GARLIC-LIME PORK CHOPS
These deliciously seasoned, slightly spicy pork chops can be eaten as-is for a great main dish or turned into pork tacos. They are really quick and easy.

Steps:
- Mix salt, Italian seasoning, black pepper, chili powder, 1/4 teaspoon garlic powder, paprika, and onion powder together in a bowl. Sprinkle spice mixture generously on both sides of pork chops.
- Heat butter and olive oil in a large, heavy skillet over medium heat. Cook pork until no longer pink in the center and golden brown on both sides, about 5 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Transfer pork chops to a serving plate, reserving juices in the skillet.
- Add lime juice and garlic powder to the same skillet and mix into leftover juices. Stir to combine and pour over the pork chops.

- Trim fat off pork. In a large bowl season pork with garlic, cumin, chili powder, paprika, salt and pepper. Squeeze lime juice and some zest from the lime and let it marinade at least 20 minutes.
- To broil: line broiler pan with foil for easy clean up. Place pork chops on the broiler pan and broil about 4-5 minutes on each side or until browned. To grill, grill over medium-high 4 to 5 minutes on each side.

GARLIC-LIME PORK CHOPS
I came up with this recipe because my husband loves pork chops and I was tired of eating them. It turned out to be so good, I wont make them any other way. The pork chops have a great lime flavor with a little kick. I always serve with rice and veggies. This recipe is for 2, but I have made it for 4. Just use smaller half inch pork chops.

- Rinse pork and place in dish to marinate. Stab pork with a fork till there are plenty holes. Cut the lime in half and squeeze both halves over the pork. Sprinkle salt & pepper and garlic powder over one side of pork. Cover and place in fridge for 20-30 minutes.
- In a large skillet, heat vegetable oil and green onions over medium heat.
- Place pork chops in skillet seasoned side down and sprinkle adobo and creole seasoning on top side of pork. (go heavy on the creole seasoning for a spicy kick).
- Cover and cook for about 7 minutes.
- Uncover and turn pork over. Cover and cook for 5 minutes.
- Continue turning pork over every 5 minutes until pork is completely cooked.
- Serve with rice.

- Put rice in the bottom of a 5 quart crockpot. Turn heat to low.
- Juice and zest limes, place both into a 4 cup measuring cup. Add chicken broth to make 4 cups of liquid. Stir in minced garlic.
- Heat 1 Tablespoon of olive oil over medium-high heat in a heavy skillet. While that heats, mix flour, garlic salt and lemon pepper in a flat bottom bowl. When oil is close to smoking, quickly dredge 3 chops in the flour mixture and place in pan. Wait for sear, flip, wait for sear, remove to plate and repeat with another tablespoon of olive oil and remaining chops. Arrange chops on top of rice in crockpot.
- Add remaining oil to skillet, heat up, and add remaining flour mixture. Stir quickly with a whisk until mixture is brown (30 seconds to a minute) and add lime juice and chicken broth all at once. Whisk until mixture starts to thicken. Pour over chops and add some black pepper.
- Cover, let cook for 5-6 hours or until meat is done.
- I put the meat on top of the rice since these chops have a tendency to get so tender that they fall apart, and I'm never quite sure when the hubby will be home for dinner so this is a good way to keep the meat from getting overdone too easily.
- I like to add a bit of sharp cheddar to my rice when serving.
