BAKED GARLIC PARMESAN CHICKEN
A wonderful baked chicken recipe that's quick and easy! Using just a few handy ingredients, create a delicious main dish, that also makes great leftovers - if there are any! Serve with a salad and pasta or rice for a quick, scrumptious dinner.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper. Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.
- Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

- Preheat oven to 425°F (220°C).
- Combine the egg and the lemon juice.
- In a separate bowl, combine the panko bread crumbs, Parmesan, garlic powder, lemon zest, salt, and pepper.
- Coat the chicken tenders in flour and shake off any excess. Then dredge in the egg and lemon juice mixture and allow excess egg to drip off. Coat with the panko bread crumb mixture, turning until evenly coated.
- Lay chicken tenders flat on a baking sheet lined with aluminum foil and sprayed with nonstick cooking spray. Spray additional cooking spray over the chicken tenders to help them brown.
- Bake for 20-25 minutes (or until browned and chicken is cooked all the way through), flipping once halfway through.
- Serve with your favorite dip and some veggies for a fun appetizer or with garlic Parmesan roasted vegetables for dinner!

GARLIC PARMESAN CHICKEN
Buttery, baked chicken with a garlic parmesan breading. A simple butter mixture bakes into the garlic parmesan chicken to keep it tender.

Steps:
- The chicken breasts we used were large (3 chicken breasts = 2 1/3 pounds). If the chicken breasts you are using are also large cut them in half to get 6 pieces.
- Place the chicken breasts in a zippered bag. Use the side of a meat tenderizer to pound the chicken breasts to 1/2" thickness throughout so they cook evenly.
- Preheat the oven to 350 degrees. Place 1/4 cup butter in a 9x13 pan and place it in the oven for the butter to melt while the oven heats.
- In a bowl, mix the breadcrumbs, cheese, parsley, salt and pepper. Place milk in another shallow bowl.
- Dip chicken in milk, then roll it in the crumb mixture.
- Place chicken in the baking dish with the melted butter.
- Combine the butter, garlic and lemon juice and drizzle over the chicken, then sprinkle on the paprika.
- Cover the pan loosely with foil and bake for 20 minutes.
- Uncover the pan, turn the chicken and bake uncovered for an additional 15 minutes. The baking time will depend on the thickness of the chicken, so be sure to check it to make sure it is thoroughly cooked. The internal temperature should be 165 degrees Fahrenheit.

CRISPY GARLIC-PARMESAN CHICKEN

- 1. Heat oven to 400 degrees F. Line cookie sheet with foil; spray with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. Sprinkle chicken with salt and pepper to taste.
- 2. In shallow dish, mix butter, 3 tablespoons of the cooking sauce and the garlic powder. In another shallow dish, mix bread crumbs and cheese. Dip chicken into butter mixture, then dip into bread crumb mixture to coat. Place on cookie sheet.
- 3. Bake 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165 degrees F) and coating is golden brown. Meanwhile, heat remaining sauce until hot. Serve chicken with pasta and sauce. Sprinkle with additional cheese and basil.
GARLIC PARMESAN CRUSTED CHICKEN

- Combine ingredients for marinade and pour over chicken. Let marinate in refrigerator for 2-3 hours or overnight.
- Remove from marinade and discard leftover marinade.
- Grill 12-15 minutes, until chicken is done.
- While the chicken is cooking, prepare the ranch spread and Parmesan crumb topping.
- For the ranch spread, mix 1/4 cup of grated Parmesan and 1/4 cup ranch dressing. Set aside.
- For Parmesan crumb topping, mix bread crumbs, garlic salt, shredded Parmesan and butter. The crumbs should be evenly moistened.
- Position rack in center of oven. Preheat broiler.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil and spray with cooking spray.
- Combine Parmesan cheese, panko, and garlic powder in a shallow bowl and set aside.

- Preheat oven to 400°F (200°C).
- Fold the parchment paper in half, then open up.
- Slice the zucchini into rounds and lay them on one half of the parchment paper.
- Mix the minced garlic and butter in a small bowl and spoon half of the garlic butter on top of the zucchini. Sprinkle with salt and pepper.
- Lay the chicken on the zucchini, season with salt and pepper and spoon on the rest of the garlic butter. Top with parmesan.
- Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.
- Bake for 25-30 minutes or until internal temperature of chicken reaches 165˚F (75˚C).
