tomatillo relish can be stored in the refrigerator up to a week. To serve, line a large platter or serving plates with relish and top with grilled fish fillets. Or serve as a condiment with cold meats. Garnish with scallions.

250 g white fish fillets, cut into 1 inch chunks
1 teaspoon ginger paste
1 teaspoon garlic paste
1 tablespoon lemon juice
2 tablespoons garlic, chopped
1 tablespoon ginger, chopped
1/2 cup chopped spring onion, plus
extra spring onion, for garnish
2 tablespoons fish sauce (I used soya sauce in its place)
1 teaspoon pepper
1 1/2 teaspoons red chili paste or 1 1/2 teaspoons chili powder (cayenne)
1 1/4 teaspoons salt
1 tablespoon chopped cilantro
1 tablespoon oil

Steps:

  • Marinate the fish in the ginger and garlic paste, salt and the lemon juice for a couple of hours.
  • Heat the oil in a wok and then saute the chopped ginger and garlic for 2 minutes.
  • Add the cayenne and the pepper powder.
  • Add the spring onions, salt, sauce and the fish.
  • Cook on high for 2 minutes.
  • Cover and simmer for another few minutes till the fish is cooked and the gravy dry.
  • You may have to cook uncovered to dry it up after a minute or so of covering it cooked.
  • Serve hot garnished with chopped cilantro and chopped spring onions too.

4 (6 to 7-ounce) portions sea bass
Salt and freshly ground black pepper
1 bunch scallions, cut into 3-inch pieces on an angle
1/2 pound shiitake mushrooms, stemmed and sliced
3 to 4-inch knob ginger, peeled and thinly sliced
4 large cloves garlic, peeled and thinly sliced
3 tablespoons honey
2 tablespoons rice wine vinegar
3 tablespoons tamari sauce

Steps:

  • Preheat oven to 375 degrees F.
  • Rip off 4 pieces of parchment to form packets each about 12-inches long. Season fish with salt and pepper. Place a piece of parchment in a shallow dish then in the center of the paper stack 1/4 of the scallions and shiitakes, layer with slices of ginger and garlic and top with fish. Combine the honey, vinegar and tamari and pour 1/4 of the sauce over fish. Fold over the top of the parchment then roll the sides in to form a sealed pouch. Repeat with remaining parchment and ingredients. Arrange the pouches on a baking sheet and roast in hot oven 12 to 14 minutes.

3 tablespoons fresh lemon juice
1 tablespoon butter, melted
1 clove garlic, finely chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
  • Rinse tilapia fillets under cool water, and pat dry with paper towels.
  • Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
  • Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

Fresh parsley to yield 1/4 cup coarsely chopped
2 large cloves garlic
1/4 teaspoon ground cumin
1/8 to 1/4 teaspoon hot pepper flakes
2 tablespoons lemon juice
2 teaspoons olive oil
10 ounces red snapper or grouper

Steps:

  • Turn on the broiler, and cover broiler pan with aluminum foil.
  • Wash, dry and coarsely chop cilantro and parsley. Mince cilantro, parsley and garlic in food processor.
  • Add the cumin, hot pepper flakes, lemon juice and olive oil, and process until well blended.
  • Wash fish, and cut in half. Place in a single layer on foil, and spread cilantro mixture evenly over fish.
  • Broil fish four inches from heat, according to the Canadian rule: measure fish at the thickest part, and cook 8 to 10 minutes to the inch.
